2 bone-in pork loin chops (1 inch thick)
1/2 teaspoon salt
1/8 teaspoon pepper
2 teaspoons vegetable oil
1/4 cup apricot preserves
1-1/2 teaspoons cider vinegar
1-1/2 teaspoons prepared mustard

Steps:

  • Sprinkle pork chops with salt and pepper. In a skillet, brown chops in oil for 3 minutes on each side. In a small bowl, combine the preserves, vinegar and mustard. Spoon half of the mixture over pork. Reduce heat; cover and simmer for 3 minutes. Turn chops; top with remaining preserves mixture. Cover and simmer 4-5 minutes longer or until meat is no longer pink.

2 bone-in pork loin chops (1 inch thick)
1 tablespoon vegetable oil
1/2 cup tomato sauce
1/4 cup packed brown sugar
1 tablespoon cider vinegar
3/4 teaspoon Worcestershire sauce
1/2 teaspoon celery salt
1/4 teaspoon ground nutmeg
1/4 teaspoon pepper

Steps:

  • In a large skillet, brown pork chops in oil. Combine the remaining ingredients; add to skillet. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until pork juices run clear. Spoon sauce over pork chops.

⅓ cup apricot preserves
⅓ cup fruity white wine, such as Gewurztraminer
½ teaspoon ground ginger
salt and pepper to taste
2 tablespoons olive oil
4 boneless pork chops, 1/2 inch thick

Steps:

  • Mix the apricot preserves, wine, and ground ginger together in a small bowl; set aside.
  • Season the pork chops with salt and pepper. Heat the olive oil in a skillet over medium high heat. Add the pork chops and cook until brown on each side, and no longer pink in the center, about 4 minutes per side. Remove chops from the skillet. Reduce heat to medium low. Using the same skillet, pour in the apricot preserves mixture and simmer until thickened, about 4 minutes. Return pork chops to the skillet, turning to coat each side in the sauce; cook 1 minute.

2/3 cup apricot preserves
3 tablespoons low-sodium teriyaki sauce
2 tablespoons Dijon mustard
1 teaspoon ground ginger
1 tablespoon vegetable oil
4 (4 ounce) boneless pork chops
1 dash salt
1 dash black pepper
1/2 lb snow peas, trimmed
1/2 lb angel hair pasta
2 green onions, sliced thin
1 tablespoon toasted sesame seeds

Steps:

  • In a small bowl, stir together the preserves, teriyaki sauce, mustard and ginger.
  • In a large non-stick skillet, heat the oil over medium-high flame.
  • Season chops with salt and pepper and cook for 2 minutes on each side or until lightly browned.
  • Spread 1 tablespoon of the preserves mixture over each pork chop, cover and cook over medium-low heat for 6 minutes or until cooked through.
  • Meanwhile, bring a large pot of water to a full boil. Add snow peas and cook for 3 minutes. Add pasta and cook for another 2-3 minutes or until pasta is tender.
  • Drain pasta and peas and place in a large serving bowl.
  • Stir in all but 1/4 cup of preserves mixture. Garnish with green onions and sesame seeds.
  • Serve pasta with pork chops, spooning reserved apricot-mustard-teriyaki sauce on top.

¼ cup ketchup
¼ cup apple juice
2 tablespoons extra-virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon hot sauce (such as Frank's Red Hot ®)
½ teaspoon kosher salt
6 pork chops

Steps:

  • Mix ketchup, apple juice, olive oil, vinegar, Worcestershire sauce, garlic powder, chili powder, hot sauce, and kosher salt together in a bowl; pour marinade into a resealable plastic bag. Add pork chops to the marinade and seal bag. Marinate for at least 30 minutes.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove pork chops from marinade and place on the hot grill; discard used marinade. Cook until pork chops are no longer pink in the center, 5 to 10 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (65 degrees C).

Once all of the chops have cooked, reduce the heat to medium-low and pour the apricot sauce into the skillet. Using a whisk, stir and cook the sauce for 1-2 minutes. The whisk will help the pan drippings release from the bottom of the pan and flavor the sauce. This is called “deglazing.”
