TOMATO & TAMARIND FISH CURRY

- Blitz together the garlic, chilli, ginger, turmeric and ground coriander with 3 tbsp water. Heat the oil in a large pan and toast the cumin and fennel seeds, letting them sizzle until aromatic. Add the ginger paste and fry for 3 mins.
- Empty the tomatoes into the spice pan, plus a can of water. Add the beans, bring to the boil, then turn down the heat and simmer for 5 mins. Stir in the tamarind paste. Add the fish fillets, generously season with ground black pepper, cover and simmer for 10 mins. Take off the lid, carefully turn the fillets, then bubble the sauce until the fish is cooked through and the sauce is thick. Sprinkle over the coriander leaves and serve with rice.

- Firstly, wash carp fish under running water and keep it on a chopping board. Now, cut them into large pieces and place them in a bowl. Then, chop coriander leaves and mince onions using a mincer.
- Next, add oil, 1 tablespoon chilli powder, turmeric and 1 teaspoon salt into the bowl and marinate the fish for 10-12 minutes.
- Now, place a saucepan over medium flame and pour oil in it. Once the oil is heated, add cumin seeds and stir it. Then add onions and cook the mixture for 10 minutes. Now add garlic paste and cook the mixture for 3-4 minutes.
- Add marinated fish pieces and cover the pan with a lid. Cook the dish for 5-7 minutes. Now, pour tamarind juice and boil the mixture. Once the mixture is boiled, add remaining quantity of chilli powder and salt into the pan. Turn the flame low and cook the mixture for 10-12 minutes.

- Melt 1 tablespoon of coconut oil in saute pan and then add the mustard seeds. Once the mustard seeds begin to pop, add the onion and serrano pepper.
- Cook for 8-10 minutes, or until the onions begin to brown. Then add the garlic and ginger, stir for 30 seconds, then turn off the heat.
- Scoop everything from out of the pan and put it into a food processor or blender along with the water. Puree until smooth.
- Pour this back into the pan over medium heat. Add the spices and mix well. Then add the fish and mix well.

- Put the coriander and cumin seeds in a small pan (without oil) over a medium heat and toast for a few minutes until fragrant. Transfer to a mini food processor or pestle and mortar and whizz/grind the toasted spices with the chilli flakes, turmeric, tamarind, garlic and ginger, adding just enough oil to a make a paste. Set aside (see Make Ahead).
- Heat the remaining oil in a large frying pan over a medium heat. Add the onions, mustard seeds and curry leaves and fry for 8 minutes or until the onions are golden. Stir in the curry paste and fry for a further 2 minutes.
- Add the potatoes, chopped tomatoes, fish stock and coconut cream to the pan and bubble until the potatoes are cooked through and the sauce has thickened slightly. Nestle the fish in the pan, spoon over a little of the sauce and cook for 2-3 minutes or until just cooked. Remove from the heat, scatter with coriander leaves and toasted coconut and serve with rice, with lime wedges for squeezing.
