REAL HOMEMADE TAMALES
I had been looking for a Tamale recipe for years. One day I went to the international market and stood in the Mexican aisle till a woman with a full cart came by. I just asked her if she knew how to make Tamales. This is her recipe with a few additions from me. The pork can be substituted with either chicken or beef. This is great served with refried beans and a salad.

Steps:
- Place pork into a Dutch oven with onion and garlic, and add water to cover. Bring to a boil, then reduce heat to low and simmer until the meat is cooked through, about 2 hours.
- Use rubber gloves to remove stems and seeds from the chile pods. Place chiles in a saucepan with 2 cups of water. Simmer, uncovered, for 20 minutes, then remove from heat to cool. Transfer the chiles and water to a blender and blend until smooth. Strain the mixture, stir in salt, and set aside. Shred the cooked meat and mix in one cup of the chile sauce.
- Soak the corn husks in a bowl of warm water. In a large bowl, beat the lard with a tablespoon of the broth until fluffy. Combine the masa harina, baking powder and salt; stir into the lard mixture, adding more broth as necessary to form a spongy dough.
- Spread the dough out over the corn husks to 1/4 to 1/2 inch thickness. Place one tablespoon of the meat filling into the center. Fold the sides of the husks in toward the center and place in a steamer. Steam for 1 hour.
- Remove tamales from husks and drizzle remaining chile sauce over. Top with sour cream. For a creamy sauce, mix sour cream into the chile sauce.

BEEF TAMALE CASSEROLE
This Beef Tamale Casserole will certainly make your dinner time easy. We're talking comfort food to the max: layers of cornbread, enchilada sauce, spiced ground beef, all loaded with cheese then baked to perfection!

- Preheat your oven to 400 F degrees.
- Add the cornmeal, sugar, salt, baking powder to a medium size bowl and whisk together. Add the egg, butter, and buttermilk and whisk well. Stir in the creamed corn and the green chiles.
- Pour the cornbread mixture into a large skillet or a 9x9 inch baking pan. Bake for 20 to 25 minutes or until the edges are golden and the cornbread is done. Insert a toothpick in the center of the cornbread, if it comes out clean, it's done.
- While the cornbread is cooking, prepare the beef. In another large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until no longer pink, about 5 minutes. Add the onion, garlic, cumin, chipotle powder, chili powder, salt, pepper and stir. Cook until the onion has softened, another 3 to 5 minutes.
- Add half of the enchilada sauce to the meat mixture and stir. Set aside.
- When the cornbread is done, poke holes into it with a fork, or I used the end of a wooden spoon. Pour the remaining enchilada sauce over the top of the cornbread and spread.
- Top with the ground beef and the shredded cheese.
- Bake the casserole for another 15 minutes or until the cheese has melted and has started to lightly brown on top.
- Let cool for about 5 minutes, then top the casserole with cilantro and your favorite toppings.

Well happy 2013! The success of this recipe depends on how good the tamales are that you use. This a quick and easy hash as it uses leftover Black-Eyed Pea Salsa (Cowboy Caviar) and leftover tamales.

- Heat oil over medium heat in a large skillet, add onion, jalapeno, garlic, 3/4 to 1 cup of Recipe #492655, and cut up tamales; gently stir, warm for about three minutes. Being careful not to scorch or over stir.
- As the hash is warming, prepare the eggs either sunny side up or over easy.
- To serve, dived the hash between two serving plates. Place an egg on top of each serving, top immediately with a finely grated cheese and cilantro. Serve sour cream on side if desired.

- Preheat oven to 350 degrees Fahrenheit.
- Tamale sauce:In a medium pot fully combine chili powder, vegetable oil and flour and whisk until smooth over medium heat.Add beef stock, tomato paste and spices and continue stirring over medium heat for about 10 minutes.
- Making the Casserole:Place about 1 cup of the tamale sauce in a 9×13 baking pan. I use this baking pan as I like that is has easy grab handles. Remove corn husks from tamales and discard. Place tamales in the baking pan. I ended up using eleven tamales and saved the last one for a snack by itself. Wink Wink.Pour remaining sauce on top of tamales. It may look like too much sauce but it will be just perfect!Cover evenly with freshly grated cheese and sprinkle with green onions and cilantro.
- Bake:Bake for 35 minutes or until cheese has completely melted. Carefully remove from the oven and serve immediately. Sprinkle with cotija cheese if desired. Refrigerate any leftovers.
QUICK TAMALE HASH
The best and easiest way to use leftover or dry tamales without extra work or ingredients. I use pork or chicken tamales, but any savory tamales will work. If I feel like it, I serve them with a fried egg on top.
