This recipe is so quick and delicious. It's been in my family for years! I serve it with garlic bread or Mexican cornbread.

1 (12 ounce) package egg noodles
1 pound lean ground beef
1 pinch seasoning salt
1 pinch freshly ground black pepper
1 pinch garlic powder
1 (11 ounce) can Mexican-style corn
1 (10 ounce) can diced tomatoes with green chile peppers
½ pound processed cheese food (eg. Velveeta), sliced

Steps:

  • In a large pot with boiling salted water cook egg noodles until al dente. Drain well.
  • Meanwhile, in a large skillet cook meat with seasoning salt, black pepper, and garlic powder until brown. Add the cans of Mexican-style corn, tomatoes with green chilies and mix well.
  • Pour mixture into casserole dish prepared with butter spray. Arrange sliced processed cheese food on top. Cover with aluminum foil.
  • Bake in a preheated 375 degree F(190 degrees C) oven for 20 to 30 minutes. Stir and serve.

A quick easy beef and noodle casserole to whip up in a jiffy. An old family favorite. The orginal recipe in my family called for velveta cheese, but I prefer cheddar. Makes great leftovers too!

Number Of Ingredients 9

1 (8 ounce) package wide egg noodles
1 lb ground beef (can subsitute ground turkey)
1/2 cup finely chopped onion
1 garlic clove, minced
1 (8 ounce) can tomato sauce
1 (11 ounce) can creamed corn
1 (4 ounce) can sliced black olives, drained
2 cups shredded cheddar cheese
salt and pepper

Steps:

  • Preheat oven to 375.
  • In large pot, cook noodles as directed on package. Drain, rinse and set aside.
  • Meanwhile, cook ground beef and onion in large skillet until meat is no longer pink and onions are tender.
  • Add the garlic and simmer another 3 - 5 minutes. Drain off fat.
  • To meat mixture, add tomato sauce, creamed corn and olives.
  • Stir cooked noodles into meat mixture.
  • Pour into 9 x 13 inch baking dish and top with cheese.
  • Bake at 375 for 20 to 30 minutes or until hot and bubbly.

My Mother got this recipe from an Italian family, that lived in an Italian settlement, back in 1950 when she worked with one of the ladies. Everyone in the settlement got together every year to make homemade Spaghetti for the big festival they held at the settlement every year to celebrate the grape harvest. "The Tontitown Grape Festival" was (and still is) a large carnival and they served a wonderful meal. They served homemade spaghetti with meat sauce, shredded lettuce salad with homemade Italian dressing, fried chicken and homemade beer-yeast rolls. They still have this celebration every August. They have been having it for well over 100 years. THROUGH THE YEARS WE HAVE CHANGED IT A BIT FOR OUR FAMILIES TASTE AND I AM POSTING IT "OUR WAY".

IN A LARGE SKILLET, COOK THE BEEF , GREEN PEPPER, ONION AND GARLIC OVER MEDIUM HEAT UNTIL MEAT IS NO LONGER PINK; DRAIN.
1 1/2 pound(s) ground beef [or 1/2 ground beef and 1/2 ground sausage]
1 - green bellpepper, chopped
1 medium onion, chopped
1 tablespoon(s) minced garlic
COOK THE SPAGHETTI ACCORDING TO PACKAGE DIRECTIONS, UNDERCOOKING JUST SLIGHTLY. DRAIN SPAGHETTI; TOSS WITH BUTTER.
8 to 10 ounce(s) spaghetti
2 to 3 tablespoon(s) butter
MIX TOGETHER MEAT AND SPAGHETTI AND ALL THE REST OF THE FOLLOWING INGREDIENTS; (EXCEPT CHEESE) AND PUT IN CASSEROLE DISH.
1 can(s) campbell's cream of mushroom soup
16 ounce(s) tomato sauce, tomato juice or v-8 juice (whichever you prefer, i prefer the v-8)
2 tablespoon(s) worcestershire sauce
1 can(s) diced stewed tomatoes, undrained
1 can(s) whole kernal corn (or equivalent amount in frozen corn)
1 can(s) black olives, drained and sliced
1 can(s) sliced mushrooms, drained
3 teaspoon(s) chili powder (more if you like it hot)
2 teaspoon(s) sugar
1 teaspoon(s) salt
1 teaspoon(s) pepper
1/4 teaspoon(s) garlic powder

Steps:

  • Preheat oven to 350° F Bake in a casserole dish, uncovered, at 350° F for 30 minutes; cover with foil and bake for another 15 minutes or until heated through.
  • Remove from oven and put cheeses on top, return to oven until cheese is melted.
  • CHEESE: Approximately 2 cups of shredded cheddar cheese with 1 cup cubed velveeta cheese, (or 2 cups of a 4-cheese blend with 1 cup cubed velveeta...I like it this way).
  • OPTIONAL: Sprinkle grated Parmesan cheese over top of plated servings (as some do not like parmesan cheese).
  • Suggested Sides: Toss Green Salad, Garlic Toast, Homemade Bread or Hot Rolls; (or maybe a loaf of homemade beer bread).
  • Beer Bread: 3 c self rising flour 3 T sugar 1 (12 oz) can beer Preheat oven to 375° F Mix all 3 ingredient together with wooden spoon and pour into bread loaf pan. Melt 3 T butter and pour over top of dough before placing in oven. Bake for approximately 1 hour. When done remove to cool for 15 minutes on wire rack before taking out of pan. TIP: Sometimes I add 1 T garlic powder and 1 T of Itilian Herb Mix and blend into the flour before adding the beer. P.S. oooh...BTW, you may want to grease the loaf pan or spray some not-stick spray in it (on bottom and up the sides)...guess I forgot to tell ya that!!!
  • I serve a light dessert with this meal...such as my "Cin's Tarts".
  • P.S. The Italian Village in Tontitown, AR....is celebrating their 114th year for their "Italian Grape Festival" this year Aug. 7th thru 11th, 2012. The annual event is always in August...serving the dinners on Thursday, Friday & Saturday nights only. These Itallian's immigrated to the United States and setteled a town they called Tontitown, AR in 1898.

1 bag egg noodles
1 lb ground beef
1 small onion, chopped
2 cans corn
1 can diced tomato
2 cans tomato sauce
1 medium bell pepper
1-2 cup (s) package shredded cheese

Steps:

  • Boil egg noodles in about 6 cups of water in medium pot. Meanwhile, brown ground beef and onion in skillet and drain.
  • Once noodles are done, drain noodles and add to ground beef. Pour canned vegetables into mix of noodles and ground beef. Cut up bell pepper and put it in the mix. Stir mixture until well integrated.
  • Pour mixture into a 9x13 baking pan cover with cheese and bake 350 degrees F until cheese is melted, about five minutes. Serve and enjoy!

Super easy and makes a lot - great for leftovers. My mom always made this great casserole for family picnics and potlucks. Everyone loved it, but my dad's brother was a fanatic! I believe this casserole was originally based on a Spanish dish. My mom's recipe called for black olives, but she never used them nor do I.

1 1/2 lbs ground beef
1 large onion
1/2 lb egg noodles
2 (12 ounce) cans whole kernel corn
2 (18 ounce) cans stewed tomatoes
1/3 lb Velveeta cheese

Steps:

  • Brown ground beef with chopped onion until beef is thoroughly cooked and onion is soft and translucent. Drain fat.
  • Place DRY noodles in bottom of 9x13 pan.
  • Spread ground beef mixture evenly across the noodles.
  • Drain 2 cans of corn and spread in pan on top of ground beef.
  • Open tomatoes, but DO NOT drain. Layer in pan evenly, breaking tomatoes up slightly so that the tomatoes are evenly dispersed.
  • Cut Velveeta cheese into 8 thick slices and layer on top of casserole. You can substitute other processed cheese loaf-type cheese, but be aware that some do not melt well on this casserole, so I always use Velveeta.
  • Bake 45-60 minutes at 350 degrees (no need to preheat oven) until cheese is melted and brown.
  • Noodles will be cooked and soft - infused with the flavors of the ingredients. Enjoy!
