TAHINI SALAD

Tahini Salad image

This is a recipe I learned from my Middle Eastern husband. It is a delicious way to get those very valuable brightly-colored veggies, and at the same time have a little fun. This side salad goes nicely with any main dish.

TAHINI SALAD

Tahini Salad image

A Middle Eastern salad drizzled with lemon tahini dressing.

Provided by Diana

Categories     Salad

Time 10m

Number Of Ingredients 8

3 tomatoes
1 cucumber (optional)
½ tablespoon parsley (chopped)
2 tablespoons tahini paste
2 tablespoon lemon juice
2 teaspoons water (cold)
¼ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • In a bowl, mix all the ingredients together. The tahini mixture will become watery, then it will shrink, and then again it will become a bit loose while you mix. If your tahini dressing is too thick, add a little bit of cold water and mix again. Adjust ingredients to your liking.
  • Chop the tomatoes and the cucumber into cubes. Add the tahini dressing and mix the salad.
  • Sprinkle with chopped parsley and serve.

ROASTED CAULIFLOWER WITH TAHINI-PARSLEY SAUCE

Roasted Cauliflower With Tahini-Parsley Sauce image

This Middle Eastern sauce goes wonderfully with foods other than roasted cauliflower. It's traditionally served with falafel and keftes, fish, salads, deep-fried vegetables - or just with pita bread.

Provided by Martha Rose Shulman

Categories     easy, side dish

Time 1h

Yield Serves four to six, with some sauce left over

Number Of Ingredients 8

1 large cauliflower, broken into florets
Salt to taste
Freshly ground pepper to taste
2 tablespoons extra virgin olive oil
2 to 3 garlic cloves, to taste, cut in half, green shoots removed
1 cup sesame tahini
1/4 to 3/4 cup fresh lemon juice, to taste
1 cup finely chopped flat-leaf parsley (2 bunches)

Steps:

  • Preheat the oven to 400 degrees. Meanwhile, bring a large pot of water to a boil, and fill a bowl with ice water. When the water comes to a boil, salt generously and add the cauliflower. Blanch for two minutes, and transfer to the ice water. Drain and blot dry. Transfer to a baking dish.
  • Season the cauliflower with salt and pepper, and toss with the olive oil. Place in the oven, and roast for 30 to 40 minutes, stirring from time to time, until tender and lightly browned.
  • Puree the garlic cloves with 1/4 teaspoon salt in a mortar and pestle. Transfer to a bowl, and whisk in the sesame tahini. Whisk in the lemon juice, beginning with the smaller amount. The mixture will stiffen up. Gradually whisk in up to 1/2 cup water, until the sauce has the consistency of thick cream (or runny yogurt). Stir in the parsley. Taste, and adjust salt and lemon juice. Serve with the cauliflower. You will have some sauce left over.

Provided by Suzy Karadsheh

Categories     Appetizer     Dip     Side

Time 15m

Number Of Ingredients 7

1 Lime Tahini Sauce recipe,
1/2 large English cucumber ((seeded and diced into small cubes))
1 to 2 tomatoes ((vine-ripe, diced into small cubes))
1 small jalapeno pepper ((chopped, remove the seeds for less spicy))
1/2 tsp Aleppo pepper ((optional))
Kosher salt ((to taste))
lime juice ((if needed))

Steps:

  • For the dressing, make my lime tahini sauce recipe by blending tahini paste, lime juice, water, kosher salt together, then stir in a good cup of parsley. You can do this one night ahead of time and save it covered in the fridge. (If the tahini sauce becomes thicker as it sits in the fridge, you can stir in more lime juice or water to loosen it).
  • To make the salad, in a medium mixing bowl, combine the tahini sauce with the diced cucumbers, tomatoes, and jalapeno. Add the Aleppo-style pepper, if using. Mix well. Taste and add salt to your liking. And if needed, add more lime juice.

Place cauliflower in a large bowl, add in olive oil, za'atar, and salt and pepper to taste. Toss until cauliflower is evenly coated in seasoning. Place cauliflower on cool side of grill close to, but not directly over, the fire. Cover and cook until tender all the way through, about 20 minutes, flipping and moving cauliflower around as needed for even cooking. Transfer cauliflower to a cutting board and roughly chop.
  • To assemble the salad: Place cauliflower on a large serving platter and sprinkle on parsley and cilantro. Spoon on dressing and then sprinkle on pistachios and sesame seeds. Serve immediately.

  • Stir tahini well. It's common for tahini to become separated in the jar, with the oil settling on top and solids on the bottom. Stir well before measuring.
  • Cut lemon in half. Remove seeds from the half you plan on using in the recipe. To skin the lemon, place the cut (flat) side of the lemon on a cutting board and gently cut the skin off, making sure you are cutting down and away from your fingers. Leave as much (or as little) skin on the lemon as you'd like.
  • Add all ingredients to a blender or large food processor. Blend until smooth. To make the dressing without a blender: Finely mince the garlic, parsley and lemon. Combine all ingredients into a large jar and shake well until combined.
