Moroccan-Style Vegetable Couscous image

Make this sweet & spicy Moroccan-Style Vegetable Couscous as a festive vegan entree. Zucchini, sweet potatoes, chickpeas, dried fruit & spices.

1 1/2 tbsp extra virgin olive oil
1 medium sweet onion, diced
2 tsp chopped garlic
2 tbsp tomato paste
1 tbsp harissa ((or substitute sambal oelek))
1/2 tsp cinnamon
1/4 tsp ginger
2 1/2 cups low sodium vegetable broth
2 lbs sweet potatoes (orange yams) (peeled and chopped into 1-inch chunks)
1 lb zucchini (about 4 medium zucchini) (cut into 1/2 inch rounds)
12 oz carrots (about 4 medium carrots) (peeled and cut into 1/2 inch chunks)
3 cups shredded cabbage
1/3 cup dried apricots
1/4 cup golden raisins
1/4 cup cilantro
Salt and black pepper to taste
1 3/4 cups cooked chickpeas ((or substitute 1 can chickpeas, drained))
10 oz couscous ((1 1/2 cups dry - for gluten free substitute quinoa))

Steps:

  • Heat olive oil in a large pot over medium. Saute the onion for several minutes till softened. Add the garlic and saute for another minute till fragrant.
  • Stir in the tomato paste, harissa, cinnamon, ginger and 1/2 cup of the low sodium vegetable broth till smooth. Bring to a boil.
  • Add sweet potatoes, zucchini, carrots, shredded cabbage, dried apricots, golden raisins and cilantro to the pot. Stir till combined.
  • Add remaining 2 cups of vegetable broth to the pot. Bring to a boil. Season with salt and pepper to taste (I use about 3/4 tsp salt and 1/4 tsp pepper).Reduce heat and cover the pot. Simmer the mixture for 50-60 minutes, stirring gently 2 times during cooking, till all the vegetables are fully tender. Season with additional salt and pepper to taste, if desired. Remove from heat.Add chickpeas to the pot and simmer for 5 minutes more till they're heated through.
  • Meanwhile, prepare couscous according to package directions.Pour cooked couscous onto a large platter. Top with the cooked vegetable stew. Serve.

Number Of Ingredients 19

2 cups vegetable broth
2 cloves garlic, peeled
2 thin slices fresh ginger
1 tsp coriander
1 tsp cumin
1 small eggplant (or 2 Japanese eggplants), cut into 1/2-inch slices
1 tbsp tomato paste
1 cup baby carrots
1 cup cauliflower florets
1 medium zucchini, cut into 1/2-inch slices
1/2 cup sliced radishes
1 cup oyster mushrooms, bottom ends of stems trimmed (or button mushrooms, quartered)
1 cup frozen pearl onions
1 cup cherry tomatoes
2 cloves garlic, peeled and minced
2 tbsp extra-virgin olive oil
1 tbsp garam masala spice (found in supermarkets)
2 cups roughly chopped mustard greens
3 cups cooked whole-wheat couscous

Steps:

  • Preheat oven to 400°F. In a saucepan, simmer first 5 ingredients 20 minutes. Meanwhile, sprinkle eggplant with salt and let stand 10 minutes. Rinse and pat dry with a paper towel. Remove garlic cloves and ginger from saucepan. Add tomato paste and stir. Season with salt and pepper. Reserve and keep warm. Blanch carrots and cauliflower in boiling water 5 minutes; drain. Rinse with cold water; drain again. Toss all veggies, except mustard greens, with minced garlic and oil. Spread vegetables on baking sheet, sprinkle with garam masala and bake 15 minutes. Remove from oven, add mustard greens and toss. Return to oven and bake 5 minutes more. Divide couscous and vegetables among 4 bowls, and pour 1/2 cup broth in each.

  • Add the carrot and squash to the pan and cook for 2 minutes. Then add the spices and cook for 1 minute.
  • Add in the preserved lemons, passata and the water. Pop the lid on and simmer for 30 minutes.
  • Add the chickpeas to the pan, then put the lid back on and continue to cook for a further 10 minutes. The tagine should be thick and the vegetables should be tender when it is done.
