Here's what you need: ball tip sirloin, vegetable oil, taco seasoning, salt, corn tortillas, shredded monterey jack cheese, white onion, fresh cilantro, avocados, serrano peppers, fresh cilantro, garlic, salt, water, dried red chili, stewed tomatilloes, stewed tomato, garlic, salt

1 lb ball tip sirloin
2 tablespoons vegetable oil
1 tablespoon taco seasoning
1 teaspoon salt
16 corn tortillas
1 ½ cups shredded monterey jack cheese
½ cup white onion, diced
½ cup fresh cilantro, chopped
4 avocados
3 serrano peppers
1 tablespoon fresh cilantro
3 cloves garlic
½ tablespoon salt
½ cup water
1 cup dried red chili
4 stewed tomatilloes, plus 2 cups (480 ml) stewing liquid
1 stewed tomato, plus ½ cup (120 ml) stewing liquid
2 cloves garlic
¼ cup salt

Steps:

  • To make the guacamole, add the avocados, serrano peppers, cilantro, garlic, salt, and a bit of water to a blender. Blend until smooth, adding water as needed to thin it down. Transfer to a bowl and set aside.
  • To make the red sauce, add the dried chilies, stewed tomatillos in 2 cups (480 ml) of their stewing liquid, stewed tomato in ½ cup (120 ml) of its stewing liquid, garlic, and bit of salt in a blender. Blend until everything is well incorporated, adding more salt to taste.
  • Mix 1 teaspoon of salt into 1 tablespoon of taco seasoning and rub the seasoning onto both sides of the steak.
  • Cut the steak into thin strips, then cut into small pieces.
  • Add 1 tablespoon of oil to a large griddle or cast iron pan over high heat. Once the oil is hot, add the steak and cook for 6-8 minutes or until the steak has browned on all sides. Move to the side of the griddle to keep warm.
  • Reduce the heat to medium/medium-high and add a bit more oil to the griddle. Place the tortillas on the griddle and top with a generous amount of cheese. On half of the tortillas, add some of the cooked steak, diced onion, cilantro, red sauce, and guacamole.
  • Place the other tortilla (cheese-side down) on top of the fillings. Serve.
  • Enjoy!

This is the way my family enjoys our taco salad (and I sneak in a few veggies while we are at it!!) It may vary a bit from time to time dependant on the ingredients on hand, but the basics are the same. http://www.broccosprouts.com/

1 lb ground turkey breast
5 1/2 ounces spring mix baby greens, to taste (50/50 mix from fresh Express is my preference since I like to get the spinach in there)
taco seasoning, to taste
black pepper, to taste
garlic, to taste
1 cup sugar snap pea
3/4 cup grape tomatoes
1 pint broccosprouts (I like broccosprouts as they are really good for you - 4oz a week!!)
1 cup four-cheese Mexican blend cheese, more to taste or 1 cup sharp cheddar cheese, if preferred more to taste
salsa, to taste (We like Tostitos HOT,or make our own- for dressing)
sour cream, garnish to taste
tostito baked white corn chips, garnish to taste
black olives, sliced for garnish (optional)
jalapenos (optional) or green chili, garnish (optional)

Steps:

  • Brown turkey and season with taco seasoning, black pepper and garlic to taste.
  • On each plate spread desired amount of greens evenly.
  • Layer cooked turkey, peas,tomatoes,sprouts, and cheese in desired amounts then top with salsa for dressing.
  • Garnish with sour cream, black olives,jalepenos/green chiles and corn chips as you wish.
  • Enjoy! ;).

Sometimes we forget to write down our everyday, simple recipes. :) I figured I might as well get our family's tacos down. This is a combination of how Mom made them when I grew up and how we fix them these days with husband's and my updated tastes. It's also a Pantry Challenge recipe, made with items I already had at home

1/2 cup chopped onion
2 teaspoons olive oil
1 clove garlic, smashed and minced
1 teaspoon recaito (optional)
1 lb lean ground beef
1 teaspoon ground dried ancho chile powder
1/2 teaspoon ground cumin, to taste
8 -12 taco-size corn tortillas or 1 package hard taco shell
butter (if using corn tortillas)
shredded cheddar cheese
chopped tomato
chopped or shredded lettuce
sour cream
guacamole or chopped avocado
hot sauce or catsup

Steps:

  • Saute the onion in the olive oil over medium-high heat until just soft, then add the garlic and recaito and stir well.
  • Add the ground beef, then the ancho and cumin, and cook until meat is well-browned, using a spatula to break up the cooked meat into smaller pieces (some folks call this "hamburger gravel"), about 10 minutes.
  • Julie's method of putting together her taco: take a corn tortilla and thinly spread butter on both sides, then fry in a hot skillet for about 15 to 20 seconds per side to soften the tortilla; fill with cooked meat and desired garnishes (for me that's just cheese, meat mixture, and - yes- catsup because that's how I grew up eating them and yes I know it's weird).
  • Steingrim's method: fill hard taco shell with cooked meat, all garnishes, and hot sauce so spicy you'd swear it would eat its way through the bottle.
  • Note: recaito is a kind of prepared herb mixture containing onion, garlic, peppers, recao leaves, and cilantro; we get it in the jar in the Mexican section of the grocery store.
