TEXAS TACO DIP PLATTER

When I'm entertaining, this colorful dish is my top menu choice. My friends can't resist the hearty appetizer topped with cheese, lettuce, tomatoes and olives. -Kathy Young, Weatherford, Texas

Number Of Ingredients 19

2 pounds ground beef
1 large onion, chopped
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (12 ounces) tomato paste
1 can (15 ounces) tomato puree
2 tablespoons chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic powder
2 teaspoons salt
2 cans (15 ounces each) Ranch Style beans (pinto beans in seasoned tomato sauce)
1 package (9-1/4 ounces) corn chips
2 cups hot cooked rice
TOPPINGS:
2 cups shredded cheddar cheese
1 medium onion, chopped
1 medium head iceberg lettuce, shredded
3 medium tomatoes, chopped
1 can (2-1/4 ounces) sliced ripe olives, drained
1 cup picante sauce, optional

Steps:

  • In a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain. Add next 7 ingredients; cover and simmer for 1-1/2 hours. , Add beans and heat through. On a platter, layer the corn chips, rice, meat mixture, cheese, onion, lettuce, tomatoes and olives. If desired, serve with picante sauce.

Number Of Ingredients 9

1 can (15 ounces) refried beans
1 cup chunky salsa
1 cup guacamole
2 cups sour cream
1 can (4 ounces) chopped green chilies
1 can (2-1/4 ounces) sliced ripe olives, drained
1/2 cup finely shredded cheddar cheese
1/2 cup finely shredded Monterey Jack cheese
Tortilla chips

Steps:

  • Spread beans on a 12-in. serving plate. Layer the salsa, guacamole and sour cream over beans, within 1 in. of edges for each layer. Sprinkle with chilies, olives and cheeses. , Refrigerate until ready to serve. Serve with tortilla chips.

Found this recipe in a newspaper. Changed a few things, made it and it was a hit. You may want to change the heat in this dip by using mild or hot taco sauce or adding or omitting the green chiles.

Number Of Ingredients 11

2 lbs ground beef
1/2 cup water
2 (35 g) envelopes taco seasoning
2 (8 ounce) packages cream cheese, softened
1 cup salad dressing
1 -4 ounce canned diced green chiles, drained
5 roma tomatoes, seeded, dryed and finely chopped
1 cup green onion, finely chopped
1 1/2 cups lettuce, finely shredded
3/4 cup taco sauce
1 1/2 cups cheddar cheese, finely shredded

Steps:

  • In a large skillet cook beef over medium heat until it is no longer pink, drain.
  • Add green chiles, water and taco seasonings. Stir.
  • Simmer for 5 minutes. Cool.
  • In a large bowl combine cream cheese and salad dressing.
  • Spread on a 14 inch serving platter or pizza pan.
  • Top with cooled meat mixture.
  • Sprinkle with tomatoes, onions and lettuce.
  • Drizzle with taco sauce.
  • Sprinkle with cheddar cheese.
  • Serve with tortilla chips.

  • In a separate bowl, blend cream cheese, sour cream, and the other 3 tbsp of taco seasoning with a hand held mixer. Make sure to blend the cream cheese well.
  • I used a trifle bowl, but any 9x13 dish will work just fine. The layers will be a little thinner if you use a 9x13 dish. In a dish, begin layering each layer starting with the refried beans, sour cream mixture, guacamole, Pico de gallo, shredded cheddar, and a handful of sliced olives. I topped mine with a little bit of green onion for color.
