EASY TACO FRIES
A fun twist on the healthy oven fries we've all tried. Great with huevos rancheros, burgers, or just for a snack!

Steps:
- Oil/spray baking sheet; preheat oven to 450.
- Mix potatoes and taco seasoning-- can stir in lg bowl or shake together in a bag until coated.
- Spread on baking sheet.
- Bake 20-30 min, turning several times.
- Longer cooking= crisper fries.

TACO CHILI FRIES

Steps:
- Follow package directions for baking fries. Set aside.
- Brown ground beef in medium skillet over medium-high heat, adding the 2 taco seasoning mix packages along with the 1 1/2 cups water. Cook 5 minutes then remove from heat.
- Spoon salsa, beans, black olives, diced green chilies, cheese and sour cream into separate bowls. Place fries in large bowl near meat mixture and toppings. Using heat-resistant ceramic plates, allow guests to create their own chili fries with meat and toppings. Hold back on the sour cream until after mixture has been broiled.
- Place ceramic plate under broiler about 4 minutes or until fries reheat and cheese melts. Top with sour cream, if desired. Serve immediately.

Steps:
- On baking sheets make a single layer of French fries.
- Bake until golden brown, about 12 minutes.
- In a bowl or bag, add fries and taco seasoning and shake until fries are coated.
- Serve immediately.
CHOCOLATE CHILI
From Ortega's Mexican Fiesta booklet found on an end-cap at the supermarket. If I use mild taco seasoning and mild salsa my husband will eat bowls and bowl of this and for a man that hates chili this is saying a lot. Feel free to spice it up! Garnish this hearty dish with crumbled taco shells, shredded cheddar cheese, cilantro and diced fresh tomatoes. Yum!

Steps:
- In a large pot, heat oil over medium heat; add onion and garlic. Cook and stir until onions are tender, just about 3 minutes. Add chiles, taco seasoning mix and ground beef. Cook beef, stirring often, about 5 minutes or until browned.
- Add tomatoes, cinnamon, water, salsa, chocolate chips and almonds. Stir to combine. Bring to a boil; reduce heat and simmer 45 minutes. Stir every 10-15 minutes to combine the flavors. Add beans and heat an additional 15 minutes.
CHILI TACO SALAD
This recipe is easiest when you're trying to use up some leftover chili (or I suppose you could use some from a can). If you want to be an overachiever serve this in a tortilla bowl (I say this lovingly since I'm lazy and secretly wish I did this) or just put it on a plate. We use all vegan alternatives for the ingredients (vegetarian salsa, vegan sour cream, cheese, etc.) but I purposely chose to omit them from the recipe to make it less scary to non-vegans!

Steps:
- Place a bed of lettuce on each of 6 plates. Top with the chili, dividing it evenly among the plates.
- In a small bowl, combine the salsa and sour cream until well mixed, then spoon over the chili. Top each serving with the cheese and scatter the bell pepper, avocado, and olives evenly over the top. Serve with tortilla chips.
