1 pound lean ground beef
Homemade Taco Seasoning
2 Tablespoons tomato paste
1/2 cup water
6-8 taco shells
Shredded Cheese
Lettuce
Tomatoes
Olives
Avocado (diced)

Steps:

  • In a medium sized skillet over medium high heat add the ground beef and cook and crumble until brown. Add ingredients for homemade taco seasoning, tomato paste and water. Stir until combined. Let it simmer until it starts to thicken, about 5 minutes.
  • Divide evenly into taco shells and top with desired toppings

1 lb. 90% to 93% lean ground beef
1 Tablespoon chili powder
1 teaspoon ground cumin
3/4 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon ground black pepper
1/2 cup tomato sauce
1/4 cup water
12 taco shells - either hard shells or small 6-inch soft flour tortillas will work
Optional Taco Toppings: shredded cheese

Steps:

  • Add the beef to a large skillet over medium-high heat. Break the meat apart with a wooden spoon. Add the chili powder, cumin, salt, oregano, garlic powder, and pepper to the meat. Stir well. Cook until the meat is cooked through, about 6-8 minutes, stirring occasionally.
  • Reduce the heat to medium. Add the tomato sauce and water. Stir to combine. Cook, stirring occasionally, for 7-8 minutes, until some of the liquid evaporates but the meat mixture is still a little saucy. Remove from the heat.
  • Warm the taco shells according to their package directions.
  • Fill the taco shells with 2 heaping tablespoons of taco meat. Top with desired taco toppings: shredded cheese, shredded lettuce, chopped tomatoes, diced red onion, taco sauce, sour cream, guacamole, etc.

1 lb ground beef (70-80% lean*)
1 tbsp chili Powder
½ tsp salt
¾ tsp cumin
½ tsp dried oregano
¼ tsp garlic powder
¼ tsp onion powder
½ cup tomato sauce
8 white corn tortillas
½ cup oil (canola or vegetable)

Steps:

  • Cook Ground Beef: Heat a large skillet over medium heat. Add the ground beef. Break the beef up with a wooden spoon while cooking. Cook the ground beef fully, until browned and no longer pink.
  • Drain: Drain any excess grease from the skillet. Then return to the stove and reduce the heat to low.
  • Season: Add the 1/2 cup tomato sauce and taco seasoning. Stir together until the meat is coated in the sauce.
  • Simmer: Allow to simmer for 5 minutes.
  • Fry Tortillas: Pour 1/2 cup oil in a medium size skillet, heat over medium high heat. Carefully dip a tortilla, if the oil sizzles and bubbles then it's hot enough. Gently lay the tortilla in the oil and fry each side for about 30 seconds, just enough to give some color and add some crispness.
  • Shape Tortillas: Remove the tortilla to a paper towel to absorb oil, and carefully fold the tortilla over to create a taco shape. I do this with my tongs, or two forks, whatever I'm using to lay the tortillas in the oil and remove them.
  • Toppings: Fill the tortillas with the ground beef taco meat and add desired toppings

1 tablespoon olive oil
2 scallions, sliced
2 cloves garlic, minced
1 pound ground chuck
1 mounded tablespoon taco seasoning
Pinch kosher salt
1/2 cup jarred salsa
Hot sauce, to taste
6 hothouse tomatoes
1 cup shredded lettuce
1/2 cup shredded Colby Jack cheese
1/2 cup sour cream
1/4 cup fresh cilantro leaves
1/4 cup jarred jalapenos, drained
Hot sauce, to taste
Wedges of lime, for serving

Steps:

  • For the beef taco mix: Heat the olive oil in a large skillet over a medium-high heat. When the oil is hot, add the scallions and garlic. Stir and cook briefly, 30 to 60 seconds, then add the ground beef. Break the beef up and cook until it is totally browned, 3 to 4 minutes, then drain most of the fat. Add the taco seasoning, salt, salsa and hot sauce, then stir to combine. Add 1/4 cup hot water and stir. Cook for 3 to 4 more minutes to thicken.
  • To serve: While the beef taco mixture cooks, place the tomatoes on a cutting board, with the tops facing down. Using a sharp knife, cut the tops of each into 6 wedges, making sure to not cut all the way through to the bottoms. Gently pull the tomato wedges apart, opening up the centers so they can be filled.
  • Taste and adjust the beef taco mix as needed. Fill each tomato with the mix, then top each with lettuce, cheese, sour cream, cilantro, jalapenos and hot sauce. Garnish with the lime wedges.
