BEEF TACO RICE SKILLET

Mexican skillet dinner ready in 30 minutes! Enjoy this delicious ground beef, rice and vegetables dish made using Old El Paso® taco seasoning and whole kernel corn.

1 lb lean (at least 80%) ground beef
1 envelope (1 oz) Old El Paso™ taco seasoning mix
1 1/2 cups water
1 cup Old El Paso™ Thick 'n Chunky salsa
1 cup frozen whole kernel corn (from 1-lb bag)
1 1/2 cups uncooked instant rice
3/4 cup shredded taco-seasoned cheese (3 oz)
1 cup shredded lettuce
1 medium tomato, chopped (3/4 cup)
Sour cream, if desired

Steps:

  • In 10-inch skillet, cook beef over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain.
  • Stir in taco seasoning mix, water, salsa and corn. Heat to boiling; stir in rice. Boil 1 minute; remove from heat. Cover; let stand 8 minutes.
  • Fluff rice mixture with fork; sprinkle with cheese. Cover; let stand 1 to 2 minutes or until cheese is melted. Sprinkle lettuce around edge of skillet; sprinkle tomato in circle next to lettuce. Serve with sour cream.

I enjoy preparing one-dish dinners, and this is one of my favorites because it's so easy and attractive. Served with tortilla chips or taco shells, it's a fun meal for everyone. And because it's so festive looking, I put the skillet right on the table when we have company.

1 pound ground beef
1 medium onion, chopped
1 can (16 ounces) refried beans
1 can (4 ounces) chopped green chilies
1/4 to 1/2 teaspoon garlic powder
3/4 cup sour cream
1/2 to 1 teaspoon ground cumin
1/2 to 1 teaspoon chili powder
1 medium tomato, seeded and chopped
1 can (2-1/4 ounces) sliced ripe olives, drained
1 small green pepper, chopped
1 cup shredded Mexican cheese blend
Tortilla chips or taco shells, shredded lettuce and salsa

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the beans, chilies and garlic powder; cook until heated through., In a small bowl, combine the sour cream, cumin and chili powder; spread over beef mixture. Top with tomato, olives and green pepper. Sprinkle with cheese. Serve with tortilla chips or taco shells, lettuce and salsa.

1/2 cup sour cream
1 cup shredded Cheddar cheese (4 oz)
1 tablespoon chopped fresh chives

Steps:

  • In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until brown; drain.
  • Stir seasoning mix, water, uncooked pasta, corn, beans and tomato into beef. Heat to boiling; stir. Reduce heat to medium-low. Cover; cook 10 to 15 minutes, stirring occasionally, until pasta is desired doneness and most of the liquid has been absorbed.
  • Stir in sour cream. Remove from heat. Sprinkle with cheese and chives. Cover; let stand 2 to 3 minutes or until cheese is melted.

1 small onion, chopped, divided
1 teaspoon reduced-sodium chicken bouillon granules
1 cup hot water
1 pound lean ground turkey
1 envelope reduced-sodium taco seasoning
1/4 cup fat-free milk
1-1/4 cups salsa, divided
1/2 cup quick-cooking oats
1/4 cup egg substitute

Steps:

  • Coat a 2-qt. baking dish with cooking spray; add potatoes and 1 tablespoon onion. dissolve bouillon in water; pour 1/2 cup over potatoes. In a large bowl, combine the taco seasoning, milk, 1/4 cup salsa, oats, egg substitute and remaining onion; crumble turkey over mixture and mix well., Spread over potatoes. Combine remaining salsa and chicken broth; pour over the turkey mixture. Bake, uncovered, at 350° for 1 hour or until a thermometer reads 165° and meat is no longer pink.

1 tbsp 15 mL chili powder
2 tsp 10 mL onion powder
1 1/2 cups 375 mL dry instant white rice
1 cup 250 mL frozen corn
1/2 cup 125 mL shredded Tex-Mex cheese blend

Steps:

  • Heat large nonstick skillet over medium-high heat. Break up meat in pan; add red and green peppers. Cook, stirring often, 8 minutes or until meat is cooked through; drain off fat.
