I enjoy preparing one-dish dinners, and this is one of my favorites because it's so easy and attractive. Served with tortilla chips or taco shells, it's a fun meal for everyone. And because it's so festive looking, I put the skillet right on the table when we have company.

1 pound ground beef
1 medium onion, chopped
1 can (16 ounces) refried beans
1 can (4 ounces) chopped green chilies
1/4 to 1/2 teaspoon garlic powder
3/4 cup sour cream
1/2 to 1 teaspoon ground cumin
1/2 to 1 teaspoon chili powder
1 medium tomato, seeded and chopped
1 can (2-1/4 ounces) sliced ripe olives, drained
1 small green pepper, chopped
1 cup shredded Mexican cheese blend
Tortilla chips or taco shells, shredded lettuce and salsa

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the beans, chilies and garlic powder; cook until heated through., In a small bowl, combine the sour cream, cumin and chili powder; spread over beef mixture. Top with tomato, olives and green pepper. Sprinkle with cheese. Serve with tortilla chips or taco shells, lettuce and salsa.

1 teaspoon chili powder
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
One 14.5-ounce can black beans, drained and rinsed
1 cup prepared fresh salsa
1 chipotle chile in adobo, chopped, plus 1 tablespoon adobo sauce
12 corn tortillas
2 Roma tomatoes, diced
1 ripe avocado, diced
6 radishes, thinly sliced
1/2 cup queso fresco
Fresh cilantro leaves
Lime wedges
Sour cream

Steps:

  • Heat a large nonstick skillet over medium-high heat. Add the ground turkey to the skillet and season with the chili powder, cumin and some salt and pepper. Cook, breaking up the meat with the back of a spoon, until browned, about 5 minutes. Add the beans, salsa, chipotle chile and adobo sauce to the skillet and cook, stirring often, until warmed through and slightly thickened, about 5 minutes more.
  • Meanwhile, lightly char the tortillas over an open flame. Set aside wrapped in a clean kitchen towel to steam.
  • Spoon the turkey mixture onto the tortillas and serve with diced tomato, avocado, radishes, queso fresco, cilantro leaves, lime wedges and sour cream.

Steps:

  • In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until brown; drain.
  • Stir seasoning mix, water, uncooked pasta, corn, beans and tomato into beef. Heat to boiling; stir. Reduce heat to medium-low. Cover; cook 10 to 15 minutes, stirring occasionally, until pasta is desired doneness and most of the liquid has been absorbed.
  • Stir in sour cream. Remove from heat. Sprinkle with cheese and chives. Cover; let stand 2 to 3 minutes or until cheese is melted.

2 teaspoons vegetable oil (or other neutral oil)
1 pound 93% lean ground beef or turkey
1/2 cup diced white or yellow onion
1/2 cup diced red bell pepper
1 zucchini (chopped)
1 cup frozen yellow corn (no need to thaw)
15 ounces canned reduced sodium black beans (rinsed and drained)
1 tablespoon chili powder
2 teaspoons cumin
1 teaspoon garlic powder
1 teaspoon oregano
1/2 teaspoon paprika
1/4 teaspoon kosher or sea salt (or to taste)
1/4 teaspoon crushed red pepper flakes
freshly ground pepper to taste
8 ounces tomato sauce
1/4 cup water
1 cup grated cheese (or to taste (like cheddar and Pepper Jack))

Steps:

  • Add 1 teaspoon oil to a 12-inch deep skillet or sauté pan (with a lid) and place over medium heat. Add the beef (or turkey) and cook, stirring to break it up, until thoroughly cooked and no longer pink, about 5 minutes. Drain well and transfer the cooked meat to a plate and set aside.
  • Add remaining 1 teaspoon oil to your empty skillet and return it to the heat. Add the onion and bell pepper. Sauté for 3 to 4 minutes until softened. Add the frozen corn and the zucchini. Cook, stirring for 3 to 4 minutes, or until the zucchini is fork tender. Reduce heat to low and add the black beans.
  • Return the cooked meat to the skillet but do not stir. Sprinkle the chili powder, cumin, garlic powder, oregano, paprika, salt, crushed red pepper, and black pepper over the meat and stir to combine. Stir in the tomato sauce and water and cook and stir for a minute or two. Sprinkle with the cheese, cover, and cook just until the cheese has melted.
  • Remove from the heat and keep covered until ready to serve. Sprinkle with green onions just before serving.
  • Spoon into bowls and add your favorite toppings.

Steps:

  • Heat the oil in a large cast-iron skillet over medium-high heat. Add the onion, red pepper and poblano and cook until softened, about 5 minutes. Add the ground turkey and cook, breaking apart with the back of a wooden spoon, until no pink remains, about 10 minutes. Add the chili powder, salt, garlic powder, onion powder, oregano, cumin, red pepper flakes, paprika and cayenne and stir to combine. Add the fire-roasted tomatoes, corn and black beans and bring to a simmer, then reduce the heat to low and simmer until the liquid has reduced slightly, about 10 minutes.
  • Sprinkle the cheese over the top of the skillet, then cover and turn the heat off. Let sit for a few minutes for the cheese to melt from the residual heat.
  • Serve right from the skillet with garnishes of avocado, scallions and cilantro and with tortilla chips alongside.
