1 pound ground beef
2/3 cup water
1 envelope taco seasoning
2 medium ripe avocados, peeled and pitted
2 tablespoons finely chopped red onion
3 garlic cloves, minced
1 teaspoon lemon juice
4 cups shredded lettuce
1 can (2-1/4 ounces) sliced ripe olives, drained
2 medium tomatoes, chopped
1 small cucumber, peeled and chopped
5 green onions, chopped
2 cups shredded cheddar cheese
1 cup salsa
2 cups sour cream
Tortilla chips

Steps:

  • In a small skillet, cook beef over medium heat until no longer pink; drain. Stir in water and taco seasoning. Bring to a boil; cook and stir for 2 minutes. Cool slightly., In a small bowl, mash avocados with onion, garlic and lemon juice. In a 3-qt. glass bowl, layer with beef, avocado mixture, lettuce, olives, tomatoes, cucumber, green onions, cheese, salsa and sour cream. Serve immediately with chips.

  • In a large skillet, cook beef, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in taco seasoning and water. This is a recipe my mom made and we all love it! I have made a few updates to our classic family Taco Salad and tweaked it to my likings, feel free to tweak it to yours!

1 lb ground round
1 ounce taco seasoning mix
1 head lettuce
2 cups cherry tomatoes or 2 cups grape tomatoes
1 cup grated cheese, of choice
8 ounces black beans
1 (2 1/4 ounce) can sliced black olives (smallest can)
1 cup diced green onion
2 peeled and cut avocados
2 cups crushed Doritos
1 ounce ranch dressing mix
1 cup mayonnaise
1 cup milk

Steps:

  • Mix ranch dressing with mayo and milk in a jar and chill until salad is ready.
  • Brown and drain meat.
  • Add taco seasoning mix and follow instructions on package.
  • Put seasoned meat in a glass bowl, cover and chill about 20 min, stirring once.
  • Wash and cut lettuce.
  • Drain beans and olives.
  • Toss lettuce, tomatoes, onions, avacados, beans and olives in a large salad bowl.
  • Put about 2 cups salad mix into serving bowls and add 1/4 cup seasoned meat,a few pinches of cheese and top with crushed Doritos and 2 tbls ranch dressing.

Crispy baked waffles fries loaded with taco beef, tomatoes, avocado green onions and cheese.

22 oz bag of waffle fries
1/2 lb beef
1 packet of taco seasoning
1/2 yellow onion
2 tbsp vegetable oil
3/4 cup shredded cheddar
3/4 cup shredded Monterrey Jack cheese
1 large tomato (seeds taken out and diced)
1 ripe avocado (diced)
1/2 cup chopped green onion
Optional: sour cream for topping

Steps:

  • Preheat oven to 400, spread waffles fries on a large, greased cookie sheet. Make sure that fries is spread in one layer. Bake until golden and crispy.
  • While fries is baking: Heat up oil in a medium cooking pan, over medium heat, and saute diced yellow onions until translucent. Add beef, breaking in up finely, and taco seasoning. Mix well and cook until beef is fully done.
  • Once fries is cooked, transfer it to a smaller baking sheet, so it's in one thick layer. (It's okay for some to overlap here.)
  • Drain all the juice from cooked beef and spread it evenly over fries. Spread cheeses over the top and bake for 5-7 minutes.
  • Take out and spread diced tomatoes, avocado and green onion over the top and add sour cream if desired.
  • Serve right away.
