Steps:
- Place beefaroni, drained tomatoes, beans, corn and cumin in large saucepan; stir to combine.
- Bring to a boil over medium-high heat. Reduce heat, cover and simmer 15 minutes. Sprinkle with cheese and broken chips just before serving.

Steps:
- In large deep skillet, brown ground beef and onion (until meat is no longer pink).
- Drain and return meat to skillet.
- While beef is browning, cook pasta according to package directions.
- While pasta is cooking, add taco mix and water to ground beef; cook for 5 minutes or until water is absorbed (medium heat).
- When pasta is done, drain. Pour into meat mixture and add pepperoni.
- Add cheese, milk, salt and pepper.
- Stir until cheese is melted and pasta is covered with meat mixture.
- Dot with sour cream if desired.

Wonderful quick meal. Originally found on the back of a Minute-Rice box. Can e served with warm tortillas, chips, salsa, chile con queso or sour cream.

Steps:
- Cut chicken into 1 inch cubes.
- Satue chicken in oil in a dutch oven or other large pot until lightly browned.
- Add chicken broth, tomato sauce and Taco seasoning mix to pot, stir to combine.
- Bring to a boil then reduce heat to medium.
- Simmer for 5 minutes.
- Add corn and pepper, increase heat and return to a boil.
- Add uncooked rice and reduce heat.
- Cover and simmer approximately 10 minutes or until it reaches your desired consistency.

- 1. First I must say you can find the OG recipe on the Chef Boyardee site... Now, place beefaroni through cumin in a large saucepan and stir.
- 2. Bring to a boil over medium-high heat. Reduce heat, cover, and simmer 15 minutes.
- 3. Top with TONS of cheese and tortilla chips. Actually, that part is up to you. We were VERY HUNGRY campers:)
- 4. This is a MUST on camping trips! It's so easy, and filling. Well, if you're sharing with 6 people you may need to add bread and a salad or something. But who takes salad camping?!
TACO BEAN RICE A RONI
Created for Dining on a Dollar Contest 2010 I used brown rice as per the ingredient list but you can substitute Calrose white rice, You can also add a 4oz. can of diced jalapeno peppers or diced green peppers, mild, medium or hot. I would not personally put the whole can of jalapeno peppers in it but some people do like it very spicy and hot. Warm the tortillas.

Steps:
- In large frying pan add spaghetti, brown rice and margarine.
- Stir on medium heat until spaghetti and brown rice starts to turn a golden color.
- Add opened black beans with juice, minced dried onion chicken broth base or bouillion cubes, hot water, chili pepper. ground cumin, black pepper and tomato sauce.
- Stir to mix all ingredients.
- Cover and turn heat to low. Simmer 20 to 25 minutes. Stir occasionally.
- Take off when spagetti and rice is cooked and liquid absorbed.
- Serve with warmed tortillas.
