INSTANT POT TACO PASTA
This Instant Pot taco pasta is a welcome change from boring meals. I've taken all the flavors of tacos and created an easy pasta dish. Kids love the taste, and Mom loves how quick and easy it comes together. To lighten things up, use ground turkey. —Christine Hadden, Whitman, Massachusetts

Steps:
- Select saute setting on a 6-qt. electric pressure cooker and adjust for high heat; cook beef until no longer pink, 6-8 minutes, breaking into crumbles. Drain. Add taco seasoning; stir to combine. Add beef broth, tomato sauce and pasta., Lock lid; close pressure-release valve. Adjust pressure to high and set time for 5 minutes. When finished cooking, quick-release pressure. Stir; top with cheese. Stand until cheese melts, about 1 minute. If desired, serve with toppings.

Move over Hamburger Helper™, there's a new player in town and it is just as quick as a boxed meal, but better! I use tomato powder (it's not as messy as tomato paste, but feel free to use tomato paste). I do not recommend regular sour cream as it tends to curdle. Garnish with additional cheese and crema.

Steps:
- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add ground turkey and cook, breaking up into crumbles, until browned, about 5 minutes. Add macaroni, water, diced tomatoes with liquid, and tomato powder; mix well. Cancel Saute function.
- Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Release remaining pressure carefully using the quick-release method, about 5 minutes. Unlock and remove the lid.
- Stir in Cheddar cheese, crema, taco seasoning, and onion powder until well combined.
- Serve immediately, garnished with jalapeno and black olive slices.

TACO PASTA CASSEROLE
This is a casserole I came up with when I worked in a group home where I had to cook dinner for 6 grown men. Please note: some of these are estimates as I honestly don't know the exact size on some of these containers for Zaar's computer. Use whatever you can find in your store (12, 8, 16 ounce)

Steps:
- Preheat oven to 350 degrees.
- Cook Pasta until done.
- While pasta is cooking brown the ground beef.
- Drain ground beef and add taco seasoning per packet directions.
- Drain Pasta and put into large mixing bowl.
- Fold in Salsa, 1/2 the Cheese, and Ground Meat.
- Put into 13X9 casserole dish.
- Top with remaining Cheese.
- Bake for 30 minutes until warmed through - Cheese should be melted and bubbly.
- Top with Sour Cream, Shredded Lettuce, Sliced Black Olives etc. Whatever you use to top your tacos!

- Cook pasta according to the package directions. Drain, reserving 1/2 cup of pasta water. Set aside.
- Meanwhile, in a large skillet, cook the ground meat over medium-high heat until no longer pink. A few minutes before the meat is cooked through, add the chopped onion to the skillet. Once the meat is cooked through, mix in the garlic and cook until fragrant, about 30 seconds. Add in the diced tomatoes and taco seasoning and let simmer over medium heat for about 3-5 minutes.
- Stir in the cream cheese, sour cream and reserved pasta water, and continue stirring until the cream cheese is melted and the sauce is well blended. Season with salt and pepper to taste. Simmer over medium-low heat 3-5 minutes to reduce the sauce a bit if it is still too thin. Add the pasta a little at a time. You may not need all of it. Stir to coat.
- Toss in the cilantro right before serving for some fresh color and flavor. Serve with a green salad.

- In large, deep skillet with a lid (or a dutch oven), heat olive oil over medium-high heat. Once the oil is hot but not yet smoking, add the ground chicken, onion, and red and green bell peppers. Brown the meat, breaking it apart with a spoon, until it is fully cooked through and the onions are translucent, about 8 minutes.
- Add the garlic, chili powder, cumin, oregano, salt, and pepper and cook just until the garlic is fragrant, about 30 seconds. Add the water, salsa, tomato sauce, pasta, and beans.

- Remove the pan from the heat and stir in half of the cheese, then sprinkle the remaining cheese on top. Serve hot with any of your favorite toppings.
