- Combine the sour cream and cilantro in a food processor. Blend until smooth.
- Combine the taco sauce and the buffalo wing sauce. Heat in a small saucepan or in the microwave until warm.
- Toss the cooked chicken wings with the warm sauce. Arrange the wings on a platter, drizzle with cilantro cream, and serve immediately.

- 1. NOTE: Sauce mixture is for roughly 10 Wings. Double for 20 wings and so on. Also, To adjust the heat of the sauce, add 1T of Butter for Medium, 2T for Mild :)
- 2. To cook the wings (If you didn't order like I did) Oven Fry: Shake wings in 2T of oil, spread on a sheet tray and bake at 450 degrees, Flipping every 10 minutes until golden brown and crispy. Deep Fry: Fry at 375 degrees, for 10-12 minutes until golden brown
- 3. Shake or Toss with sauce mixture until fully coated, serve alongside Ranch or Bleu Cheese and enjoy! :)

- In a large resealable plastic bag, combine the taco seasoning, oil, vinegar and 2 teaspoon hot pepper sauce; add chicken. Seal bag and turn to coat.

- Bring a large pot of lightly salted water to a boil. Cook macaroni in the boiling water, stirring occasionally until tender yet firm to the bite, 8 minutes. Drain.
- Cut wings and legs off rotisserie chicken. Skin and bone wings and legs; chop or shred dark meat into bite-size pieces.
- Melt butter in a large Dutch oven over medium heat. Whisk in flour gradually until a thick paste forms. Cook until golden, about 1 minute. Pour in milk, whisking constantly, until thickened and bubbling, about 5 minutes. Continue to cook until sauce is smooth, about 1 minute more. Reduce heat and season sauce with black pepper.
- Stir Cheddar and Monterey Jack cheese into the sauce until melted and combined. Stir in hot sauce, adjusting to reach desired level of spiciness. Add blue cheese, chicken, and macaroni; mix well to combine.

TACO MAC BUFFALO HOT WINGS
My husband loves Taco Mac. We moved to Denver recently and no Taco Mac.This is my attempt to duplicate them for him. He loved them so I guess they are close.

- Combine hot sauce, butter, Worcestershire sauce, garlic and sugar; mix well in a pot and warm the sauce until butter is melted. Keep warm until ready to use.
- If the wings are frozen, be sure to defrost and dry them.
- If they have not been clipped yet, clip the tips off, and separate at the joint.
- Wash them well in cool water. Season with salt, paprika and cayenne.
- Put on a paper towel covered rack/tray in the refrigerator overnight to air dry. ( This is critical if you want to match the texture of Taco Macs, especially if they were frozen).
- Oil should be about 375 degrees. Deep fry the wings in batches until just golden, about 10 to 15 minutes or until some parts of the wings begin to turn dark brown.
- Remove the wings from the oil to a paper towel covered pain to drain and put in a warm oven (200 degrees) while cooking the remaining wings. But don't let them sit too long, because you want to serve the wings hot.
- Put the wings into a large bowl with lid. Add the hot sauce. Put on the lid, then shake making sure to coat all the wings evenly. Serve any left over sauce on the side.
- Serve with Bleu cheese dressing and celery sticks. Don't forget the beer!
