TACO CHILI FRIES
My family loves it and it looks real good and taste like taco. Try this!

Steps:
- 1. Follow package directions for baking fries. Set aside.
- 2. Brown ground beef in medium skillet over medium-high heat. Stir in water and seasoning mix. Cook for 5 minutes. Remove from heat.
- 3. Spoon salsa, beans, olives, chiles, cheese and sour cream, into separate bowls. Place fries in large bowl near meat mixture and toppings. Using heat-resistant ceramic plates, allow guests to create their own chili fries with meat and toppings.
- 4. Place ceramic plate under broiler about 4 minutes or until fries reheat and cheese melts. Top with sour cream. Serve immediately.

- In a large, high sided skillet, saute the ground beef and onion until there is no longer any pink in the beef. Drain.
- Sprinkle the beef with salt, pepper and taco seasoning. Add green chilies, hominy, chili beans, kidney beans, diced tomatoes, and enchilada sauce. Stir to combine. Bring mixture to a boil over high heat. Reduce heat and simmer on low, 1 hour partially covered, stirring occasionally to prevent sticking.

- Brown ground beef in medium skillet over medium-high heat, adding the 2 taco seasoning mix packages along with the 1 1/2 cups water. Cook 5 minutes then remove from heat.
- Spoon salsa, beans, black olives, diced green chilies, cheese and sour cream into separate bowls. Place fries in large bowl near meat mixture and toppings. Using heat-resistant ceramic plates, allow guests to create their own chili fries with meat and toppings. Hold back on the sour cream until after mixture has been broiled.
- Place ceramic plate under broiler about 4 minutes or until fries reheat and cheese melts. Top with sour cream, if desired. Serve immediately.

- Prepare french fries as directed on the package.
- Stir cornstarch and water in a small cup until cornstarch dissolves; set aside. Bring milk and margarine to a boil in a saucepan, stirring constantly. Reduce the heat and whisk the cornstarch mixture into the milk mixture, bring to a simmer over medium heat. Cook and stir until the mixture is thick and smooth. Add the cheese to the milk mixture and stir until the cheese has melted and is well combined.
- Prepare chili as directed on the can. Pour the cooked chili and the cheese sauce over the top of the cooked french fries.

- Preheat oven 425 degrees F. Line baking sheet with lightly greased parchment paper. Cut potatoes into strips and blot with paper towel. Transfer the fries to a bowl and add olive oil, salt, and garlic powder, toss to coat.
- Arrange fries in a single layer on baking sheet, Bake for 30-40 minutes or until fries are crisp and tender, turning halfway.
- Rinse lentils using a fine mesh strainer. Bring lentil to boil with cold water in a medium size pot on medium-high heat. Cover pot and reduce to simmer for 30 minutes or until tender. If there is liquid remaining then leave the pot uncovered and cook until evaporated.
- Allow lentils to cool slightly, transfer to a food processor and add walnuts. Process until crumbly texture.

- SWEET POTATO FRIES: Prepare the fries according to package directions. Make sure not to overcrowd the fries on the pan, or they will steam instead of roast. While fries are baking, assemble the spices, prep the toppings and, finally, make the turkey taco meat.
- TURKEY TACO MEAT: When the fries are almost done baking (10-15 mins left), prepare the taco meat. Dice the onion and mince the garlic. Heat a large skillet on medium high heat. Add 1 tablespoon olive oil and once the oil is hot, add in the diced onion. Cook for 3-5 minutes or until soft and translucent. Add in the garlic and cook for 20-30 seconds. Add in all of the seasonings: 1 tablespoon chili powder, 1 teaspoon ground cumin, 1 teaspoon paprika, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, 1/2 teaspoon dried oregano, 1/2 teaspoon salt, and 1/2 teaspoon pepper, and 1/2 tablespoon beef bouillon powder. Stir the spices until fragrant, about 30 seconds. Nothing should be burning; reduce the heat if needed.
- TACO MEAT CONT.: Increase the heat to high and add in the ground turkey. Crumble the meat into small pieces and cook until no longer pink (but not cooked through all the way), about 5 minutes. Add in the tomato sauce and scrape the bottom of the pan to release any browned bits. Let simmer for 3-4 minutes and then remove from heat.
- ASSEMBLY: Divide the fries evenly between 4 plates (See Note 1 if serving this as an appetizer). Add equal amounts of the turkey taco meat and then sprinkle cheese on top. The taco meat and fries should be hot enough to melt the cheese. Immediately add toppings of choice. Our favorites are a big scoop of sour cream, ripe sliced avocado (or guacamole), a little pico, fresh cilantro, and lots of fresh lime juice. If you like some spice add in some jalapeños or hot sauce. Enjoy while hot and melty. We use forks since the meat and toppings do tend to fall off the fries.

- Sprinkle the fries with the taco seasoning and then bake them according to package instructions, usually around 20 minutes. In the meantime, make the taco meat and prep toppings.
- To make the taco meat, heat a large skillet over medium-high heat. Add oil and onion and cook for about 5 minutes, until starting to soften and brown. Add beef and season with salt and pepper. Cook, stirring occasionally until browned, about 5 minutes. Drain off any excess fat and then add the spices and toast for about a minute. Add tomato and stir through.
