TACO BAKE CASSEROLE

This quick and easy taco bake will satisfy even the most picky eaters. You can modify it to add things you love. It's yummy and so easy to make! Top with tomatoes, lettuce, salsa or whatever you like on your Mexican food.

cooking spray (such as Pam®)
1 ½ pounds ground beef
1 cup chopped onion
½ cup water
1 (1 ounce) package taco seasoning mix
1 (10 ounce) can refried beans
½ cup salsa
1 (6 ounce) can sliced black olives
1 (4 ounce) can diced green chiles
15 taco shells, broken up, or more to taste
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking pan with cooking spray.
  • Cook ground beef and onions in a skillet over medium heat until beef is browned, 7 to 10 minutes; drain grease. Stir in water and taco seasoning; cook, stirring often, until thickened, about 2 minutes. Add refried beans, salsa, olives, and green chiles. Cook and stir over low heat until ingredients are warmed through, 3 to 4 minutes.
  • Place half of the taco shells in the bottom of the baking dish. Pour in half of the ground beef mixture; sprinkle with half of the Cheddar cheese. Repeat with remaining taco shells, ground beef mixture, and Cheddar cheese.
  • Bake in the preheated oven until cheese is melted and bubbly, 20 to 25 minutes.

Move over tortillas. Shredded potatoes are the crispy, crunchy base you've been craving for all your favorite taco fixings -- melty cheese, spiced ground beef and piles of cool lettuce, avocado and sour cream.

Number Of Ingredients 10

5 tablespoons vegetable oil
1 pound ground beef
1 teaspoon ground cumin
3 teaspoons chili powder
Kosher salt
1 tablespoon tomato paste
Nonstick cooking spray, for spraying the sheet pan
20 ounces refrigerated shredded hash browns
8 ounces Cheddar, grated (about 2 cups)
Assorted toppings, such as shredded iceberg lettuce, salsa, diced avocado, sour cream, sliced black olives, pickled jalapenos and hot sauce

Steps:

  • Heat 1 tablespoon of the oil in a medium skillet over medium heat. Add the ground beef and cook, breaking it up with a wooden spoon, until no longer pink, about 4 minutes. Add the cumin, 2 teaspoons of the chili powder and 1/2 teaspoon salt and stir to combine. Push the beef aside to make a space in the middle of the skillet and add the tomato paste. Cook, stirring, until the tomato paste darkens a shade or two, about 1 minute, then stir it into the beef. Add 1/2 cup water, bring to a rapid simmer and cook, stirring, until the water has almost completely reduced, about 2 minutes. Keep hot.
  • Preheat the broiler. Spray an 18-by-13-inch sheet pan with cooking spray.
  • Spread the hash browns on the prepared sheet pan, toss with 1 teaspoon salt and the remaining 4 tablespoons vegetable oil and 1 teaspoon chili powder and pat into an even layer. Broil until golden, 8 to 10 minutes. Toss well with a heatproof spatula, pat back into an even layer and return to the broiler until golden brown, 6 to 8 minutes more. Top with the spiced ground beef and Cheddar and broil until the cheese is melted, about 2 minutes. Add your favorite toppings, cut into pieces and serve.

¾ cup very warm milk (120 degrees F to 130 degrees F)
3 tablespoons Mazola® Corn Oil
1 egg
1 cup chunky salsa
1 cup shredded Mexican-style cheese
1 cup corn chips, partially crushed

Steps:

  • Brown ground beef and drain. Add taco seasoning and mix well.
  • Mix batter ingredients together in a pre-sprayed 9-1/2-inch deep dish pie plate.
  • Top batter with taco meat filling. Pour salsa evenly over meat; sprinkle with shredded cheese and corn chips.
  • Bake by placing in a COLD oven; set temperature to 350 degrees F. Bake for 30 minutes or until done.

1 package taco seasoning mix
cooking spray
2 (8 ounce) packages refrigerated crescent rolls
1 (16 ounce) can refried beans
1 (8 ounce) package shredded Cheddar cheese
1 (10 ounce) bag shredded lettuce

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Stir in taco seasoning.
  • Preheat oven to 350 degrees F (175 degrees C). Spray an 8x10-inch baking dish with cooking spray.
  • Spread crescent roll dough into the bottom of the prepared baking dish; spoon refried beans onto dough. Layer ground beef over refried beans. Wrap edges of crescent roll dough over ground beef.
  • Bake in the preheated oven until dough is golden brown, 10 to 15 minutes. Sprinkle with Cheddar cheese and lettuce.
