This is a great appetizer dish, I have made it quite often for parties, never had a empty platter with this recipe, I am sure you will love this one. My taco seasoning mix recipe#76616 works well for this. You can adjust all amounts to taste.

1 1/2 lbs ground beef
1 small onion, chopped
2 tablespoons fresh minced garlic
1/2 cup water
1 (1 1/4 ounce) envelope taco seasoning
2 (8 ounce) packages cream cheese, softened
1/4 cup milk
1 (4 ounce) can chopped green chilies, drained
2 medium tomatoes, seeded and chopped
4 green onions, chopped (or to taste)
2 cups chopped lettuce
1 cup honey barbecue sauce (or to taste)
2 cups shredded cheddar cheese (or to taste)
corn chips (any amount)

Steps:

  • In a skillet, cook the beef with onions and garlic over medium heat until no longer pink; drain.
  • Add water and taco seasoning, simmer for about 5 minutes.
  • In a bowl, combine the cream cheese and milk; spread on a serving platter or pizza pan.
  • Top with the meat mixture.
  • Sprinkle with chilies, tomatoes, onions and lettuce.
  • Drizzle with barbecue sauce.
  • Sprinkle with cheddar cheese.
  • Serve with large size corn chips.

1 (1 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
1 (8 ounce) package cream cheese, softened
1 (16 ounce) container sour cream
1 (16 ounce) jar salsa
1 large tomato, chopped
1 green bell pepper, chopped
1 bunch chopped green onions
1 small head iceberg lettuce, shredded
1 (6 ounce) can sliced black olives, drained
2 cups shredded Cheddar cheese

Steps:

  • In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
  • Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
  • Top the layers with salsa. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar cheese. Garnish with black olives.

I made these yesterday for my Holiday Appetizer Party with my cooking and recipes group and they were really good! The amount is approximate, depending on how much you fill the scoops. I had some scoops left over when I got done making mine.

Number Of Ingredients 7

1 1/2 lbs lean ground beef
1 (1 1/4 ounce) package taco seasoning, divided
1/2 cup water
8 ounces Mexican blend cheese
8 ounces chunky salsa
1 (12 ounce) bag Frito Scoops, bite-size
1 (8 ounce) container sour cream

Steps:

  • In a lg. skillet over med-high heat fry hamburger until almost done, chopping to break up the meat into small pieces.
  • When meat is done, drain grease.
  • Add half the pack of taco seasoning and water. Continue cooking until water is evaporated.
  • Add salsa, and mix well.
  • Add half the bag of Mexican blend cheese. Mix well until cheese melts. Set aside.
  • When ready to make scoops, fill each one with a little meat mixture.
  • Preheat oven to 350.
  • Mix sour cream and the rest of the pack of taco seasoning. Set aside.
  • Top scoops with additional cheese.
  • Put on a lg. baking sheet, and bake in the oven for about 5 minutes, or until cheese is melted.
  • Put on serving platter, and dollop with a little sour cream mix.

Quick Easy and Delicious! I learned this recipe from many years of eating with the Mexican cooks at my restaurant. They like to sneak in breakfast before we open. I've grown to LOVE this breakfast. If you like spicy food, you will love this.

6 ounces chorizo sausage
8 (6 inch) corn tortillas
6 eggs
¼ cup milk
½ teaspoon pepper
½ teaspoon salt
1 cup shredded Monterey Jack cheese
1 dash hot pepper sauce (e.g. Tabasco™), or to taste
½ cup salsa

Steps:

  • Crumble the sausage into a skillet over medium-high heat. Cook and stir until evenly brown. Set aside.
  • Heat one skillet over medium heat, and heat another skillet over high heat. The skillet over high heat is for warming tortillas. In a medium bowl, whisk together the eggs, milk, salt and pepper. Spray the medium heat skillet with some cooking spray, and pour in the eggs. Cook and stir until almost firm. Add the sausage, and continue cooking and stirring until firm.
  • Meanwhile, warm tortillas for about 45 seconds per side in the other skillet, so they are hot and crispy on the edges, but still pliable.
  • Sprinkle a little shredded cheese onto each tortilla while it is still hot. Top with some of the scrambled egg and sausage, then add hot pepper sauce and salsa to your liking.
