2 tablespoons vegetable oil
4 beef t-bone steaks, 1-inch thick
1 tablespoon butter
1 lb fresh mushrooms, cleaned and sliced
2 shallots, chopped
1 tablespoon fresh parsley, chopped
1/4 cup cognac
2/3 cup heavy cream
salt and pepper
3 drops Tabasco sauce
3 drops lemon juice

Steps:

  • Preheat oven to 150ºF.
  • Cook steaks in two batches using the following procedure. Heat half of oil in large frying pan. When hot, add meat and cook 4 to 5 minutes over high heat.
  • Turn meat over, season well and continue cooking 4 to 5 minutes. Remove meat from pan and keep steaks hot in oven.
  • Add butter, mushrooms, shallots, and parsley to pan. Season well and cook 4 to 5 minutes over medium heat.
  • Pour in cognac and cook 3 minutes over high heat.
  • Add cream and Tabasco sauce. Cook 5 to 6 minutes on high heat. Mix in lemon juice and serve with steaks.

This is the best recipe for the grill and t-bones. My husband loves them and asks for them all the time. The key to a good steak is bringing it to room temp. before you cook it. The garlic and pepper go hand in hand.

6 cloves garlic, minced (i use a fine cheese grater it works great)
fresh ground pepper

Steps:

  • bring the t-bones to room temp.
  • mince the garlic and apply liberally to each side of the steak.
  • next with your pepper mill add the fresh ground pepper until the steak is covered on both sides, again apply liberally.
  • the best cooking method is the grill but you can also broil them.

1 (12 ounce) bottle lawry's 30-minute garlic and herb marinade
4 ounces crumbled blue cheese

Steps:

  • Place T-Bone steaks in a shallow pan and cover with marinade. Let sit at least 30 minutes, but up to 8 hours.
  • Preheat Broiler.
  • Heat grill and grill steaks for 5-6 minutes. Turn and repeat on other side.
  • Place stakes on baking sheet. Sprinkle blue cheese on each steak generously.
  • Broil 2-3 minutes or until cheese is melted. Serve immediately.
