Recipe video above. Here's a cheffy way to cook steak that really makes the most of a good steak - or fancies up economical steaks! Basting with garlic-thyme infused butter as the steak is cooking adds flavour and luxury to the steak. You'll feel like a total pro cooking it and it'll rival the best steakhouse in town!

1 - 2 boneless ribeye or scotch fillet (, 2.5 cm / 1" thick, approx 300g/10 oz each (Note 1))
1 tbsp vegetable oil
Salt and pepper
75g / 5 tbsp unsalted butter (, cut into 1.25cm / 1/2" cubes (Note 2))
6 sprigs fresh thyme or 3 sprigs rosemary
5 garlic cloves (, peeled and smashed to split (Note 3))

Steps:

  • Bring to room temp: Take the steak out of the fridge 30 minutes prior to bring to room temperature.
  • Dry steaks: Pat dry with paper towels.
  • Heat skillet: Heat oil in a heavy based skillet over high heat until it is very hot - you should see smoke!
  • Season: Sprinkle each side of the steak generously with salt and pepper, then immediately place in the skillet.
  • Sear Side 1: Cook for 2 - 2.5 minutes until you get a great crust, then turn.
  • Garlic Butter: Leave for 1 minute, then push steaks to one side and toss in butter, garlic and thyme. BE CAREFUL - the thyme will sputter!
  • Baste: As soon as the butter is melted, continuously spoon the butter over the steak until it's cooked to your liking - 2 minutes in total for the 2nd side for medium rare (52C/125F, chart below for other doneness temps)
  • Basting also renders fat on the side of the steak - use tongs to sear the edges at the end if you want it browned more.
  • Rest: Transfer steak to a plate and cover loosely with foil, rest for 5 to 10 minutes.
  • Serve steak with a bit of the butter from the skillet drizzled on top. Pictured in post with Crispy Smashed Potatoes.

1/4 cup (1/2 stick) unsalted butter
2 tablespoons olive oil
1 (2-pound) T-bone steak (about 1 inch thick), trimmed and at room temperature
Sea salt and cracked black pepper
6 sprigs thyme

3 tablespoons butter, softened
1 tablespoon basil or 1 tablespoon rosemary
2 garlic cloves, minced
1/2 teaspoon Worcestershire sauce
1/8 teaspoon hot pepper sauce
2 (1 lb) beef t-bone steaks, cut 1 inch thick

Steps:

  • In a small bowl stir together butter, rosemary, garlic, Worcestershire sauce and pepper sauce.
  • Shape into a 2 inch long roll. Wrap in a plastic wrap. Refrigerate until needed.
  • Lightly sprinkle steaks with salt and black pepper to taste.
  • Coat grill rack with nonstick cooking spray. Preheat grill to medium-direct heat.
  • Grill steaks uncovered to desired doneness, turning once halfway through grill. (Allow 11-14 minute for medium rare or 13-16 minutes for medium).
  • Cut steaks into serving pieces. Top each piece with some of the butter.

Skillet Seared Steak with Garlic Butter image

An easy, straight forward method that uses basic ingredients to cook an excellent steak! A recipe everyone in the whole family will love. Works great with Ribeye or New York strip steak, use what you prefer or what's on sale. If you don't have the thyme try rosemary or just omit it altogether you'll still have a delicious steak.

2 (12 oz) Ribeye or New York strip steaks ((about 1 1/4-inches thick))
1 Tbsp vegetable oil
1 tsp kosher salt
3/4 tsp freshly ground black pepper
2 Tbsp unsalted butter
2 sprigs fresh thyme
2 garlic cloves, (peeled and smashed)

Steps:

  • Let steaks rest at room temperature 30 minutes.
  • Heat vegetable oil in a 12-inch cast iron skillet over medium-high heat (you want to let it get hot oil should be shimmering near smoking, preheating should take about 3 minutes if using a gas stove, longer for electric).
  • Dab both sides of steak dry with paper towels then season both sides with salt and pepper.
  • Place steaks in skillet and using metal tongs press down over top surface of steaks to ensure the entire bottom surface is making direct contact with skillet.
  • Let cook until browned on bottom, about 3 minutes.
  • Flip and continue to cook until steak is about 10 degrees away from desired doneness, approximately 3 minutes longer.
  • Reduce heat to medium-low, add butter, garlic and thyme.
  • Using an oven mitt grasp pan and tilt pan so butter pools to one side, spoon butter over steaks and continue to cook until steaks registers desired doneness (see notes below for temps, keep in mind they'll rise about 5 more degrees of heat), about 1 minute longer.
  • Transfer to plates. Let rest 5 minutes before slicing.

  • Preheat the oven to 415° F. Remove steak from the fridge 30 minutes before cooking, this is to bring the steak to room temperature and ensure your cooking times are more accurate. Season both sides liberally with salt and pepper. The more the better.
  • Add butter to an oven-safe cast iron skillet and turn up high, allow the skillet to become hot. Place the T-bone steak face down and sear undisturbed for 2 minutes. Flip and sear for an additional 2 minutes. This will give your steak a nice seared edge.
  • Add whole garlic cloves, fresh rosemary, and thyme to the skillet and immediately transfer your skillet directly to the oven [WARNING] skillet may be hot, handle with oven mitts. For rare, bake for 4 minutes. Medium-rare, 4-5 minutes. Medium, 6-7 minutes. Medium-well, 7-8 minutes. Remember, depending on the thickness of the steak, the more or less time it will take.   • Take your T-bone and dry it well with paper towels. Then liberally sprinkle salt on both sides and sandwich the meat between a few paper towels. Let sit on a counter in the open for 1 hour.
  • Remove the paper towels wiping away all the seeped moisture. Re-season with flaky sea salt and freshly cracked black pepper and pat it onto the surface of the meat. Let sit uncovered for a half hour.
