SZECHUAN GREEN BEANS

Szechuan Green Beans image

My take on the long green beans you find in some of the Asian fusion restaurants. If you don't have the Szechuan peppercorns this dish will still taste great, though you may want to add some chili flakes or other spice to give it some pep instead of the peppercorns.

Categories     Side Dish     Vegetables     Green Beans

Time 20m

Yield 4

Number Of Ingredients 11

1 teaspoon Szechuan peppercorns
1 tablespoon peanut oil
1 teaspoon minced garlic
⅛ teaspoon ginger powder
¼ cup red wine vinegar
3 tablespoons soy sauce
1 green onion, chopped
2 teaspoons hoisin sauce
½ teaspoon sesame oil
½ pound long green beans
1 tablespoon sesame seeds

Steps:

  • Cook and stir peppercorns in a dry skillet over medium heat until aromatic, 2 to 3 minutes. Grind peppercorns using a mortar and pestle.
  • Heat peanut oil in a small skillet over medium heat; add garlic and cook until lightly browned, about 1 minute. Mix ground peppercorns and ginger into garlic.
  • Mix red wine vinegar, soy sauce, green onion, hoisin sauce, and sesame oil into garlic mixture; cook and stir until sauce is heated through, 2 to 4 minutes.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add green beans, cover, and steam until tender, about 5 minutes.
  • Toss green beans and sauce together in a bowl; top with sesame seeds.

Schezwan noodles Recipe image

Schezwan noodles Recipe - Instant Noodles or Chow Mein Noodles tossed in Spicy Schezwan Sauce with lots of veggies is full of flavors and something that we are gonna love forever and ever.

Provided by Anjali

Categories     Dinner     Main Course

Time 20m

Number Of Ingredients 14

250 gram Noodles (Instant or Chow Mein Noodles)
Salt (as per taste)
2 tablespoon Oil
6 cups water (to cook noodles)
2 tablespoons Sesame Oil (can be replaced with canola oil (for stir frying))
1 Medium Onion (finely chopped)
4 cloves Garlic (minced)
1 medium Carrot (diced)
1 Medium Bell Pepper (half) (diced)
7-8 small Green Beans (cut into 1-inch slices)
Salt (as per taste)
1 tablespoon Ground Black pepper (or as per taste)
6 packs Tastemakers (See notes for ingredients if you don't have tastemaker)
1 cup Schezwan Sauce (homemade or storebought)

Steps:

  • In a pot boil water with salt and some oil. Add Noodles and cook as per package directions.
  • Once cooked, transfer it to a colander and pour cold water immediately so that the cooking process stops. Drain the water and keep the noodles aside.
  • In a pan heat some Sesame Oil. Once the oil gets hot, add chopped onions. Cook onions on medium-high heat until they get translucent. Then add minced garlic cloves and sauté for not more than 30-seconds. Now add chopped veggies (carrots, bell pepper, green beans) and sauté for 30-45 seconds. Do not overcook veggies as you want them to be crunchy.
  • Now add Salt, Pepper, and Tastemaker. Toss well to combine. Add your Schezwan Sauce and toss well to combine it with the veggies.
  • Finally, add cooked noodles back into the pot. Toss well until combined. Serve right away.

SZECHUAN GREEN BEANS

Szechuan Green Beans image

These are great. The recipe was originally from one of the Moosewood cookbooks with a bit of tweaking. They recommend "follow the cooking method exactly, as it is critical to the success of this dish. Both the wok and the oil should be hot, and the beans should cook quickly over high heat. They will attain an indescribable texture, both crunchy and very tender at the same time. Also, try to hang in there with the full quantity of garlic. The intense cooking heat will take the edge off it, leaving behind just the right amount of flavor." ENJOY!

SZECHUAN TOFU AND VEGGIES

Szechuan Tofu and Veggies image

Szechuan Tofu and Veggies! A flavorful vegan stir-fry with crispy tofu, szechuan sauce and loaded up with healthy vegetables! Quick, easy and flavorful!!!

Provided by Sylvia Fountaine | Feasting at Home

Categories     vegan

Time 30m

Yield 2

Number Of Ingredients 12

8-12 ounces tofu, patted dry and cubed (or sub shrimp or chicken cubes)
2 tablespoons peanut oil or high heat oil
generous pinch salt and pepper
½ cup thinly sliced onion
4 ounces sliced mushrooms (optional)
2 cups shredded cabbage (or shredded brussels, or shredded broccoli)
1 cup shredded carrots or matchstick
½ red bell pepper, thinly sliced
1 cup asparagus, snap peas, or green beans
optional: 6-8 small dried red Chinese or Arbol chilies
¼ cup Szechuan Sauce and more to taste! (please multiply if doubling or tripling the recipe)
garnish: scallions, sesame seeds, chili flakes

Steps:

  • Heat oil in a skillet. Season oil generously with salt and pepper. With tofu, I generally use ½ teaspoon kosher salt per ½ pound of tofu. Swirl the seasoned oil around until spread out uniformly. Add tofu and sear on at least two sides, until crispy and golden. Be patient here. Set aside.
  • To the same pan, add a little more oil if needed, onion, and mushrooms and sauté over medium-high heat - stirring constantly, until tender, about 3 minutes. Add the remaining veggies, add the dried red chilies if you like -and lower heat to medium, and sauté, tossing & stirring for 3-5 minutes until just tender or al dente. Tender, but vibrant and still slightly crisp!
  • Add the Szechuan Sauce, starting with ¼ cup and adding more to taste. If you are cooking more than one batch, you'll need to multiply the sauce accordingly. Cook the sauce 2 minutes, letting it thicken a bit. Toss in the crispy tofu ( or shrimp or chicken) right at the end, just to warm it up.
  • Divide among bowls. Sprinkle with sesame seeds and scallions. Add chili flakes for more heat.
  • Serve this just as it is, or over rice, or noodles... and remember, do not eat the dried chilis!

STIR-FRIED SZECHUAN GREEN BEANS & SHIITAKE MUSHROOMS

Stir-Fried Szechuan Green Beans & Shiitake Mushrooms image

You'll be amazed at how authentic these Szechuan green beans taste -- plus, they're so easy to make.

Provided by By Jennifer Segal, inspired by More Best Recipes (from the editors of Cook's Illustrated)

Categories     Vegetables & Sides

Yield 4 as a side dish

Number Of Ingredients 13

3 tablespoons soy sauce
3 tablespoons water
1½ tablespoons dry sherry
½ teaspoon Asian/toasted sesame oil
1¼ teaspoons sugar
½ teaspoon cornstarch
¼ teaspoon red pepper flakes
¼ teaspoon dry mustard
Vegetable oil
1 pound green beans, ends trimmed
7 ounces shiitake mushrooms, stems removed and sliced
3 cloves garlic
1 tablespoon grated fresh ginger

Steps:

  • In a small bowl, whisk the soy sauce, water, dry sherry, sesame oil, sugar, cornstarch, red pepper flakes and mustard together. Set aside.
  • Heat 2 tablespoons oil in a 12-inch nonstick skillet over high heat until very hot and shimmering. Add the beans and cook, stirring frequently, until tender, puckered and browned, about 7-10 minutes (cooking time will depend on the size of the beans). Transfer beans to large plate.
  • Add 1 teaspoon oil to pan. Add shiitake mushrooms and cook, stirring occasionally, for 3-4 minutes until slightly browned. Reduce heat to medium, then add the garlic and ginger and cook, stirring constantly, until fragrant, about 20 seconds. Return the beans to the pan and add the sauce. Toss and cook until the sauce is slightly thickened and the vegetables are evenly coated, about 10 seconds. Transfer to serving dish and serve immediately.
  • Note: This recipe works best with thinner green beans (but not the super thin French haricots verts). If your beans seem really long, thick or a bit tough, cut them in half so they cook evenly (there may be just a few in the bunch that you need to cut). Also, be sure beans are dry, otherwise oil will splatter.

  • Marinate minced pork with all the seasonings in a small bowl for around 15 minutes just before cooking. Prepare the green beans and drain with paper.
  • Heat up oil in wok (or you can use a small deep pot) until you can see light smoke on the surface over high fire. Add drained green beans to fry for 3 to 5 minutes over low to medium fire. Stir the beans occasionally during the process. They will be well deep-fried when there are obviously withered. Transfer out and filter the extra oil out.
  • Leave around 1 tablespoon of cooking oil in wok and pour out the extra. Be carefully during the process as the oil is extremely hot. Add minced pork and fry until for 1 minute until aroma and then put ginger, garlic, Szechuan pepper, ginger, Ya Cai (if you happen to have some in kitchen) and dried pepper. Fry for another 1 to 2 minute. Return green beans along with salt, sugar and light soy sauce. Fry until everything is well combined. Serve hot!

  • In a small pot combine the red chili flake, garlic, ginger, cumin seeds, tamari (or soy sauce), dates, and water. Cover and bring to a boil over medium heat. Reduce heat to low. Simmer 10 minutes. Be careful not to remove the lid or you’ll risk burning the sauce. After 10 minutes, turn off the heat. Add the lime juice. Keep covered and warm until ready to use.
  • Spread the assortment of green beans, sugar snap peas, and/or snow peas into a single layer on a baking sheet. Place on the top rack of your oven, right under the broiler. Broil 8-10 minutes, flipping the beans and peas about halfway through. You want there to be a nice char on some of the beans. Yet, you don’t want to burn the beans.
  • Spread the charred green beans and snap peas onto a large serving platter. Pour the Spicy Szechuan Sauce over the beans. Serve immediately.
