This has been a favorite for years. Did not include marinating time in prep time. If you do not like too much spice, cut back on the cayenne pepper.

Steps:
- Combine 4 tablespoons of soy sauce, 1 tablespoon sugar, 2 tablespoons oil, white pepper, and cornstarch to form marinade. Add beef and let stand 30 minutes, or longer.
- Combine 3 tablespoons soy sauce, 1 tablespoon sugar, hoisin sauce, and cayenne. Reserve.
- Heat remaining oil in skillet over high heat. Add beef and stir fry for 3 minutes.
- Meanwhile add vegetables to meat. Stir fry until just done, crisp tender.
- Add prepared sauce. Cook until heated through, about 30 seconds.

Not authentic at all, but good! I cannot recall where I found this recipe but it has been a favorite over the years. It has great flavor and is fast to put together...perfect for week night meals!

Steps:
- Cut beef into thin slices (I do this when slightly frozen for more ease).
- Mix soy sauce, chili sauce, sherry, cornstarch, ginger, and pepper flakes in a small bowl. Set aside.
- Heat 1 T. oil in a wok. Add garlic and onions, stir fry 1 minute.
- Remove to a bowl with a slotted spoon. Add remaining oil to wok.
- Add meat a 1/3 at a time, stir frying until it loses it's red color.
- Place in bowl with onions.
- Add chili mixture to wok, heat until bubbly hot. Stir in meat and onion mixtures, stirring until sauce coats meat and onions and is warmed through.
- Serve over rice.

- Make the Szechuan sauce by combining the chili paste, red pepper flakes, soy sauce, brown sugar, rice vinegar and sesame oil in a bowl (if you like a thick gooey sauce, add 1 teaspoon of corn starch to this mixture (mixed well with whisk!), it will thicken upon cooking). Set aside for later use. Wash fresh broccoli, break into pieces, and mince garlic clove. Slice thin stir fry beef into strips (I usually slice each piece in half) and sprinkle with salt and pepper. Set aside. Heat oil in a wok or large skillet over high heat. When the oil looks wavy but is not smoking (turn it down if it begins to smoke), toss in the chopped garlic and ground ginger. Stir and cook ("stir fry") for about one minute. Add the beef slices and stir fry until they are cooked through and no more pink juices are coming out (about 5 minutes). Remove the beef to a plate and add the broccoli florets. Stir fry the broccoli florets until they are slightly tender (about five minutes). The fat and juices from the beef will begin to brown on the bottom of the pan during this step. When the sauce is added next, it will deglaze the pan and bring up all of the flavor from the caramelized juices on the bottom of the pan. - Beat the egg in a medium sized bowl. Add the sliced beef, vegetable oil, and salt. Mix well and let marinate for 15 to 20 minutes while preparing the other ingredients.
- Combine everything for the sauce in a big bowl and mix well.
- When you're ready to cook, drain the extra liquid from the bowl of beef. Add the cornstarch. Stir to coat the beef, until it forms an uneven coating with a little dry cornstarch left unattached.
- Heat oil in a large nonstick skillet (or a cast iron pan) over medium high heat until hot. Add the beef and spread into a single layer in the skillet. Separate the beef pieces with a pair of tongs or chopsticks.
- Cook without touching the beef for 2 to 3 minutes, or until the bottom turns golden. Flip to brown the other side, 1 to 2 minutes. Transfer the beef to a big plate and remove the pan from the stove. Let cool for 2 to 3 minutes.
- Place the pan back onto the stove and turn to medium heat. You should still have 1 to 2 tablespoons of oil in the pan. If not, add more.
- Add the onion, pepper, and dried chili pepper. Cook and stir for 1 minute.
- Add the ginger and garlic. Stir a few times to release the fragrance.
- Stir the sauce again to dissolve the cornstarch completely. Pour into the pan. Stir and cook until it thickens a bit.
- Add back the beef pieces. Stir to coat beef with sauce.
- Transfer everything to a plate immediately and garnish with roasted sesame seeds, if using.
- Serve hot over steamed rice as a main dish.

- Freeze the steak in the freezer overnight to make for easier slicing.
- Take the steak out of the freezer 1 hour before you plan to cook it, and slice it into thin strips.
- Place the steak strips into a large bowl along with the cornstarch, soy sauce, 1 teaspoon of mirin, 1 tablespoon of chili oil, brown sugar, and salt. Mix well and let the steak marinate for 15 minutes.
- Slice the red pepper and carrots into thin matchsticks.
- In a large pan, add 1 tablespoon chili oil and turn the heat to medium-high.
- Cook the sliced red pepper and carrots for 3 to 4 minutes, then set aside.
- Cook the marinated steak in 1 tablespoon of chili oil (in batches, if need be) for 3 to 4 minutes, stirring constantly.
- Turn down the heat to medium-low and add the cooked vegetables, mix these together with all of the cooked steak strips.
- Add the beef broth, 1 teaspoon mirin, the crushed red pepper, and the Szechuan peppercorns to the pan. Cook for 5 minutes until slightly thickened.
- Serve the Szechuan beef over rice. If desired, garnish with spring onions and sesame seeds.

- Toast szechuan peppercorns in a hot dry skillet over medium heat, until fragrant, about 1-2 minutes. Crush.
- Place all ingredients in a medium bowl or small jar and whisk until well combined.
- If using as a stir-fry sauce, and you would like to thicken it, whisk in 2 teaspoons cornstarch.
- If using as a marinade, forgo the cornstarch and make sure to season what you are marinating ( chicken, tofu, beef) with salt. The marinade alone will probably not be salty enough.

- Mix the sliced beef with soy sauce, cooking wine, and cornstarch and set aside. Heat the wok and 4 tablespoons of vegetable oil. Stir-fry the garlic and jalapeno pepper until fragrant, about 1 minute. Add the beef and the sauce ingredients and stir-fry over high heat just until the beef is no longer pink on the outside, about 2 to 3 minutes. Add the green onions during the last 1 minute of cooking.

Steps:
- Gather the ingredients.
- Cut the beef julienne style, across the grain , into thin slices less than 1/4-inch thick and 2 1/2 to 3 inches long.
- Wash, peel, and julienne the carrots into thin strips about 1/8-inch thick and 2 1/2 to 3 inches long.
- Mince the ginger.
- Cut the scallion into lengths about 2 1/2 inches long, and then into thin shreds.
- In a small bowl, combine the bean sauce and chili paste or chili sauce. Set aside.
- Heat the wok on medium-high heat for at least 30 seconds. The wok is ready when you can feel the heat when holding the palm of your hand 2 to 3 inches above the wok's surface.
- Add 1 1/2 tablespoons oil to the heated wok by drizzling it down the sides. When the oil is hot, add the julienned carrots. Stir-fry for 2 minutes, stirring in the salt. (Do not brown the carrots.) Remove from the wok.
- Heat remaining 6 tablespoons of oil in the wok over medium-high to high heat. When the oil is hot, add the beef.
- Stir-fry for approximately 10 minutes, until the beef is crispy and dark brown and chewy (you will hear the beef sizzle as it dries out).
- Splash the beef with the rice wine or dry sherry during the later stages of cooking.
- Push the beef up to the sides and drain all but 2 tablespoons from the wok. Add the bean sauce and chili paste or sauce mixture, and stir-fry for a few seconds.
- Then add the ginger and scallions. Stir-fry for a few seconds, until aromatic, then return the carrots to the wok.
- Stir in the sugar and the roasted Szechuan peppercorns. Taste and adjust seasonings if desired.
- Serve hot and enjoy!

- In a liquid measuring cup, add all the ingredients for the stir fry sauce. Slice the scallions and set aside. Allow the ginger, garlic, and Szechuan peppercorns to soak while you slice the beef.
- Lay the flat iron steak on a cutting board. Cut the beef against the grain into thin slivers. Then toss the beef strips with the corn starch.
- Set a wok (or XL skillet) over high heat. Add both oils. When the oil starts to smoke, carefully toss in the beef strips and Szechuan chiles. Quickly move them around the wok to stir fry the beef on both sides.
- Once the beef is mostly cooked (2-4 minutes) stir in the sauce. Allow the sauce to simmer and thicken. Once it reaches your desired consistency, turn off the heat. Serve warm, sprinkled with chopped scallions and sesame seeds.
