8 red apples, cored
¼ cup butter
⅓ cup maple syrup
½ teaspoon ground cinnamon
⅓ teaspoon ground ginger
½ lemon, juiced
1 teaspoon vanilla extract
⅓ cup coarsely chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place apples in a 9x13 inch baking dish.
  • In a small saucepan over medium heat, combine butter, maple syrup, cinnamon, ginger, lemon juice and vanilla. Bring to a boil, and drizzle equally over apples.
  • Cover with foil, and bake in preheated oven for 20 minutes. Remove cover, and continue to bake for 10 minutes, or until apples are tender. Serve warm.

2 lb / 1kg Granny Smith Apples( green apples), weight before peeling
1 tbsp white flour
1/2 cup white sugar
2 tbsp lemon juice (or water)
1/2 tsp ground cinnamon
1 cup rolled oats / oatmeal ((quick cooking is ok))
1 cup white flour
1 cup brown sugar (loosely packed)
1/2 tsp baking powder
1 tsp cinnamon powder
125g / 1/2 cup unsalted butter, melted
Pinch of salt
Vanilla ice cream

Steps:

  • Preheat oven to 350F/180C.
  • Peel apples, then cut into 1.5cm/ 3/5" cubes.
  • Place apple in a bowl. Sprinkle with flour, sugar and cinnamon, then pour over lemon juice. Toss, then spread out evenly in a 1.5 litre/1.5 quart baking dish.
  • Place Topping ingredients in a bowl. Mix until clumps form, like wet sand (see video). Spread over the apples, crumbling with fingers if required to get that crumbly topping.
  • Bake for 30 to 40 minutes or until golden brown. Remove, cover loosely with foil to keep warm and let stand for 10 minutes before serving (let's the apple filling come together).
  • Serve warm with vanilla ice cream!

Steps:

  • Gather the ingredients.
  • Peel, de-stem, or remove seeds from the fruit, as appropriate.
  • Place the fruit, water, and sugar into a pot.
  • Cook the fruit with the sugar and water, bringing it to a boil and then lowering the heat to simmer.
  • Smash the fruit while it is cooking.
  • Simmer until the mixture has thickened to a syrupy consistency. This should take about 10 minutes.
  • Once the mixture has thickened, you can press it through a strainer to make a thin syrup.

Steps:

  • Preheat oven to 400°F. Grease a 9x13 dish.
  • Divide dough into 6 pieces. Roll each into a 7" circle (or large enough to wrap your apples).
  • In a small bowl mix 6 tablespoons butter, brown sugar and 1 teaspoon cinnamon. Divide over each core.
  • Wrap pastry around each apple using a little bit of beaten egg to seal at the top. Pinch the sides to seal and place in prepared pan.

3 tart apples (peeled and chopped into 1/2" chunks)
3/4 cup packed brown sugar
2 tablespoons butter
1 1/2 teaspoons cornstarch (dissolved in 1/3 cup water)
1 teaspoon ground cinnamon

Steps:

  • In a saucepan, combine all of the syrup ingredients except for the apples. Bring to a boil, stirring to dissolve sugar and melt butter.
  • Boil for 1 minute then reduce heat to medium and add apples. Simmer for 10 minutes, or until apples are desired tenderness. Depending on how much moisture your apples release, you may need to stir in an additional tablespoon or so of water to reach desired consistency.
  • Serve over pancakes, waffles, French toast, oatmeal or ice cream.
  • Store in an airtight container in the refrigerator for up to 3 days.

A flexible jelly recipe, that can start with any amount of apples*. Sugar is added in ratios to amount of juice and cooked until it sets. I recommend boiling no more than about 7 or 8 cups of juice at a time per batch.

1 basket crab apples
Cheesecloth (muslin or old (clean) cotton pillow case, for draining fruit)
2-3 cups White sugar
Clean jars

Steps:

  • Prepare your apples by washing, removing the stems and cutting off the blossom ends. You can leave whole or cut in half. If your apples come from a wild tree (ie. not sprayed), you may want to cut in half to make sure the inside is good. That's what I did.
  • Place prepared apples into a large stock pot and add water, just until it just peeks through the top of the apples (if any of your apples are floating, you've got too much). Bring to a boil over high heat, then reduce heat and simmer, without stirring, until apples are softened, 10-15 minutes.
  • While fruit is simmering, place a large colander over a bowl and line with tripled-up cheesecloth, a piece of muslin or a cotton pillow case.
  • When fruit is tender, pour into prepared colander and leave to drain for 2-3 hours. RESIST THE URGE TO POKE, PRESS OR SQUEEZE the pulp to get more juice. It will make for a cloudy jelly. Just let gravity do it's work and discard the pulp when draining stops.
  • Measure out the amount of juice and make note of how many cups of juice you have (I got 3 cups of juice out of this basket of apples). Add the juice to a large pot and bring to a boil over high heat. Reduce heat to medium and simmer, stirring, for about 20 minutes, skimming off any foam, as necessary.
  • Meanwhile, measure out sugar. You'll need 3/4 cup of sugar for every cup of apple juice that you had. (So if you had 4 cups of juice, you'll need 3 cups of sugar). Place the sugar in a stainless steel or oven-proof bowl (or on a baking sheet, alternately) and pop into a 300° oven anywhere from 5-15 minutes, stirring it around a couple of times (time in the oven will vary depending on how much sugar/oven etc., so WATCH CLOSELY. It should be hot to the touch, but not so hot it starts to melt around the edges.).
  • When sugar is hot, remove from oven. Remove pot with apple juice from the heat. Stir in the hot sugar just until it is dissolved. Place the pot back on the heat and WITHOUT STIRRING, boil for 5-8 minutes, until jelly reaches 220° on a thermometer or passes the cold plate test*.
  • Ladle jelly into clean jars and leave with lids off until almost cool (without moving jars around). When jelly is almost cool, seal with lids. Let stand in a sunny window, undisturbed for 24 hrs. Wax and store.
