EASY CHEESY NACHOS
There's no need to brown ground beef when fixing this satisfying snack. Laura Jirasek of White Lake, Michigan tops crunchy chips with warm canned chili and melted cheese, then sprinkles it all with chopped tomato and onion for fresh flavor and color.

- Divide chips among six plates; set aside. In a saucepan, warm chili until heated through. , Meanwhile, in another saucepan, heat cheese over medium-low heat until melted, stirring frequently. Spoon chili over chips; drizzle with cheese. Sprinkle with onions and tomato.

SYRIAN CHEESE SANDWICHES
This sandwich goes waaay over the top! From a local restaurant which sadly does not offer this sandwich on their menu anymore. The restaurant did not skimp on the cheese either. I think the restaurant's manager said they lost their local supplier. It's also been a long time since I tried this that I don't remember if the restaurant added herbs to the sandwich (if they did it was a light sprinkle of dried parsley or oregano). I, however, and thankfully I might add, found Syrian cheese recently at our local Middle Eastern store. I can't tell you the exact type of cheese it is other than describing it as hard/semi-hard, strongly flavored, white and salty. It could very well have been jibne baida which is what was used for this recipe. If anyone out there knows and is more familiar with Syrian cheese, could you please set me straight? Yes, three ingredients-ok, technically four!

Steps:
- Set oven to BROIL.
- Cut pita pockets in half.
- Divide the cheese and stuff in the pockets. Drizzle extra virgin olive oil on the cheese and pita.
- BROIL just until pita starts to brown and cheese barely begins to melt. *WATCH* broiling carefully!
- If desired, sprinkle sandwich with parsley or oregano.

- Fill a bowl with two inches of water. Stir in salt. To test salinity, place a raw egg in the water. It should float enough that just a dime sized piece of the egg floats above the water. Fill with two large cups of ice and set aside.
- Break cheese into one inch chunks and place on a microwave safe plate. Heat for 60-90 seconds, just until the cheese has melted down. Remove from microwave and drain off excess liquid. Season with mahleb and black caraway seeds. Fold seasoning in until well blended. Return to microwave and heat on medium heat for another 90 second to 2 minutes until just melted into a blog on the plate. Remove and drain off excess liquid.
- Pick up cheese in one lump and create a whole int he middle. Pull it with both hand so that it's stretches apart. Fold it in and continue pulling apart. While the cheese is warm it will pull very easy. Continue until you can just pull it to shoulder width without a lot of tension. Twist each end in opposite directions for form a knot. Place in ice water bath.
- If doing more than one knot, repeat until all knots are done and placed in water bath. Add more ice to the bath, cover tightly and place in the fridge at least 3 hours and up to overnight. Remove and place each knot in separate plastic baggies.
