16 ounces no sugar added Italian dressing (recommended: Paul Newman's)
1 cup fresh raspberries
1/4 cup sugar substitute (recommended: Splenda)
1 head radicchio lettuce, washed
1 bag fancy lettuce mix with herbs
2 Roma tomatoes, each cut into 4 wedges, optional
8 ounces hearts of palm, whole sticks
1 tablespoon minced red bell pepper
1 tablespoon minced green bell pepper

Steps:

  • To a blender, add the Italian dressing, 1/2 of the raspberries, and the sugar substitute, and blend for a minute until smooth.
  • Line a bowl or plate with whole radicchio leaves and pile high the lettuce mix in the center. Cut a tomato into 4 wedges and place around the plate in a starburst fashion with a heart of palm stick in between each. Sprinkle with minced bell peppers. Pour raspberry vinaigrette over the salad and top with a few fresh raspberries. Serve.

This is a Caribbean island version of sweet and sour, and a very nice dish for a hot summer night. The contrasting flavors of the salad and the fish go off like fireworks in your mouth.

1 tablespoon olive oil
4 (8 ounce) swordfish steaks
2 ripe mangoes - peeled, pitted, and sliced
1 (10 ounce) bag baby spinach
8 cherry tomatoes, quartered
8 kumquats, trimmed and quartered lengthwise
⅓ cup extra virgin olive oil
⅓ cup balsamic vinegar

Steps:

  • Preheat an outdoor grill for medium-high heat. Lightly oil grill grate, and place about 4 inches from heat source.
  • Lightly brush the swordfish steaks and mango slices with 1 tablespoon olive oil.
  • Cook the swordfish steaks on preheated grill until lightly browned on both sides, turning once, 5 to 7 minutes per side. After turning, arrange mangos slices over the steaks, and cook 5 minutes more.
  • Toss the spinach, tomatoes, and kumquats together in a bowl. Whisk together 1/3 cup olive oil and balsamic vinegar in a small bowl until well blended. Pour over the spinach mixture and toss to coat evenly. To serve, divide the salad among 4 serving plates, and top with swordfish and mangoes.

It does not matter which type of radicchio you use - the common tight round head, clusters of white stems with burgundy leaves, or maroon-trimmed endives to name a few - they all deliver some bitterness. The vinaigrette here is bolstered with anchovies and capers.

2 anchovies in oil, drained
2 tablespoons white wine vinegar or Champagne vinegar
6 tablespoons fragrant extra-virgin olive oil
1 tablespoon capers in brine or vinegar, drained (do not use salt-packed)
Ground black pepper
1/3 cup finely chopped red onion
1 ripe but firm chilled avocado, peeled and diced (optional)
12 to 14 ounces radicchio (5 red-leaf endives, 3 long Treviso or 1 large round radicchio di Chioggia, or a mixture), cored and cut in 1/2-inch-wide slivers

Steps:

  • Mash anchovies in a small bowl. Mix in vinegar until well blended. Whisk in oil, fold in capers and season with pepper.
  • Place onions in a salad bowl. Add dressing and mix. Fold in avocado, if using. Add radicchio. Gently toss salad. Divide among individual plates or serve at the table.

3/4 pound swordfish, in one piece
1/3 cup cider vinegar
1 large clove garlic, minced
1/2 teaspoon salt
1/2 tablespoon freshly ground black pepper
1/2 teaspoon sugar
1/2 avocado, peeled
2/3 cup olive oil
3 green onions, white and light green parts only, finely chopped
1 small white onion, sliced paper thin and, if desired, soaked in ice water for 2 hours
3 cups spinach leaves, well washed
1 head butter lettuce, outer leaves discarded and inner leaves torn into bitesized pieces
1 pint cherry tomatoes, halved

Steps:

  • Prepare a smoker for hot smoking by soaking and then igniting 3 large hardwood chunks, and regulating the temperature so that it will remain between 170 degrees and 250 degrees. Smoke the fish for 1 to 1 1/4 hours, or until the flesh is flaky and cooked through. Shred the flesh and refrigerate until ready to serve.
  • In a blender, combine the vinegar, garlic, salt, pepper, sugar, avocado, and olive oil and blend for 1 minute, until completely smooth and emulsified. Transfer to a glass bowl, stir in the green onions, and taste for seasoning. Cover with plastic wrap and refrigerate for 2 hours.
  • When ready to serve, drain the onion slices, pat them dry, and separate them into rings. In a large mixing bowl, toss the spinach, lettuce, and tomatoes, together gently. Pour on enough dressing to coat, and toss again just to mix. Place a mound of the salad on each of 6 plates and scatter about 2 ounces of the shredded swordfish over the salad. Drape a few onion rings over the top and serve.

In this recipe, the swordfish steaks are split in half and pounded thin like a traditional schnitzel. It is then dredged in a breadcrumb crust and pan fried, resulting in a crispy and tender fish that is served with a bitter and bright side salad for a satisfying weeknight meal.

1/2 red onion, thinly sliced
2 8-ounce swordfish steaks (1 to 1 1/2 inches thick)
1/4 cup all-purpose flour
2 large eggs, lightly beaten
3/4 cup breadcrumbs
Kosher salt and freshly ground pepper
4 slices thick-cut bacon
3 tablespoons extra-virgin olive oil, plus more as needed
1 head radicchio, torn into large pieces
1 small head butter lettuce, torn
2 tablespoons red wine vinegar
1 tablespoon spicy brown or Dijon mustard

Steps:

  • Put the red onion in a small bowl and cover with ice water; set aside. Using a sharp knife, slice each swordfish steak in half horizontally to make a total of 4 thin swordfish steaks. Place the fish between 2 sheets of plastic wrap and gently pound to 1/4 to 1/2 inch thick with a meat mallet or heavy skillet.
  • Divide the flour, eggs and breadcrumbs among 3 shallow bowls. Season the breadcrumbs with 1 teaspoon salt and a few grinds of pepper. Dredge the fish in the flour, shaking off any excess. Dip in the eggs, then coat in the breadcrumbs. Transfer to a plate.
  • Cook the bacon in a nonstick skillet over medium-high heat, flipping, until crisp, 6 to 8 minutes. Remove to a paper towel-lined plate. Spoon 2 tablespoons of the bacon fat into a small bowl.
  • Add the olive oil to the skillet and return to medium heat. Add 2 swordfish steaks and cook until crisp, 2 to 3 minutes per side. Remove to a rack set on a baking sheet. Add more olive oil to the skillet if needed and repeat with the remaining 2 swordfish steaks.
  • Combine the radicchio and butter lettuce in a large bowl. Crumble the bacon into the salad. Drain the red onion, pat dry and add to the salad. Whisk the vinegar and mustard with the reserved bacon fat; toss with the salad. Divide the swordfish and salad among plates.

A bright punchy sauce with sweet tender fish, this is a fast and delicious weeknight meal but special enough to serve to guests. This is also delicious with grilled swordfish.

1/2 cup olive oil
1/4 cup lemon juice
1 shallot (chopped fine)
1/4 cup parsley (chopped fine)
4 sundried tomatoes (drained and chopped, leave out if nightshade free)
1/4 cup capers (drained)
salt and pepper to taste
1 tablespoon avocado oil
2 pounds swordfish steaks (at least 3/4 inch thick 4, 8 ounce filets, skin removed)
Salt and pepper (to taste)

Steps:

  • Prepare the sauce first and let it cool while you cook the swordfish. Heat the olive oil in a small saucepan over medium high heat. When the oil is hot, add the shallots and cook until softened, about 5-10 minutes.
  • Turn off the heat and add parsley, lemon juice, tomato, and capers.
  • Adjust seasoning and reserve sauce.
  • Place the swordfish on paper towels and dry thoroughly.
  • Heat a tablespoon of avocado oil in a large nonstick pan and when the oil is hot and shimmering, salt the fish on both sides then place them in the pan and cook, turning often until golden brown on the outside and 130ºF when tested with a thermometer (they will continue to cook off heat). This can take 6-10 minutes, depending on thickness. Rest for 5-10 minutes before serving with the sauce.
