These mini-apple pies are a sure hit and a perfect use for apples in the fall. They look great on a cookie plate and taste great! If any apple mixture remains, it can be served warm over vanilla ice cream!

¼ cup butter
4 apples, peeled and diced into 1/4-inch cubes
½ cup brown sugar
¼ cup white sugar
1 ½ teaspoons lemon juice
1 ½ teaspoons ground cinnamon
½ teaspoon vanilla extract
¼ teaspoon salt
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
⅛ teaspoon ground cloves
2 tablespoons water
1 tablespoon cornstarch
4 sheets pie crust pastries
1 teaspoon all-purpose flour
¾ cup confectioners' sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 ½ tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a saucepan over medium heat. Add apples; toss until coated with butter. Stir in brown sugar, white sugar, lemon juice, 1 1/2 teaspoons cinnamon, 1/2 teaspoon vanilla extract, salt, nutmeg, allspice, and cloves; cook and stir until apples have softened and sugars have melted, about 5 minutes. Bring to a boil.
  • Combine water and cornstarch in a bowl. Stir cornstarch mixture into the apple mixture; cook and stir until apple mixture is thickened, about 5 minutes. Remove from heat; cool completely, about 20 minutes.
  • Roll out 1 sheet of pie crust on a work surface with a rolling pin; cover with half of the cooled apple mixture. Roll out a second sheet of pie crust with a rolling pin; slice into 1/2-inch wide strips with a sharp knife. Weave pie crust strips together over apple mixture to create a lattice top.
  • Flour a round cookie cutter or drinking glass. Press cookie cutter through dough to create 12 round pies. Transfer to a baking sheet.
  • Bake in the preheated oven until crust is cooked through a golden brown, about 20 minutes. Transfer to a wire rack to cool, about 10 minutes.
  • Repeat with remaining pie crusts and apple mixture; place on a second baking sheet. Bake in the oven until crust is cooked through a golden brown, about 20 minutes.
  • Combine confectioners' sugar and 1 teaspoon cinnamon in a mixing bowl; add 1 teaspoon vanilla extract. Stir in milk slowly until desired consistency is reached; drizzle over cooled pies.

2 cups sugar
2 1/2 sticks (1 1/4 cups) butter, softened
2 large eggs
1 tablespoon vanilla extract
2 1/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon kosher salt
1 cup good semisweet chocolate chips, plus extra for topping if desired
1 cup milk chocolate chips, plus extra for topping if desired
1/2 cup white chocolate chips, plus extra for topping if desired
16 ounces semisweet chocolate

Steps:

  • Preheat the oven to 350 degrees F.
  • Using a mixer, cream the sugar and butter until fluffy, scraping the sides once. Add the eggs one at a time, mixing after each addition. Mix in the vanilla.
  • Sift together the flour, cocoa, baking soda and salt in a bowl, then add in batches to the mixer, mixing until just combined after each addition. Gently mix in the semisweet, milk and white chocolate chips.
  • Using a cookie scoop, add generous 1-tablespoon portions of dough to a baking sheet (about 12 portions). Repeat with the remaining dough and additional baking sheets. Dot the top of each cookie with 2 to 3 chocolate chips if you'd like them to really show up on top. Bake until the cookies are barely done and are still soft and chewy, 9 to 11 minutes. Don't overbake! Let cool on a baking rack.
  • Melt the semisweet chocolate in a bowl over a pan of simmering water.
  • Dip the cookies one by one into the melted chocolate to coat, then transfer to parchment-lined baking sheets to set.

1 ⅔ cups (208 grams) cake flour
1 ⅔ cups (208 grams) bread flour
1 ¼ teaspoons baking soda
1 ½ teaspoons baking powder
1 ¼ cups (284g) unsalted butter, (room temperature)
1 ½ teaspoons coarse salt
1 cup (200g) granulated sugar
1 ¼ cups (10 ounces or 225g) packed light brown sugar
2 large eggs, (room temperature)
2 teaspoons McCormick vanilla extract
16 ounces (about 3 cups) chocolate chips or chunks

Steps:

  • Sift flours, baking soda, baking powder and salt into a bowl and set aside.
  • Using a mixer with a paddle attachment, cream butter and sugars until light and fluffy, 3 to 5 minutes.
  • Reduce speed and add eggs one at a time, then add vanilla.
  • Slowly add dry ingredients, mixing until just combined.
  • Fold in chocolate chips by hand. Refrigerate dough for24-36 hours.
  • DO NOT SKIP REFRIGERATION.
  • When ready to bake, preheat oven to 350°F. Remove dough from refrigerator and allow to come to room temperature.
  • Drop spoonfuls (2-3 tablespoons) of dough onto baking sheet. Bake for 10-12 minutes.
  • Cool on wire rack.

1 package devil's food cake mix (regular size)
1/4 cup butter, softened
2 large eggs
1 jar (7 ounces) marshmallow creme
4 ounces cream cheese, softened

Steps:

  • In a large bowl, beat cake mix and butter until well combined. Beat in eggs. Shape into 1-in. balls. Place 2 in. apart on ungreased baking sheets. , Bake at 350° for 7-9 minutes or until tops are cracked. Cool for 2 minutes before removing to wire racks to cool completely., In a large bowl, beat marshmallow creme and cream cheese until blended (do not overbeat). Spread filling on the bottoms of half of the cookies. Top with remaining cookies. Chill for 1-2 hours or until filling is set.

Save your leftover pie crust and make them into pie crust cookies. Or just make a whole new batch to satisfy your pie crust craving. These little cookies are buttery, not too sweet, and have a light sprinkling of cinnamon sugar.

Number Of Ingredients 9

1 1/4 cup all-purpose flour
1/4 cup granulated sugar
1/4 teaspoon kosher salt
1 stick unsalted butter - cold and cubed
3 tablespoon cold water
1 large egg
1 tablespoon water (or milk)
1 tablespoon granulated sugar
1/4 teaspoon cinnamon

Steps:

  • Add flour, sugar and salt in the food processor fitted with the dough blade and pulse a few times to mix.
  • Cube the butter and add to the flour mixture. Make sure butter is cold. Pulse several times until butter is about pea size and mixture resembles coarse crumbs.
  • Add cold water, 1 tablespoon at a time, and pulse until the dough starts to pull together.
  • Turn the dough out on a lightly floured board and shape into a disk. Wrap in plastic and rest in the refrigerator for an hour.
  • Roll the dough out to about 1/8" thick. Use a fluted edge or round cookie cutter about 2" or smaller and cut out the cookies. Reshape the left over dough and roll out to 1/8" again and keeping cutting out cookies until finish.
  • (Optional) Punch holes around the perimeters of the cookies with a toothpick.
  • Place the cookies on a parchment paper lined baking sheet and place the baking sheet in the freezer or refrigerator if your freezer is not big enough.
  • Preheat the oven to 400°F.
  • Beat 1 egg with 1 tablespoon of water or milk for egg wash, mix 1 tablespoon of sugar with 1/4 teaspoon of cinnamon for the sugar topping.
  • When the oven is ready, remove baking sheet from freezer or refrigerator, brush the top of the cookies with egg wash and sprinkle generously with cinnamon sugar.
  • Bake for 12 - 14 minutes until golden brown.
  • Remove from the oven, let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
