SWISS CHICKEN & BROCCOLI CASSEROLE
My brother is a bachelor and even though he cooks for just one, he makes awesome full course meals. He got this recipe from a friend and I had to have it! I have taken this to potluck dinners and have been asked for the recipe. Simple comfort food.

Steps:
- Cook pasta according to package.Drain well and butter lightly to prevent sticking. Set aside.
- Cut chicken into bite size pieces.
- In large frying pan, heat 6 tbsp butter. Add onions and chicken pieces. Cook just until turning white, turn and cook other side.
- Sprinkle with lemon juice. Add mushrooms and cook over medium heat for about six minutes, turning once. Remove chicken and mushrooms and keep warm.
- To the juices left in the frying pan, add flour. Cook and stir about 2 minutes.
- Using whisk, stir in milk and bring to a boil. Lower heat and simmer to thicken.
- Add spices and half of the cheese. Simmer gently for 5 minutes.
- Using the same pot that you cooked your noodles in, add the cream sauce and gently stir to coat noodles. Add broccoli, chicken and mushrooms. Fold into the noodles gently.
- Transfer to a greased 2L baking pan and top with remainder of Swiss cheese.
- Bake covered at 350F 35-40 minutes.

CREAMY CHICKEN CORDON BLEU CASSEROLE
This is a second version of another member's yummy casserole. It has all the creamy and wonderful flavor of chicken cordon bleu with a little of the fat and hassle removed.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch casserole dish.
- Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and transfer noodles to the prepared casserole dish; top with chicken, ham, and Swiss cheese.
- Mix cream of chicken soup, milk, and sour cream together in a bowl; spoon soup mixture over noodle mixture.
- Melt butter in a skillet over medium heat; cook and stir bread crumbs and Parmesan cheese in the melted butter until crumbs are coated with butter and cheese, 2 to 3 minutes. Sprinkle bread crumb mixture over casserole.
- Bake in the preheated oven until casserole is bubbling and lightly browned, about 30 minutes. Allow casserole to cool for 10 minutes before serving.

SWISS BROCCOLI BAKE
Broccoli just isn't fattening by itself. But luckily, in this recipe, we add some heavy cream, butter and lots of Swiss cheese. ;) Delicious!!

- Preheat oven to 325. Lightly spray a 2 quart baking dish with nonstick cooking spray.
- In a saucepan, cook/steam broccoli until crisp-tender; drain and set aside.
- In another saucepan, melt butter; add flour. Cook and stir until thickened and bubbly. Stir in onion. Gradually add cream; bring to a boil and cook for 1 minute.
- Remove from the heat; stir in cheese, eggs, pepper and the cooked broccoli. Stir to combine.
- Pour into the prepared baking dish. Bake, uncovered, at 325 for 30 minutes.

This recipe was handed down for many years at a Nursing Home I used to work at. We all would get together and have a pot luck lunch once a month. My family loves this dish also. - 1. Thoroughly combine soup and milk.
- 2. Arrange broccoli in a 8 x 12 inch baking dish
- 3. Layer eggs, 1/2 cup Frensh Fried Onions, Soup mixture and cheese over broccoli
- 4. Bake at 350 degrees for 25 minutes
- 5. Remove from oven and top with remaining onions.
- 6. Place back into oven and bake 5 minutes longer
- 7. Serve it hot with any of your favorite meals.
SWISS CHICKEN & BROCCOLI RABE CASSEROLE

- 1. Season the chicken with salt and poultry seasoning. Sprat a casserole dish with cooking spray, Preheat oven 375 degrees.
- 2. Place the broccoli rabe on bottom of dish. Top with the chicken. Mix the soup, half and half, and curry powder. Pour over the chicken. Add the cheese on top.
- 3. Bake about 30 minutes until chicken is done and cheese is bubbly
- 4. Sprinkle with sweet paprika for serving
