1-1/2 pounds boneless beef round steak (1/2 inch thick)
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons canola oil
2 medium carrots, chopped
1 medium onion, chopped
1 cup chopped green pepper
3/4 cup chopped celery
1 teaspoon cornstarch
1/2 cup cold water
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 teaspoon prepared horseradish

Steps:

  • Cut steak into serving-size pieces. Combine the flour, salt and pepper; sprinkle over both sides of steak. In a pressure cooker, brown steak on both sides in oil; drain. Add carrots, onion, green pepper and celery. , In a bowl, combine cornstarch and water until smooth; add soup and horseradish. Pour over vegetables., Close cover securely; place pressure regulator on vent pipe. Bring cooker to fully pressure over high heat. Reduce heat to medium and cook for 12 minutes. (Pressure regulator should maintain a slow steady rocking motion or release of steam; adjust heat if needed.) Remove from the heat. Immediately cool according to manufacturer's directions until pressure is completely reduced.

1.5 2 lbs. Round steak cut to chunk size or desired.
1/2 Sliced Sweet onion
2 Bell peppers, green, orange or yellow Sliced
28 oz. Tomato puree
4 tbsp Sugar
1 clove garlic
3 oz. Tomato paste
butter for saute
1/4 tsp basil
Pepper to taste
1 cup Mozzarella optional
Grated Parmesan cheese for topping

Steps:

  • Set Pressure Cooker on Saute mode. Add butter let melt half way. Add cut up round steak and saute on both sides until lightly brown. Remove from Pot and set aside. DO NOT drain the butter and drippings from the meat.
  • Add tomato puree, and one can of water. Add basil, garlic, peppers and onions
  • Set Pot on High Pressure 10 minutes. YES, peppers and all. They will not disappear, I promise. Quick release.
  • Add meat back to the pot and tomato paste, and 1/4 cup water. Set pot on High Pressure for 10 minutes. Let natural release.
  • Serve over rice, or noodles of choice, top with mozzarella cheese and parm. ENJOY. NOTE: You will have sauce left over that you can use the next day for another recipe, or freeze for another time.

4 Tbs Flour
1 tsp Lawreys Season Salt
1/2 tsp Pepper
3 Tbs Olive Oil
1 1 lb Can Stewed Tomatoes
1 Celery Stalk
1/2 Cup Onion
1/2 Green Bell Pepper
1 Red Bell Pepper
1/2 Cup Beef Broth
1/2 Cup Cheddar Cheese *optional

Steps:

  • In a Ziploc bag, combine your flour, seasoning salt, and pepper.
  • Cut your meat into smaller pieces and place the steak pieces into the bag with the flour.
  • Close and shake the bag well to coat all of the meat pieces.
  • Set your instant pot to saute and wait until it reads "hot"
  • Pour 3 tbs of cooking oil into the pressure cooker and make sure that it remains "hot"
  • Now place your steak pieces into the hot oil and allow it to cook for 2-3 minutes per side
  • When the steak is brown, remove the pieces and turn the instant pot off.
  • Pour your can stewed tomatoes and your beef broth into the pressure cooker and scrape everything that is stuck to the sides and bottom. This is called deglazing and is a necessary step to remove all of the stuck pieces. Thankfully, they should all come up easily with a wooden spoon or scraper.
  • Now add you steak pieces back into the pressure cooker
  • Dice your celery, onion and slice your bell pepper
  • Add the veggies to the pressure cooker
  • Place the lid on your pressure cooker and set it to cook on pressure cook manual high for 25 minutes with a 10-minute natural release.
  • You can serve this Swiss Steak over rice or with potatoes if you choose.
  • Melt cheese on top *optional

2 lb beef round steak

1 can(s) mushroom soup
1 can(s) tomato soup
1 1/2 can(s) water

Steps:

  • 1. Mix flour,salt, pepper & any additional seasonings to your taste. Dredge meat, cut in portion size pieces, in the flour mixture.
  • 2. Put enough oil in the bottom pressure cooker and heat. Add floured meat pieces and brown on both sides. Drain if there seems to be an excess amount of oil left after browning, but usually not necessary, and return meat to cooker.
  • 3. Mix mushroom soup and tomato soup with the water in a bowl. Whisk well to combine and make smooth. Pour over the meat that is in the cooker.
  • 4. Put the pressure cooker on and let seal. Cook for 20 minutes while under pressure. Remove from heat and let pressure drop completely before trying to open lid.
  • 5. The soups should have thickened during the cooking time to make a nice gravy to put over the meat and potatoes - which I cook while the meat is in the pressure cooker.

1 ½ pounds bottom round steak, 1 inch thick and trimmed of fat
salt and freshly ground black pepper to taste
¼ cup all-purpose flour
2 tablespoons avocado oil, divided, or as needed
1 medium onion, chopped
½ cup carrot, chopped
½ cup chopped celery
1 green bell pepper, chopped
2 cloves garlic, finely chopped
¼ cup Merlot wine
2 ¾ cups canned chopped Italian-style tomatoes in juice
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon oregano
1 teaspoon paprika

Steps:

  • Dry steak well with paper towels and cut into four 4-inch pieces. Season with salt and pepper.
  • Place flour into a shallow bowl. Dredge steak pieces in flour, shaking off excess.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Once the pot is hot, add 1 tablespoon avocado oil. Brown the steak in batches, so you don't crowd the pot, 2 minutes per side. Transfer browned meat to a warm plate and set aside.
  • Add 1 tablespoon of avocado oil to the pot and cook onion, carrot, celery, and bell pepper until onions are soft and translucent, 3 to 4 minutes. Stir in garlic and cook until fragrant, about 1 minute. Deglaze the pot with Merlot. Mix in tomatoes, Worcestershire sauce, 1 teaspoon salt, oregano, and paprika. Return steak to the pot and push down into the tomato mixture.
  • Close and lock the lid. Select manual pressure according to manufacturer's instructions; set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
  • Allow pressure to release naturally according to manufacturer's instructions for 5 minutes. Carefully open the valve to release the remaining pressure, about 5 minutes more. Unlock and remove the lid.

2 pounds bottom round steak, trimmed and sliced into large squares
2 teaspoons garlic powder
1 teaspoon sea salt
1 teaspoon ground black pepper
2 tablespoons corn starch
2 tablespoons vegetable oil
1 medium white or yellow onion, peeled and diced
2 bell peppers, seeded and diced
1 cup low sodium beef broth
1/2 cup crushed tomatoes

Steps:

  • Season the sliced round steak on both sides with garlic powder, sea salt and black pepper
  • Lightly dredge the meat on both sides with the corn starch
  • Press SAUTE on the Instant Pot, and when it reads Hot, add the oil. Working in batches, brown the round steak on both sides, then place on a plate, and cover with foil until all of the steak in browned
  • Add the diced onions and peppers to the pot, and cook until slightly soft, stirring frequently
  • Add some of the beef broth, and stir with spatula or wooden spoon to deglaze the pot and release any browned bits on the bottom of the pot
  • Hit CANCEL, then add the round steak back to the pot. Pour remaining beef broth over and around steak, and top with the crushed tomatoes. Don't stir!
  • Place lid on pot, turn valve to Sealing position, and hit PRESSURE COOK for 30 minutes. After 30 minute cook time, allow a 10 minute natural release, then hit CANCEL and turn valve to Venting position to release remaining pressure
  • When pin drops, open lid, and remove steak to a large casserole dish or platter. For thicker gravy, hit SAUTE and boil to reduce sauce. Or, mix 1 tablespoon corn starch with 1 tablespoon cold water until smooth, then stir boiling sauce to thicken even more
  • Pour sauce over steak, and serve

2 Tablespoon olive oil
2-3 pounds round steak (About six ½" round steaks)
¼ cup all purpose flour
1 teaspoon fine grind sea salt
½ teaspoon black pepper
½ teaspoon onion powder
½ teaspoon garlic powder
¼ cup beef broth
14.5 ounces Fire Roasted Tomatoes
1 Tablespoon Worcestershire sauce
1 Tablespoon red wine vinegar
1 Onion (any kind)
2 carrots
¼ cup tomato paste
1½ pounds potatoes (combination of Russet and Yukon gold, whole and not peeled.)
1 bulb garlic
3 Tablespoon butter
1-2 Tablespoons heavy cream
salt and pepper to taste
6-8 carrots
salt and pepper to taste

Steps:

  • Pound or tenderize the round steak if desired. This is not necessary when using the pressure cooker. Combine flour, salt, black pepper, onion & garlic powder. Dredge the steak
  • Prepare and measure all the other ingredients.
  • Turn the Ninja Foodi or Instant Pot on sear/sauté on high. Add 2 Tablespoons of olive oil or oil of choice.
  • When the oil is hot, add 3-4 of the flour coated round steak to the bottom to sear. Let it cook about 3 minutes and flip and cook an additional 2 minutes. If you are making 3 pounds of round steak you may need to cook in batches.
  • Deglaze the inner pot with the beef broth and make sure to scrape the bottom to loosen any brown bits that may be stuck on the bottom. Add the can of fire roasted tomatoes with the juice, the Worcestershire sauce and red wine vinegar. Add the steak back in if you removed it. Add the onion and 2 carrots. If you are only cooking the Swiss steak without potatoes and additional carrots, put the pressure lid on and set the time to 25 minutes. When the time is up, allow the pot to natural release for 10 minutes and then release the remaining pressure and remove the lid. Thicken the sauce with tomato paste if desired. Serve & Enjoy! If you are making the potatoes and extra carrots proceed to the next step.
  • Place the reversible rack on low or your trivet on top of the steak. Place the whole and unpeeled potatoes on the rack. Cut the top off of a bulb of garlic and set it on the rack. Put the pressure lid on and turn the valve to seal. Set the pressure on high for 13 minutes. When the time is up do an immediate release.
  • Open the lid and add in the extra carrots. Put the pressure lid on and turn the valve to seal. Set the pressure on high for 5-7 minutes. 7 minutes will be a softer carrot. When the time is up, allow the pot to natural release for 10 minutes. Release the remaining pressure and open the lid.
  • Remove the whole potatoes and place them in a bowl for mashing. Remove the garlic and carrots and set aside. Remove the rack and add in the tomato paste for thickening. Turn the sear/sauté on high if needed to reduce the sauce.
  • Squeeze the garlic cloves out of the bulb of garlic into the bowl of potatoes. Add the butter. Smash them and add cream if desired. Salt and pepper to taste.
  • Salt and pepper the carrots. Serve & Enjoy!
