STEAK AND DUMPLINGS

Steak and Dumplings image

This is a great recipe my Mom used to make. I believe it's a Depression-era recipe since it's made with round steak and flour dumplings. The trick is to let it simmer for a few hours to get the meat fork-tender. From the kitchen of Maureen Dutcher. Enjoy!

Time 2h5m

Yield 6

Number Of Ingredients 14

2 tablespoons vegetable oil
1 ½ pounds beef round steak, cut into 1/4-inch thick strips
1 tablespoon garlic powder
1 teaspoon salt, or to taste
1 teaspoon ground black pepper, or to taste
1 (14 ounce) can beef broth
½ onion, diced
1 cup chopped carrot
3 cubes beef bouillon
2 cups all-purpose flour
1 teaspoon salt
¼ teaspoon baking powder
2 eggs, beaten
¾ cup water, or as needed

Steps:

  • Heat vegetable oil in a skillet over medium heat; place the strips of steak into the hot oil. Sprinkle with garlic powder, salt, and black pepper to taste. Cook, stirring frequently, until the steak pieces are browned, 10 to 15 minutes. Pour in the beef broth, and use a spoon to scrape up and dissolve any browned flavor bits from the bottom of the skillet. Stir in onion and carrot; drop in the beef bouillon cubes. Bring the mixture to a simmer, and reduce heat to medium-low. Simmer until steak strips are tender, at least 1 1/2 hours. Stir occasionally.
  • About 10 minutes before serving time, bring a large pot of lightly salted water to a boil over medium heat. Mix together the flour, 1 teaspoon of salt, and baking powder in a bowl; stir in eggs and water, 1 tablespoon at a time, to make a thick batter. Drop tablespoon-sized blobs of batter into the boiling water, and stir; dumplings will sink at first, but then rise to the top. Let the dumplings simmer for about 4 minutes after they float to the surface of the water.
  • With a slotted spoon, scoop out the dumplings into a serving bowl. Serve topped with the steak strips and gravy.

Categories     Steak

Time 1h45m

Yield 4-6 serving(s)

Number Of Ingredients 7

2 lbs cube steaks
salt and pepper, to taste
1 cup all-purpose flour
1/2 cup vegetable oil
1 cup diced onion
3 cups beef stock or 3 cups bouillon
1 tablespoon Worcestershire sauce

Steps:

  • Cut each steak into the desired serving size, if necessary. Salt and pepper each steak lightly and dredge in flour. Shake off excess. Set aside.
  • If you don't have a skillet with ovenproof handles, you can use a Pyrex dish or an earthenware pan with a cover for the oven. Heat a heavy 12-inch skillet (cast iron, if you have one) with a tight-fitting lid over medium heat. Add the vegetable oil. Brown the cube steaks on both sides and set aside.
  • Pour off all of the oil except 1/3 cup. Add 1/3 cup of flour to the oil and stir. Allow the mixture ot brown over medium-low heat and stir frequently to prevent it from burning. When the mixture is about the color of peanut butter, add the onion. Stir and allow the onion to cook for about 1 minute.
  • Slowly add the beef stock, stirring constantly. Add the Wercestershire sauce and simmer for 5-10 minutes.
  • Return the cube steaks to the pan, cover, and bake in a 275 degree oven for one hour.
  • Serve with mashed potatoes and your favorite vegetable.

One of my favorite beef dishes, I make this one very often at my house. Although the recipe calls for steak, you can use any cut of beef that you prefer, I sometimes cut up a small roast for this. I have even added 2 tbsp grated Parmesan cheese to the cream mixture.

  • Season on both sides with salt and pepper. Dredge the steaks in the flour (I season the flour too). Dredge the slices on both sides once more and set aside.
  • Add enough of the oil to just cover the bottom of a skillet set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
  • Remove the last steaks from the skillet and add the onions, green bell pepper, garlic, and celery. Saute for 1 to 2 minutes. Add the tomatoes, tomato paste, bay leaf, paprika, oregano, thyme, Worcestershire sauce and beef broth and stir to combine. Return the meat to the skillet, spoon the sauce over the steaks. Cover and let simmer until the meat is tender and falling apart, 35-45 minutes. Remove bay leaf before serving and top with fresh parsley.
