SWISS STEAK MOZZARELLA
Delicious! I received this recipe from my mother about 25 years ago. It has always been a family favorite.

Steps:
- Cut meat into serving size pieces; coat with flour.
- Melt margarine in skillet.
- Brown meat slowly on both sides.
- Put into a 9x13 inch baking dish.
- Combine tomatoes, soup and salt.
- Pour over meat.
- Bake covered at 350 degrees 1 hour, or until meat is tender.
- Remove cover and sprinkle with cheese.
- Bake an additional 5 minutes or until cheese is melted.

Steps:
- Stir flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle pieces of steak with flour mixture and pound the flour mixture into the meat with a meat mallet or the edge of a sturdy plate.
- Heat vegetable oil in a large skillet over medium heat; cook the floured beef in the hot oil until browned on both sides, about 15 minutes. Reduce heat to low, pour in water, cover skillet, and simmer beef until tender, about 1 hour. Add more water to the skillet if needed to prevent burning.
- Mix diced tomatoes, green bell pepper, onion powder, 1/2 teaspoon salt, and 1/8 teaspoon black pepper in a bowl. Pour tomato mixture over beef, bring to a simmer, and cook until sauce has thickened, about 30 more minutes.

Steps:
- Rub steaks with salt and pepper and roll in flour.
- Fry in large skillet in butter at medium heat until lightly browned. Push steaks to side of pan.
- Add a little more butter on other side and add onions and garlic. Cook until slightly cooked.
- When steaks are almost ready, add mushrooms and tomato wedges.
- Sprinkle with salt and pepper, oregano and basil.
- Place your sliced mozzarella over steak. Cover until cheese melts.
- Serve over steaks.

Steps:
- 1. Bone and cut into eight pieces.
- 2. Pound both sides of meat with mallet, dredge in 1/2 cup flour
- 3. In a large skillet,brown meat in shortening.
- 4. Place meat in a 9x13x2 in. baking dish.
- 5. Blend remaining flour with drippings in skillet;add seasoning and cook until brown.
- 6. Gradually blendin remaining ingredients except cheese; cook 5 minutes.
- 7. pour sauce over meat; bake uncovered; at 350 degrees, for 2- 21/2 hours. top with cheese last 5 minutes.
- 8. I like to put this into the crockpot after the meat is browned. Ialso make this ahead of time. THIS IS FOR A WEEKEND MEAL.

- In a large cast-iron or ovenproof skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain, reserving 1/4 cup drippings. Crumble bacon and set aside. , Trim beef; cut into serving-size pieces. Brown on both sides in drippings. Top meat with mushrooms, tomatoes and onion. Sprinkle with tarragon and bacon. Cover and bake at 325°, until meat is tender, 1-1/4 to 1-3/4 hours, basting twice. , Remove meat to a serving platter; keep warm. Combine cornstarch and water until smooth; add to skillet. Bring to a boil; cook and stir until thickened, about 2 minutes. Reduce heat; stir in cream. Simmer, uncovered, until heated through, 3-4 minutes. Return meat to skillet and turn to coat with sauce. If desired, sprinkle with parsley.

- Preheat oven to 325°. In a large shallow dish, combine flour, salt and pepper. Pound steak with a mallet to tenderize. Add meat, a few pieces at a time, and toss to coat., In an ovenproof Dutch oven, brown steak in oil on both sides. Arrange onion slices between layers of meat. Add water and Worcestershire sauce. , Cover and bake 2 to 2-1/2 hours or until meat is very tender. - Preheat oven to 325° F. In a large resealable plastic bag, combine flour, salt, pepper, and granulated garlic. Add steak, a few pieces at a time, and shake to coat.
- On the stovetop, heat oil in a cast-iron Dutch oven (or other heavy, oven-safe pot) over medium-high heat. Brown steak in oil on both sides. Remove steaks to a plate.
- To the same pot, add the onion, celery, bell pepper, and mushrooms. Turn the heat down to medium, and cook and stir for 6-7 minutes, or until vegetables are beginning to soften. If needed, add a little extra oil. Add garlic and tomato paste, and cook for 1 additional minute.
- Stir in diced tomatoes, beef broth, Worcestershire sauce, thyme, sugar, and celery seed. Scrape the bottom of the pot with a spatula to release all of the flavorful bits. Return steaks to the pot, making sure they are covered by the gravy.
