8 cups torn leaf lettuce
1/2 pound sliced deli roast beef, cut into strips
1/4 pound cubed fully cooked ham
1 medium tomato, chopped
2 hard-boiled large eggs, chopped
4 bacon strips, cooked and crumbled
1/2 cup shredded Swiss cheese
DRESSING:
1/2 cup olive oil
3 tablespoons red wine vinegar
2 tablespoons honey mustard
2 teaspoons sugar
3/4 teaspoon dried oregano
1/8 teaspoon pepper

Steps:

  • On a serving platter, layer the first 7 ingredients. Place dressing ingredients in a jar with a tight-fitting lid; shake well. Serve with salad.

1 Tbsp sweet Mustard
1 Tbsp spicy Mustard
1 tsp honey
0.5 lemon (juiced)
2 Tbsps Apple balsamic vinegar
4 Tbsps Vegetable broth
50 milliliters Canola oil
salt
freshly ground peppers

Steps:

  • Rinse and spin dry swiss chard, arrange on plates.
  • Whisk together sweet and spicy mustard, honey, lemon juice, vinegar, broth and oil, pour into a sealable jar and shake well. Season with salt and pepper and shake again.
  • Drizzle dressing over salad and serve.

  • In a skillet over medium heat, cook bacon until crisp. Remove to paper towels to drain. In a large bowl, combine lettuce, onion, cheese, olives and bacon. In a small bowl, combine mayonnaise and sour cream. Serve with the salad.

4 Oranges
1 Tbsp black peppercorns
1 Tbsp apple cider vinegar
2 Tbsps Walnut oil
salt
2 ozs Walnut
6 ozs Blue cheese

Steps:

  • Rinse swiss chard, trim, spin dry and arrange on four large plates. Peel oranges with a sharp knife, so that all white skin is also removed. Cut the oranges crosswise into thin slices and place on swiss chard.
  • Finely grind peppercorns in a mortar. Add vinegar and oil, mix and season with salt.
  • Chop walnuts. Crumble blue cheese. Drizzle with pepper dressing and serve sprinkled with walnuts and cheese.

2 medium cucumbers (unpeeled & thin-sliced)
6 eggs (hard-boiled & sliced)
2 small green peppers (halved, seeded, deribbed & very thinly sliced)
1/2 lb gruyere (cut in sml julienne strips) or 1/2 lb emmenthaler cheese (cut in sml julienne strips)
1/2 cup black olives (pitted & sliced)
2 small onions (thinly sliced & separated into rings)
10 anchovy fillets (oil-packed, rinsed, patted dry & crushed)
3/4 cup olive oil
1/4 cup red wine vinegar
1 1/2 tablespoons lemon juice
1 tablespoon Dijon mustard
1/2 tablespoon oregano (finely minced)
1 small garlic clove (very finely minced)
