Steps:
- Preheat oven to 350F and line an 8×8-inch square baking pan with aluminum foil for easier cleanup and spray with cooking spray; set aside.
- To a large, microwave-safe bowl add the butter and heat on high power to melt, about 1 minute.
- Add the sugar, eggs, vanilla, and whisk to combine.
- Add the cocoa powder and stir to combine (Note - If your cocoa powder is particularly lumpy, you may wish to sift it before adding it).
- Add the flour, salt, and stir to combine.
- Add 1 1/2 cups chocolate chunks and stir to combine.
- Turn batter out into prepared pan (it will be thick) and smooth the top lightly with a spatula.
- Evenly sprinkle remaining 1/2 cup chocolate chunks on top, lightly tapping them down so they adhere.
- Bake for about 25 to 30 minutes or until the edges are set and a toothpick inserted in the center comes out clean or with a few moist crumbs, but no batter.
- Allow brownies to cool in pan on a wire rack for about 2 hours before slicing and serving. I sliced them into 8 generous rectangles similar to how Starbucks does it. Store in an airtight container at room temp or in the fridge if you like your brownies chilled.

Steps:
- Preheat oven to 350. Butter a 9 x 13 inch baking pan. Line the bottom and up two sides with a single sheet of parchment paper, letting the paper overhang the two long sides of the pan by an inch or so.
- Place a large pot filled with an inch or two of water over low heat and bring to a gentle simmer. Combine the chocolate and diced butter in a stainless steel or glass bowl. Set the bowl over the pot. Stir occasionally until melted. Remove bowl from the top of the pot and set aside to cool slightly.
- Meanwhile, in a large bowl, beat the eggs just until the yolks and whites are blended. Whisk in the sugar and beat until the mixture is creamed together (slightly thickened and pale). Stir in the vanilla.
- Sift together the flour, cocoa and salt. Set aside.
- Pour the chocolate into the egg and sugar mixture, stir to blend well. Add the flour mixture in three additions, using a spatula to gently fold in each addition before adding the next.
- Scrape the batter into the pan and place in the center of the oven. Bake for approximately 35 minutes, or until a tester inserted in the center of the brownies comes out clean. Transfer pan to wire rack and let cool completely before cutting. Use the parchment overhang to lift from pan.

EASY FUDGY BROWNIES FROM SCRATCH (OUR FAVORITE)
Say hello to our favorite brownies recipe from scratch. You only need one bowl, a saucepan, and a spoon. Melting the butter into the sugar and cocoa powder ensures that shiny, crinkly top that we all love. These brownies are bittersweet. If you are like us and find yourself reaching for darker chocolate over milk chocolate, these are certainly for you. Use natural or Dutch-process cocoa powder (cacao powder works, too). For brownies that are less bittersweet and that have chewy edges, try this chewy brownie recipe instead.

Steps:
- Position an oven rack in the middle of the oven and heat to 325 degrees F. Line the bottom and sides of an 8-inch x 8-inch square baking pan with parchment paper or aluminum foil, leaving an overhang on opposite sides to help remove the baked brownies from the pan.
- Prepare a double-boiler by filling a medium saucepan with water about 2 inches deep. Heat the water until barely simmering. See the notes section below for tips on making these without a double-boiler and instead using a microwave or making them directly in a saucepan.
- Combine the butter, sugar, cocoa powder, and salt in a medium heat-safe bowl. Rest the bowl over the simmering water. If the bottom of the bowl touches the water, remove a little water from the saucepan.
- Stir the mixture occasionally until the butter has melted and the mixture is quite warm. Don't worry if it looks gritty; it will become smooth once you add the eggs and flour.
- Remove the bowl from the saucepan, and set aside for 5 minutes or until it is only warm, not hot.
- Stir in the vanilla.
- Add the eggs, one at a time, stirring vigorously after each one.
- When the batter looks thick and well blended, add the flour. Use a spoon to beat the flour into the batter until it is very thick and pulls away from the sides of the bowl. We use a wooden spoon or spatula and beat for 40 to 50 strokes (see video for reference).
- Stir in nuts if using.
- Spread the batter evenly in the prepared pan.
- Bake the brownies until the edges look dry and the middle looks slightly underbaked; 20 to 30 minutes. You can test doneness by inserting a toothpick into the center. The brownies are finished baking if it comes out with a few moist crumbs attached.
- Cool completely before removing from the pan - this step is essential and helps the brownies set. Cut into 16 squares.

When our two grown children were at home, I baked these brownies often. These days, I make them for big occasions-everyone thinks that they're quite nice. As a bonus, they're a good way to use up leftover sour cream.

DOUBLE CHOCOLATE BROWNIES
A recipe I found at Holl's Swiss Chocolatier site. Posting for ZWT Swiss region. Update: 7/31/11 - Wow!!! These are fantastic with such a rich and intense chocolate flavor. I couldn't find the 63% bittersweet chocolate, so I used Ghiradelli's 60% bittersweet. You don't need a big piece to satisfy that chocolate craving, a little goes a long way! For an over the top dessert, try it warm with vanilla ice cream.
