- In a saucepan, combine the potatoes, milk, cream, salt, garlic, nutmeg and pepper. Bring to a boil over medium heat, stirring occasionally. , Pour into a 3-cup baking dish coated with cooking spray. Sprinkle with cheese. Bake, uncovered, at 425° for 20-25 minutes or until heated through and golden brown.

- Preheat oven to 400°F. Cook and stir shallots in 1 Tbsp. of the margarine in medium saucepan on medium heat until tender. Add half-and-half, mustard and remaining 1 Tbsp. margarine; cook 5 min., stirring frequently. Reduce heat to low. Add 1/2 cup of the cheese and the basil; cook until cheese is completely melted, stirring frequently.
- Layer potatoes and cream sauce alternately in greased 2-qt. round casserole dish; sprinkle with remaining 1/2 cup cheese. Cover with foil.
- Bake 45 to 55 min. or until potatoes are tender.

- Preheat oven to 400 degrees F.
- Wash potatoes and slice into thin slices. Soak in large bowl of cold water for at least an hour.
- Melt butter in a sauce pan and add sliced onion. Stir to coat in butter and then allow to cook, undisturbed, until the onion starts to brown. Add the flour and cook 2-3 minutes, stirring constantly to avoid burning. You want mixture to smell like a cooked pie crust. Add milk and whisk over medium heat until thick and bubbly. Remove from heat and stir in roasted garlic, dry mustard, nutmeg, and cheese until melted.
- Place potato slices upright in a greased casserole dish. Sprinkle with salt and pepper. Spoon cheese sauce over potatoes.
- Cover with greased lid or foil and bake 35 minutes, covered. Remove cover and bake an additional 20-30 minutes or until lightly browned and potatoes are cooked.

- Heat oven to 400 degrees. Butter a 9-inch round or oval baking dish.
- Slice potatoes 1/8 inch thick and combine thoroughly in a mixing bowl with 1/3 cup of the Gruyere, the olive oil, thyme leaves, salt, and pepper.
- Arrange potatoes in a neat overlapping pattern in the baking dish. Pour chicken stock over potatoes and sprinkle remaining cheese over top. Bake until potatoes are tender and the cheese and potatoes are starting to brown, about 45 minutes. Garnish with thyme sprigs.

- Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
- Place the potatoes into a large pot of salted water. Bring to a boil, and boil for 1 minute. Drain, rinse in cold water to cool, drain again, and pat dry.
- In a medium bowl, stir together the ricotta cheese, parsley, salt, pepper and nutmeg. In a measuring cup, whisk the egg with a fork, then fill the cup with enough cream to make 1 cup. Season with salt, pepper and nutmeg also.
- Arrange a layer of slightly overlapping potato slices in the bottom of the buttered baking dish. Dot with 1/3 of the ricotta cheese. Sprinkle with 1/3 of the Gruyere cheese. Repeat layers two more times, and end with a layer of potatoes on top. Pour the egg and cream evenly over the potatoes.
- Bake for 35 to 45 minutes in the preheated oven, until the potatoes are tender, and the cheese is browned and bubbly. Let rest for 10 minutes before serving to allow the sauce to thicken.

BACON AND SWISS AU GRATIN POTATOES
I was wanting to do something different with Au Gratin potatoes, and this is what came out of the dark regions of my brain ;).Cook time doesn't include the cooking of the bacon. And don't let the long list of instructions scare you, it's alot easier than it looks :). - In a small saucepan melt margarine,then add onion and cook until soft,at this time add flour.
- Stir in the milk a little at a time until slightly thickened.
- Add 1 cup of cheese,bacon,mustard, and cayenne pepper.
- Stir until cheese is melted, if mixture seems to be too thick add a bit more milk to thin it out some.
- In a lightly greased or sprayed 1 1/2 quart baking dish layer half of the potatoes, then sprinkle with half of the salt, pepper, and garlic powder.
- Pour half of the cheese sauce over the potatoes and repeat with remaining ingredients, finishing with the cheese sauce.
- Cover and bake for 45 minutes at 375 degrees remove cover, top with remaining 1/2 cup of swiss cheese and bake for another 15 to 20 minutes or until top is golden brown.
- Let " rest " for 10 minutes, serve and ENJOY !

- Cook potatoes in boiling water 20 min. or just until tender; drain. Return to pan; cover with cold water. Let stand until cooled.
- Meanwhile, melt butter in medium saucepan on medium heat. Add onions; cook and stir 2 min. Blend in flour; cook 1 min. Gradually add milk; cook 5 min. or until thickened, stirring constantly. Add 1-1/4 cups Swiss; cook and stir 1 min. or until melted. Stir in mustard.
- Heat oven to 375°F. Peel potatoes; cut into 1/4-inch-thick slices. Layer alternately with cheese sauce in 2-qt. casserole sprayed with cooking spray, ending with sauce.

- In a heavy bottomed pot, melt the butter and add in the flour to create a roux. Cook for 1 Minute. Remove from the heat and slowly stir in the heavy cream until incorporated. Add in the milk, dijon mustard, and gruyere cheese then whisk in the eggs. Set aside.
- In a 1.5 quart baking dish, or an au gratin pan, make a layer of the sliced potatoes so that they are all slightly overlapping and laying (mostly) flat against the bottom of the dish. Sprinkle 1/4 cup of swiss cheese on top, then add a layer of the sliced ham in the same fashion as the potatoes. Top the ham with another 1/4 cup of swiss cheese. Repeat for 3 layers.
