These delightful cinnamon crisps are like a flattened cinnamon roll baked until crispy. A terrific cookie for the holidays.

Provided by by Serena Ball, RD

Number Of Ingredients 9

2 cups warm water (120 degrees)
1/3 cup sugar + more for topping
2 pkg active dry yeast
scant 2 teaspoons salt
6 1/2 cups all purpose flour
2 eggs
1/3 cup canola oil
softened butter
cinnamon

Steps:

  • Combine water, sugar and yeast in bowl of stand mixer. Add salt and 2 cups flour; beat 2 minutes. Add eggs and oil; beat 1 minute. Blend in 4 1/2 cups flour; beat until sticky dough forms. Let rest 20 minutes.
  • To make cinnamon rolls, lightly dusk counter with flour and roll out half of dough until about 1/2-inch thick and rectangular. Spread lightly with softened butter and sprinkle with sugar and cinnamon. Roll up dough and using a serated knife or kitchen twine, slice cinnamon rolls about 3/4-inch thick and place cut-side down on sugar and cinnamon coated counter.
  • One at a time, place each roll on lightly flour-dusted counter, sprinkle with about 3/4 teaspoon sugar and roll flate until about 1/8-inch thick. Place on greased baking sheet and let rise 20 to 30 minutes, until light. Bake 18 to 20 minutes in preheated 375-degree oven.

Number Of Ingredients 17

1 package (1/4 ounce) active dry yeast
1-1/4 cups warm 2% milk (110° to 115°)
1/4 cup sugar
1/4 cup shortening
1 egg
1 teaspoon salt
4 cups all-purpose flour
FILLING:
1/2 cup sugar
1/2 cup packed brown sugar
1/4 cup butter, melted
1 teaspoon ground cinnamon
TOPPING:
1/4 cup butter, melted
1 cup sugar
1 teaspoon ground cinnamon
1/2 cup chopped pecans

Steps:

  • In a large bowl, dissolve yeast in warm milk. Add the sugar, shortening, egg, salt and 2 cups flour; beat on medium speed for 3 minutes. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise until doubled, about 1 hour., Combine filling ingredients; set aside. Punch dough down; divide in half. On a floured surface, roll each portion into a 12-in. square. Spread filling over dough. Roll up tightly jelly-roll style; pinch to seal., Cut into 1-in. slices; place on greased baking sheets (four slices per sheet). Cover with waxed paper; flatten slices with palm of hand into 3-in. circles. Cover and let rise until doubled, about 30 minutes., Cover with waxed paper and flatten or roll into 5-in. circles. Brush with butter. Combine the sugar, cinnamon and pecans; sprinkle over butter. Cover with waxed paper; roll or flatten again. Discard waxed paper., Bake at 400° for 10-12 minutes or until browned. Serve warm.

1 package (1/4 ounce) active dry yeast
1/2 cup warm water (110° to 115°)
1 cup warm whole milk (110° to 115°)
2 cups sugar, divided
1/2 cup canola oil
1-1/4 teaspoons salt
2 large eggs
1-1/2 teaspoons lemon extract
5-1/2 to 6 cups all-purpose flour
6 tablespoons butter, softened, divided
1 tablespoon ground cinnamon

Steps:

  • In a large bowl, dissolve yeast in water; let stand for 5 minutes. Add the milk, 1/2 cup sugar, oil, salt, eggs, extract and 2 cups flour; beat well. Stir in enough remaining flour to make a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch the dough down. Turn onto a floured surface, roll out into a 1/4-in.-thick rectangle. Spread with 2 tablespoons butter and sprinkle with 1/3 cup of the remaining sugar. Fold dough in half lengthwise; roll out to 1/4-in. thickness. Spread with 2 tablespoons butter and sprinkle with 1/3 cup sugar. , Fold in half widthwise; roll to 1/4-in. thickness. Spread with remaining butter and sprinkle with 1/3 cup sugar. Fold in half lengthwise; roll out to an 18x10-in. rectangle. Combine the cinnamon and remaining sugar; sprinkle half over the dough to within 1/4 in. of all edges. , Roll up jelly-roll style, starting with a short side; pinch seam to seal. Cut into 1/2-in. slices and place on greased baking sheets (four to six slices per sheet). Cover with waxed paper and flatten with palm of hand. Sprinkle with remaining cinnamon-sugar. Let stand for 30 minutes. , Bake at 400° for 12-15 minutes or until golden brown. Immediately remove from pans to wire racks to cool.

A simple short bread like cookie with a lot of flavor, time does not include chilling . Cut in squares these look like cinnamon tiles.

Number Of Ingredients 13

1 cup butter, softened
1/2 cup packed brown sugar
3/4 cup granulated sugar
1 egg
1 teaspoon vanilla
1 lemon, zest of (about 1 tablespoon)
3 cups flour
1 teaspoon kosher salt
1 tablespoon cinnamon
1 egg
2 tablespoons milk
1/4 cup sugar
1 tablespoon cinnamon

Steps:

  • Beat the butter and sugars together until light and fluffy. Add in the egg, vanilla and zest and beat to combine.
  • Add the flour, salt and cinnamon and mix until incorporated. Wrap the dough in plastic wrap and refrigerate at least 1 hour.
  • Roll the dough out on a well-floured surface to about 1/4" thick. Cut out shapes with cookie cutters or cut in to squares with a pastry wheel/pizza cutter. Place the cookies on a parchment paper-lined cookie sheet.
  • Beat the egg and milk together with a fork or whisk. Mix together the sugar and cinnamon. Use a pastry brush to coat the cookies in the egg mixture, then sprinkle the cinnamon sugar on top.
  • Bake at 350 F for 10 to 12 minutes.
