SWISS CHICKEN
This is a wonderful recipe. This was given to our family years ago by a good friend through the Boy Scouts. My brother would eat it all if he was allowed to and now my children who are both little love this dish. For people on a low budget this is an easy meal to make and it is easy to reheat. My mother, who does not eat chicken, loves the topping of this dish.

Steps:
- Preheat oven to 350 degrees F(175 degrees C).
- In a 9x13 inch baking dish, layer the chicken breasts, soup and water. Top each breast with a slice of Swiss cheese, then top it all with the breadcrumbs. Cut the butter or margarine into pads and place them over the top of the casserole.
- Bake in the preheated oven for 45 minutes. Let cool and serve.

I combined various recipes for this dish I have found over the years. This is has been the "crowd-pleaser". It's a simple and absolutely delicious baked dish! Everyone will love it!

Steps:
- Lightly grease a 13x9 baking dish and place chicken breasts in dish.
- Season chicken with garlic powder, salt and pepper and italian seasoning (optional).
- Top each chicken breast with 1 or 2 slices of cheese (however you'd like it).
- In a seperate bowl, combine mushroom soup and milk, stir until lumps are gone. Pour over chicken.
- Top with stuffing mix and drizzle melted butter all over.
- Cover. Bake for 45-50 mins @ 350.
- Remove cover, continue to bake for 5-10 minutes to crisp the stuffing.

- Method : Put in ginger and spring onion in boiling water, blanch the chicken wings to remove blood and impurities if any. Drain well. Rinse and soak in cold water for 10 minutes. Set aside. In a deep pot, pour in light soy sauce, dark sauce, water and wine. Add Sichuan peppercorns, star anise, bay leaves and rock sugar. Bring it to a boil over high heat. Add in chicken wings. My mother used to make this all the time, I don't know where she came up with the name but it sure was delicious. The original recipe is called "Swiss Steak" but to make it more leaner I fix it with chicken breasts instead, hence the name "Swiss Chicken".

- 1. Wash and slice Celery, and carrots. Slice onion, either chop or slice for ringlets whichever you prefer. Set aside. Preheat oven to 350'.

- Pound chicken breast to even out the thickness of the chicken. I place the chicken in between two pieces of plastic wrap and pound with a rolling pin or the flat side of a kitchen mallet. Cut each breast in half.
- Place chicken breasts in a sprayed 9 x 13 inch baking dish.
- Top chicken with slices of Swiss cheese.
- In a bowl, mix soup and milk until well blended.
- Pour soup mixture over chicken.
- Then top the chicken with the dry stuffing mix. Drizzle melted butter on the stuffing.
