SWISS CHEESE SCRAMBLE
A family favorite that can be prepared the day before and baked the next morning.

Steps:
- Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
- In a large bowl, Combine the bread cubes and milk. Drain after 5 minutes. In a separate bowl, beat together milk, eggs, salt and pepper.
- In a large skillet or saucepan, melt 1/4 cup butter over medium heat. Add the egg mixture and scramble until soft. Do not fully cook. Add the soaked bread cubes and turn into a greased 9x13 inch baking pan. Sprinkle shredded cheese on top of casserole. In a small bowl, stir together butter and bread crumbs. Sprinkle this mixture over the cheese and then top with the bacon. Cover and refrigerate overnight.
- The next morning, preheat oven to 350 degrees F (175 degrees C).
- Bake in preheated oven for 40 minutes. Serve warm.

Steps:
- Grease a 10" by 6" baking dish. Preheat oven to 325 degrees.
- In 2 quart saucepan over high heat,in 1 inch boiling water, heat broccoli and 1/2 tsp salt to boiling.
- Cover and cook 10 minutes;Drain;Set aside.
- Meanwhile, in 2 quart saucepan over medium heat, melt butter; Stir in flour and 1 tsp of salt until smooth.
- Add onion and cook 1 minute
- Slowly stir in milk; cook, stirring constantly, until mixture thickens and begins to boil; remove from heat.
- Stir in cheese and broccoli until cheese melts slightly; stir in eggs.
- Pour into baking dish and bake 30 minutes or until firm to the touch.
SWISS SCRAMBLED EGGS
I created this when I was trying to come up with ideas for high-protein breakfast meals. I made it in an individual-sized serving, but I'm sure it could easily be multiplied to serve more than one person.

- Heat butter or olive oil in a medium skillet over medium-high heat.
- While skillet is heating, beat eggs and milk together until foamy.
- When skillet is hot, pour eggs into skillet and scramble until just beginning to set.
- Add cheese to eggs and continue cooking eggs to desired doneness.
- After the eggs are done, put them on a plate and continue to stir until the cheese is completely melted.
- Serve immediately.

- Add eggs, half and half, salt and pepper to a mixing bowl, and whisk until thoroughly mixed. Set aside until ready to use.
- Add the oil to a medium-sized, non-stick saute pan over medium heat, and allow to come to temperature. If you are using butter, do not allow it to brown. If it does, wipe pan clean and start over, slightly lowering the heat if necessary.
- Once the oil is heated through, swirl it to make sure it is evenly coating the pan, and then pour in the egg mixture, top with the cheese, and allow the mixture to sit, undisturbed for about 30 seconds to 1 minute (just until the outer ring of the eggs begins to look opaque).
- Reduce the heat to medium-low and begin working from the outer edges of the pan, and using a silicone spoon or spatula, begin gently pushing the eggs toward the center, allowing the uncooked egg to flow over and spill outward, toward the perimeter of the pan. Resist the urge to stir.
