This Cheesy Chicken and Stuffing Bake is one of my go-to easy comfort food recipes!

8 (4 oz each) thin boneless skinless chicken breast cutlets ((2 lbs total))
6 slices 2% reduced fat Swiss cheese
½ cup skim milk
1 (10.75 oz) can of Campbell's 98% fat free cream of chicken soup
6 oz box of chicken flavored stuffing mix (such as Stove Top)
4 tablespoons light butter (melted)

Steps:

  • Preheat oven to 350 degrees. Lightly mist a 9x13 baking dish with cooking spray and set aside.
  • Place the chicken breasts in a single layer across the bottom of the baking dish. Tear the cheese slices into pieces and use them to cover the breasts.
  • In a mixing bowl, mix together the milk and cream of chicken soup until combined. Pour over the top of the chicken.
  • In another mixing bowl, stir together the stuffing mix and melted butter until the stuffing is coated. Sprinkle the stuffing mix over the tops of the chicken.
  • Place in the oven and bake uncovered for 35-40 minutes.

1 1/2 Pounds boneless skinless chicken breasts ((about 3 or 4 breasts))
2 (8 ounce) boxes Stove Top chicken stuffing
1/2 cup (1 stick) butter (for stuffing) ((see tip))
3 cups water (for stuffing) ((see tip))
2 (10.5 ounce) cans cream of chicken soup
8 slices (about 1/2 pound) Swiss cheese

Steps:

  • Prepare stuffing mix according to package directions for two boxes (1/2 cup butter and 3 cups water).
  • Preheat oven to 350 degrees F. Spray a 13x9x2 inch casserole dish with cooking spray and set aside.
  • Cut chicken pieces into bite size pieces (about 1 inch). Spread chicken out in bottom of casserole dish.
  • Spread cream of chicken soup over raw chicken and evenly spread the Swiss cheese over chicken and soup mixture.
  • Spoon stuffing over mixture and spread over the top. Cover with foil.
  • Bake for 45 minutes. Remove foil and bake an additional 15 minutes or until casserole is bubbly and chicken is cooked through.

4 Chicken Breasts (or enough to fill pan)
6 Slices Swiss Cheese
1 can Cream of Chicken Soup
1/4 cup milk
Stove Top Turkey Stuffing (about 1/2 box)
¼ c butter

Steps:

  • Cover bottom of pan with chicken.
  • Lay Swiss Cheese over chicken.
  • Mix 1 can cream of chicken soup and 1/4 cup milk.
  • Pour mixture over chicken.
  • Top with 1/2 bag (or more) of Stove Top Turkey Stuffing.
  • Drizzle 1/4 cup butter on top.
  • Bake at 350 for 45-60 minutes.
  • Serve over rice.

1 cup 2% milk
