CHEESE AND MUSTARD BREAD
Found on about.com. This rye yeast bread is stuffed with Swiss Emmenthaler cheese and grainy mustard. Prep time include rise time.

Steps:
- Dissolve yeast in 1/4 cup of the water; let stand 5 minutes until frothy. Put flours and salt into a large bowl; make a well in the center. Add yeast mixture, remaining water and oil and mix to a soft dough.
- Knead on a lightly floured surface about 5 minutes or until smooth and elastic. Put into a clean bowl, cover with a damp cloth and let rise in a warm place 1-1/2 to 2 hours or until doubled in size.
- Preheat oven to 425 degrees F. (220 degrees C.).
- Punch down dough. Knead dough 2 minutes, then roll into a 12-inch square. Spread with mustard, then sprinkle with cheese and parsley.
- Roll up like a jellyroll and place, seam side down, on a floured baking sheet; brush with water and sprinkle with mustard seeds.
- Bake 10 minutes; reduce temperature to 400 degrees F. (205 degrees C.) and bake 20 minutes or until bread sounds hollow when tapped underneath. Cool on a wire rack.
- Variation: Use 1 cup light beer instead of 1 cup of the water.

- Cut bread in half crosswise. Make diagonal cuts, 1 in. apart, through bread but not through bottom. Combine all remaining ingredients. Spread half the butter mixture between bread slices. Spread remaining mixture over top and sides of bread., Place bread on double thickness of foil; cover loosely with more foil. Bake at 425° for 20-30 minutes. For last 5 minutes, remove foil covering bread to allow it to brown.

SOURDOUGH CHEESE BREAD
A very rich, gooey appetizer, but wonderful for football Sundays!

- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
- Cut a checkerboard pattern into the sourdough bread round by cutting 5 or more slices about 1 inch apart into the sourdough bread round with a serrated knife, taking care not to cut all the way through the loaf. Rotate the bread a quarter turn, and cut 5 or more slices going the other way, to finish the checkerboard pattern. The slices will still be attached at the bottom.
- Melt the butter over low heat in a saucepan, and stir in the mustard, lemon juice, poppy seeds, seasoned salt, and onion until the mixture is well combined. Place the bread loaf onto the prepared baking sheet, and carefully pour the butter mixture all over the bread, including in the cracks between squares, letting the butter mixture soak into the bread. Stuff slices of Swiss cheese into the spaces between the bread squares.
- Bake in the preheated oven until the cheese is melted and bubbling, and the loaf is browned, about 30 minutes. To serve, let guests pull the bread apart into individual squares.

- Combine rolls. Add both cheeses and work into the dough well.
- Form into a loaf and place in a sprayed 9x5-inch loaf pan.
- Cover with sprayed plastic wrap. Allow to rise to the top of the pan.
- Bake at 350°F for 35 minutes.
- Cover with foil after 25 minutes of baking to prevent over browning.
- Allow to cool a little before slicing.

SWISS CHEESE BREAD WITH BEAU MONDE SEASONING

- 1. Slice french bread on the diagonal, 3/4 of the way through the bread. Make sure that you do not cut all the way through the bottom of the bread.
- 2. Place one slice of cheese in each slice of bread.
- 3. Mix remaining ingredients together and spread evenly over top of bread.
- 4. Wrap loaf in foil and bake at 325-degrees for 25-30 minutes. Serve and Enjoy!
SWISS POPPY SEED BREAD
The recipe is only for the bread, but you could easily add some ham to it to make a great sandwich.

Steps:
- 1. Cut a piece of aluminum foil large enough to hold the French bread loaf and a couple inches extra on each end.
- 2. Preheat the oven to 325 degrees F.
- 3. With a serrated knife, slice the bread diagonally in 1-inch slices.
- 4. Place the bread in the middle of the aluminum foil.
- 5. Insert half of a Swiss cheese slice between each slice of bread.
- 6. Melt the butter in a saucepan. Turn the heat to low.
- 7. To the butter, add the minced onion, mustard, lemon juice, poppy seed and season salt.
- 8. Remove the saucepan from the stove, and pour a little bit of the mixture between each slice.
- 9. At this point, if you wanted to turn this into a sandwich, you would place a piece of deli ham between each slice of bread.
- 10. Wrap the aluminum foil around the bread, but do not cover it completely.
- 11. Bake for 30 minutes.
- 12. Remove the bread from the oven and serve immediately. This bread is addictive!
BEAU MONDE CHEESE BREAD
A Cheese Bread that is OH So Yummy! My sister in law gave me this receipe and it's always a hit. I looked for other receipes on this sight with Beau Monde spice and only found dips. Hope you love this as much as my family does! Enjoy!

- Cut French Loaf into 1 inch pieces diagonally.
- Mix all ingredients together.
- Cut swiss cheese in 1/2 diagonally.
- On each side of bread, spread mixture and place one 1/2 slice of cheese in between the pieces of bread.
- Cover Bread with foil and bake for about 45 minutes at 325.
