Cheese and Mustard Bread image

Found on about.com. This rye yeast bread is stuffed with Swiss Emmenthaler cheese and grainy mustard. Prep time include rise time.

Number Of Ingredients 10

1 (1/4 ounce) package dry active yeast (about 1 Tablespoon)
1 1/4 cups warm water (110 F/45C)
1 3/4 cups rye flour
2 cups bread flour
1 teaspoon salt
1 tablespoon vegetable oil
6 tablespoons whole grain mustard
1 1/2 cups emmenthaler cheese, shredded
3 tablespoons parsley, chopped
1 teaspoon mustard seeds

Steps:

  • Dissolve yeast in 1/4 cup of the water; let stand 5 minutes until frothy. Put flours and salt into a large bowl; make a well in the center. Add yeast mixture, remaining water and oil and mix to a soft dough.
  • Knead on a lightly floured surface about 5 minutes or until smooth and elastic. Put into a clean bowl, cover with a damp cloth and let rise in a warm place 1-1/2 to 2 hours or until doubled in size.
  • Preheat oven to 425 degrees F. (220 degrees C.).
  • Punch down dough. Knead dough 2 minutes, then roll into a 12-inch square. Spread with mustard, then sprinkle with cheese and parsley.
  • Roll up like a jellyroll and place, seam side down, on a floured baking sheet; brush with water and sprinkle with mustard seeds.
  • Bake 10 minutes; reduce temperature to 400 degrees F. (205 degrees C.) and bake 20 minutes or until bread sounds hollow when tapped underneath. Cool on a wire rack.
  • Variation: Use 1 cup light beer instead of 1 cup of the water.

1 loaf (18-20 inches) French bread
1 cup butter, softened
2 cups shredded Swiss cheese
3/4 teaspoon celery seed
3/4 teaspoon garlic powder
3 tablespoons dried parsley flakes

Steps:

  • Cut bread in half crosswise. Make diagonal cuts, 1 in. apart, through bread but not through bottom. Combine all remaining ingredients. Spread half the butter mixture between bread slices. Spread remaining mixture over top and sides of bread., Place bread on double thickness of foil; cover loosely with more foil. Bake at 425° for 20-30 minutes. For last 5 minutes, remove foil covering bread to allow it to brown.

This is a family favorite and Christmas dinner tradition!

1 large loaf of french bread
1 lb swiss cheese, sliced into 1 inch cubes
1 1/2 stick margarine-softened
2 Tbsp dried minced onion
1 tsp lawrey's seasoning salt
1 tsp dry mustard
1 tsp lemon juice

Steps:

  • 1. Cut bread into 1" slices.(cutting diagonal strips down one side, repeating the strips on the opposite end to create a diamond effect to the 1" slices). Place Bread onto foil in a baking pan creating a bowl effect with foil so as the sauce won't flow onto pan).
  • 2. Place 1 slice cheese between each slice of the bread, making sure not to miss any slices of bread.
  • 3. Mix other ingredients together. Spread on top and sides of bread.
  • 4. Add another piece of foil over the top of the prepared bread covering completely. Bake at 350 degrees for 25-30 minutes.

1 cup butter (softened)
1/2 teaspoon lemon juice
2 tablespoons onions
1 teaspoon mustard

Steps:

  • Cut French Loaf into 1 inch pieces diagonally.
  • Mix all ingredients together.
  • Cut swiss cheese in 1/2 diagonally.
  • On each side of bread, spread mixture and place one 1/2 slice of cheese in between the pieces of bread.
  • Cover Bread with foil and bake for about 45 minutes at 325.

1 (1 1/2) pound round loaf sourdough bread
1 cup butter
1 tablespoon Dijon mustard
1 teaspoon lemon juice
1 tablespoon poppy seeds
1 tablespoon seasoned salt (such as Spice Islands® Beau Monde Seasoning)
1 tablespoon minced onion
1 pound Swiss cheese, sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Cut a checkerboard pattern into the sourdough bread round by cutting 5 or more slices about 1 inch apart into the sourdough bread round with a serrated knife, taking care not to cut all the way through the loaf. Rotate the bread a quarter turn, and cut 5 or more slices going the other way, to finish the checkerboard pattern. The slices will still be attached at the bottom.
  • Melt the butter over low heat in a saucepan, and stir in the mustard, lemon juice, poppy seeds, seasoned salt, and onion until the mixture is well combined. Place the bread loaf onto the prepared baking sheet, and carefully pour the butter mixture all over the bread, including in the cracks between squares, letting the butter mixture soak into the bread. Stuff slices of Swiss cheese into the spaces between the bread squares.
  • Bake in the preheated oven until the cheese is melted and bubbling, and the loaf is browned, about 30 minutes. To serve, let guests pull the bread apart into individual squares.

1 tsp mustard, prepared

1 Tbsp beau monde seasoning

Steps:

  • 1. Slice french bread on the diagonal, 3/4 of the way through the bread. Make sure that you do not cut all the way through the bottom of the bread.
  • 2. Place one slice of cheese in each slice of bread.
  • 3. Mix remaining ingredients together and spread evenly over top of bread.
  • 4. Wrap loaf in foil and bake at 325-degrees for 25-30 minutes. Serve and Enjoy!
