Sunday Brunch Eggs image

This recipe is special enough to consider when company comes, and it's a convenient way to serve eggs to a group. Nestled on top of Canadian bacon and Swiss cheese, the eggs are drizzled with rich cream. For a pretty presentation, cut around each egg and serve on toast. -Judy Wells Phoenix, Arizona

12 slices Canadian bacon
12 slices Swiss cheese
12 eggs
1 cup heavy whipping cream
1/3 cup grated Parmesan cheese
12 slices toast, optional

Steps:

  • Place Canadian bacon in a greased 13-in. x 9-in. baking dish; top with Swiss cheese. Carefully break an egg over each piece of cheese. Pour cream over eggs and sprinkle with Parmesan cheese. , Bake, uncovered, at 375° for 20-25 minutes or until eggs reach desired doneness. Let stand for 5 minutes. Cut between each egg; serve on toast if desired.

The original recipe is delicious, but this is my healthier version, with less fat and calories. It also freezes beautifully and individual portions can be reheated in 3 minutes in the microwave. As a single person, I can't eat 8 portions at one sitting, so I divide and freeze. But it's great if family visits, because I can have the portions ready to reheat, and it's also great if you're in a hurry in the morning and don't have time to cook before heading off to work.

8 frozen hash brown patties
2 (6 ounce) packages Canadian bacon, quartered
4 cups shredded Cheddar-Monterey Jack cheese blend
1 ¾ cups egg substitute (such as Egg Beaters® Southwestern Style)
1 cup 2% milk
½ teaspoon salt
½ teaspoon ground mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Arrange hash brown patties in a single layer in the prepared baking dish; top with Canadian bacon. Sprinkle Cheddar-Monterey Jack cheese over Canadian bacon.
  • Whisk egg substitute, milk, salt, and mustard together in a bowl; pour over cheese layer. Cover dish with aluminum foil.
  • Bake in the preheated oven for 1 hour. Remove aluminum foil and bake until a knife inserted in the center comes out clean and edges are golden brown, about 15 minutes.

1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup green onion, finely chopped
4 slices Canadian bacon, cut in half
1 cup shredded swiss cheese
nonstick cooking spray

Steps:

  • Preheat broiler.
  • Whisk eggs, milk, salt and pepper together in a medium bowl until well blended. Reserve 2 tablespoons of green onions and stir the rest into egg mixture.
  • Spray a 12 inch ovenproof skillet with cooking spray. Heat over medium-low heat until hot.
  • Add egg mixture. Cover and cook for 14 minutes or until almost set.
  • Arrange Canadian bacon in pinwheel on top of egg mixture. Sprinkle with cheese.
  • Broil for 2 minutes or until cheese is bubbly.
  • Top off with 2 tablespoons of green onions. Cut and serve!
