PASTA BROCCOLI BAKE
A quick to prepare casserole with broccoli and a flavorful cheese sauce. You will love the fact that you might already have all the ingredients needed for this recipe in your house.

Steps:
- In a large pot of boiling salted water cook rigatoni or fusilli pasta with one tablespoon of oil until al dente. Drain.
- Meanwhile, in a large saucepan melt butter or margarine. Stir in flour and milk and whisk until mixture boils and thickens. Add grated Parmesan cheese, salt, garlic salt, nutmeg, thyme and grated Cheddar cheese and stir until blended.
- Add cooked broccoli and drained pasta to cheese sauce. Mix well. Pour into a greased 9x13 inch baking dish. Sprinkle with grated Swiss cheese.
- Bake uncovered at 350 degrees C(175 degrees C) for 20 minutes. Let stand 10 minutes before serving.

- 1. Thoroughly combine soup and milk.
- 2. Arrange broccoli in a 8 x 12 inch baking dish
- 3. Layer eggs, 1/2 cup Frensh Fried Onions, Soup mixture and cheese over broccoli
- 4. Bake at 350 degrees for 25 minutes
- 5. Remove from oven and top with remaining onions.
- 6. Place back into oven and bake 5 minutes longer
- 7. Serve it hot with any of your favorite meals.

- Preheat oven to 350 degrees F. Lightly spray or grease a 1.5 quart baking dish.
- Drain chopped broccoli well. Set aside.
- In a large bowl, lightly beat the egg. Add the soup, onion and mayonnaise. Whisk together well.
- Add the drained chopped broccoli and the cheese. Spoon mixture into prepared baking dish.
- Mix the bread crumbs with the melted butter, mixing well to make sure they are all coated with butter. Sprinkle buttered crumbs on top of casserole.
- Bake at 350 degrees F for 35-40 minutes or until casserole is bubbly.

- Cook pasta according to package.Drain well and butter lightly to prevent sticking. Set aside.
- Cut chicken into bite size pieces.
- In large frying pan, heat 6 tbsp butter. Add onions and chicken pieces. Cook just until turning white, turn and cook other side.
- Sprinkle with lemon juice. Add mushrooms and cook over medium heat for about six minutes, turning once. Remove chicken and mushrooms and keep warm.
- To the juices left in the frying pan, add flour. Cook and stir about 2 minutes.
- Using whisk, stir in milk and bring to a boil. Lower heat and simmer to thicken.
- Add spices and half of the cheese. Simmer gently for 5 minutes.
- Using the same pot that you cooked your noodles in, add the cream sauce and gently stir to coat noodles. Add broccoli, chicken and mushrooms. Fold into the noodles gently.
- Transfer to a greased 2L baking pan and top with remainder of Swiss cheese.
- Bake covered at 350F 35-40 minutes.

This is a great casserole that I threw together one day when a friend requested Broccoli au Gratin for her birthday dinner. This is a great idea for those who aren't big fans of bread crumbs. Also, the eggs can be taken out for a great sauce and using skim milk and fat-free cheese works well, too. It's basically a great recipe that can be easily altered according to taste. Enjoy!

- Preheat oven to 325 degrees F (165 degrees C).
- Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.
- Melt butter in a medium saucepan over medium heat and add flour; cook until bubbly. Stir in onion and gradually add milk, stirring well. Bring to a boil and cook for 1 minute.
