BACON AND SWISS QUICHE

Bacon and Swiss Quiche image

We love quiche in our house; however, my mother is allergic to onions, so we created a recipe that she can enjoy with us. This is great with a cup of broth on a rainy day.

Crustless Bacon, Spinach & Swiss Quiche - Low Carb image

I've read through a lot of recipes to come up with my version of this quiche. I wanted to make one that is crustless and low carb, and this one is a WINNER! But once I start eating it, I just don't want to stop! I thought I could make it ahead so I could have a quick breakfast on work mornings, but this rarely lasts out the day it was made!

BACON AND SWISS QUICHE

Bacon and Swiss Quiche image

Bring the fabulous flavors of France to your dinner table with this delightful quiche baked with crumbled bacon and Swiss cheese.

Provided by By Betty Crocker Kitchens

Categories     Entree

Time 2h5m

Yield 6

Number Of Ingredients 13

1 cup all-purpose flour
1/2 teaspoon salt
1/3 cup plus 1 tablespoon shortening
2 to 3 tablespoons cold water
8 slices bacon, crisply cooked, crumbled
1 cup shredded Swiss cheese (4 oz)
1/3 cup finely chopped onion
4 eggs
2 cups whipping (heavy) cream or half-and-half
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground red pepper (cayenne)
Additional crisply cooked crumbled bacon, if desired

Steps:

  • In medium bowl, mix flour and 1/2 teaspoon salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).
  • Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap flattened round of pastry in plastic wrap and refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
  • Heat oven to 425°F. Roll pastry on lightly floured surface, using floured rolling pin, into circle 2 inches larger than upside-down 9-inch quiche dish or glass pie plate. Fold pastry into fourths; place in quiche dish or pie plate. Unfold and ease into dish, pressing firmly against bottom and side.
  • Sprinkle bacon, cheese and onion in pastry-lined quiche dish. In large bowl, beat eggs slightly with fork or wire whisk. Beat in remaining ingredients. Pour into quiche dish.
  • Bake 15 minutes. Reduce oven temperature to 300°F. Bake about 30 minutes longer or until knife inserted in center comes out clean. Sprinkle with additional bacon. Let stand 10 minutes before serving.

QUICK CRUSTLESS QUICHE

Quick Crustless Quiche image

A quick and easy crustless quiche with a balanced blend of ingredients complimented by delicate fluffy eggs and surrounded by pieces of bacon with a swiss cheese base. This versatile dish can be served for breakfast, brunch, lunch or dinner! Serve with fresh muffins or toasted bread and fruit.

Provided by Sue H

Categories     Savory Pies

Time 1h10m

Number Of Ingredients 8

6 slice bacon
4 oz swiss cheese, shredded
2 Tbsp butter, melted
4 eggs, beaten
1/4 c onion, finely chopped
1 tsp salt
1/2 c all-purpose flour
1 1/2 c milk

Steps:

  • 1. In a skillet fry bacon over medium heat until evenly browned. Drain, crumble and sit aside. (I use my kitchen shears to cut bacon into small pieces before frying to save having to crumble later).
  • 2. Preheat oven to 350º and lightly grease a 9-inch pie pan. Line bottom of pie pan with cheese, then top with the crumbled bacon.
  • 3. Combine eggs, melted butter, onion, salt, flour and milk. Whisk or blend until smooth. (I prefer to use an immersion blender or upright blender)
  • 4. Pour into pie pan, covering cheese and bacon. (place on a cookie sheet for easier handling in and out of the oven) Bake about 50 minutes until top is lightly golden and knife inserted into center comes out clean.(center will be soft). Let stand 10 minutes before cutting.

BACON BROCCOLI CHEDDAR CRUSTLESS QUICHE

Bacon Broccoli Cheddar Crustless Quiche image

Breakfast, brunch, lunch, or dinner, this Bacon Broccoli Cheddar Crustless Quiche is an easy, filling, and customizable low-carb meal.

Provided by Beth - Budget Bytes

Categories     Breakfast     Brunch     Dinner     Lunch

Time 1h15m

Number Of Ingredients 7

1 lb. frozen broccoli florets ($2.10)
4 oz. bacon ($1.43)
4 large eggs ($1.08)
1 cup milk ($0.31)
1/4 cup grated Parmesan ($0.41)
1/4 tsp seasoning salt* ($0.03)
4 oz. shredded medium cheddar, divided ($0.95)

Steps:

  • Take the broccoli florets out of the freezer so they can begin to thaw. Place the bacon in a skillet and cook over medium-low heat until very brown and crispy. Transfer the bacon to a paper towel lined plate to drain and pour off most of the grease out of the skillet.
  • Turn the heat under the skillet up to medium-high and add the broccoli florets. Sauté them in the residual bacon grease until they are no longer frozen. Transfer the broccoli to a cutting board. Roughly chop the florets into smaller, bite-sized pieces.
  • Begin preheating the oven to 350ºF. In a medium bowl, whisk together the eggs, milk, Parmesan, and seasoning salt.
  • Coat a 9-inch pie plate in non-stick spray (or butter, if you prefer). Place the chopped broccoli in the dish along with half of the shredded cheddar. Crumble the bacon over top. Stir the broccoli, cheddar, and bacon together.
  • Place the pie plate on a baking sheet for easy transport in and out of the oven. Pour the egg and milk mixture over the bacon, broccoli, and cheddar in the dish. Top with the remaining shredded cheddar.
  • Bake the crustless quiche for 50-55 minutes, or until the center is puffed and it is golden brown around the edges. Let the crustless quiche cool slightly before slicing into eight pieces and serving.
