BACON AND SWISS QUICHE
We love quiche in our house; however, my mother is allergic to onions, so we created a recipe that she can enjoy with us. This is great with a cup of broth on a rainy day.

- Preheat oven to 350 degrees F (175 degrees C). Prick bottom and sides of pie crust and bake 10 minutes, until lightly brown; set aside to cool.
- Place bacon in a skillet over medium-high heat and cook until evenly brown. Drain, crumble and set aside.
- In a bowl, mix eggs, milk, mustard and nutmeg. In a separate bowl, toss bacon with flour to lightly coat. Spread 3/4 bacon mixture and Swiss cheese over bottom of pie crust. Pour egg mixture over bacon mixture. Top with remaining bacon mixture.
- Bake 1 hour in the preheated oven, or until a fork inserted in the center comes out clean. Cool 10 minutes before serving.

CRUSTLESS BACON, SPINACH & SWISS QUICHE - LOW CARB
I've read through a lot of recipes to come up with my version of this quiche. I wanted to make one that is crustless and low carb, and this one is a WINNER! But once I start eating it, I just don't want to stop! I thought I could make it ahead so I could have a quick breakfast on work mornings, but this rarely lasts out the day it was made!

Steps:
- On a foil lined pan, cook bacon in 350 degree F. oven until crisp.
- While bacon cooks, chop onion and shred cheese.
- Heat 1 tablespoon butter and 1 teaspoon oil in skillet over medium heat. Add chopped onion, and stir to coat.
- When onion turns glossy, add thawed spinach, and stir to mix. Heat about 5 minutes, then remove from heat to cool.
- Remove bacon from oven, and place on a paper-towel lined plate to drain.
- Stir together eggs, salt, pepper & heavy whipping cream in a medium bowl.
- Add in cheese, onion/spinach mixture, and bacon. Stir thoroughly to mix.
- Butter a glass pie plate or quiche dish, pour mix in, and pat evenly with a fork.
- Bake in 350 degrees F. oven 25-30 minutes, or until a knife inserted in the center comes out clean.
- Let rest 5 minutes before cutting & serving.
- I bet you can't eat just ONE slice!

- In medium bowl, mix flour and 1/2 teaspoon salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).
- Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap flattened round of pastry in plastic wrap and refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
- Heat oven to 425°F. Roll pastry on lightly floured surface, using floured rolling pin, into circle 2 inches larger than upside-down 9-inch quiche dish or glass pie plate. Fold pastry into fourths; place in quiche dish or pie plate. Unfold and ease into dish, pressing firmly against bottom and side.
- Sprinkle bacon, cheese and onion in pastry-lined quiche dish. In large bowl, beat eggs slightly with fork or wire whisk. Beat in remaining ingredients. Pour into quiche dish.
- Bake 15 minutes. Reduce oven temperature to 300°F. Bake about 30 minutes longer or until knife inserted in center comes out clean. Sprinkle with additional bacon. Let stand 10 minutes before serving.

- Position oven rack to center position. Preheat oven to 400 degrees F (200 degrees C). Butter a 10-inch pie plate.
- Heat a large skillet over medium heat; cook and stir bacon in the hot skillet until crisp, 5 to 10 minutes. Remove bacon and drain all but 2 tablespoons grease from skillet. Cook and stir asparagus and mushrooms in the remaining bacon grease until asparagus is tender, about 5 minutes.

- 1. In a skillet fry bacon over medium heat until evenly browned. Drain, crumble and sit aside. (I use my kitchen shears to cut bacon into small pieces before frying to save having to crumble later).
- 2. Preheat oven to 350º and lightly grease a 9-inch pie pan. Line bottom of pie pan with cheese, then top with the crumbled bacon.
- 3. Combine eggs, melted butter, onion, salt, flour and milk. Whisk or blend until smooth. (I prefer to use an immersion blender or upright blender)

- Cook the bacon until crisp and chop. I do a whole pound in the oven and only use 1/3 for the recipe.
- Grease a pie plate or 8x8 glass dish. Preheat oven to 350 degrees F.

BISQUICK IMPOSSIBLE QUICHE RECIPE

- Preheat oven to 400 degrees F.
- Lightly grease a 10-inch pie plate.
- Add shredded cheese, crumbled bacon, and diced onion onto the bottom of the pie plate. Spread evenly.
- In a seperate bowl, beat the eggs, salt, and pepper together. Then stir in the milk.

BACON BROCCOLI CHEDDAR CRUSTLESS QUICHE

- Take the broccoli florets out of the freezer so they can begin to thaw. Place the bacon in a skillet and cook over medium-low heat until very brown and crispy. Transfer the bacon to a paper towel lined plate to drain and pour off most of the grease out of the skillet.
- Turn the heat under the skillet up to medium-high and add the broccoli florets. Sauté them in the residual bacon grease until they are no longer frozen. Transfer the broccoli to a cutting board. Roughly chop the florets into smaller, bite-sized pieces.
