SWEET POTATOES IN ORANGE CUPS
Found this recipe in a book from 1952. Looks really good and a cute idea for presentation. Guessing on times. Please update me if you make it! I added the cooking time of the potatoes to the recipe via microwave oven

Steps:
- Combine sweet potatoes, butter, salt and orange juice.
- Mix well.
- Cut oranges in halves, crosswise and remove juice and pulp.
- (Use part of this juice to mash in the potatoes.) Scrub shells well.
- Fill with the mashed potatoes and decorate with marshmallows.
- Bake in hot oven.
- 400F about 15 minutes.

- Cut oranges in half and juice them. You should measure 3/4 cup orange juice. If you don't have enough, supplement with packaged orange juice.
- Scoop out orange halves and save the shells. Set aside.
- Wash sweet potatoes and prick in several spots. Place potatoes on a paper towel and microwave on HIGH for 12-15 minutes or until very soft.
- Peel potatoes (be careful!). Scoop potato pulp into a large bowl.
- Mash with margarine, orange juice, cinnamon, ginger, cloves, and zest. Mash and mix until smooth.
- Set orange shells into a casserole or microwaveable serving platter with high sides (to hold the oranges upright). Fill shells with potato mixture.
- Microwave on HIGH for 5 minutes or until warm.

- Place sweet potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until tender. Drain. When potatoes are cool, peel and cut into 1/2-in. slices. Arrange in a greased shallow 3-qt. baking dish; set aside., In a large saucepan, combine the brown sugar, cornstarch, salt and cinnamon. Stir in the orange juice, honey, butter, water and orange zest. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in walnuts. , Pour mixture over the potatoes. Bake, uncovered, at 350° for 25 minutes or until heated through.

- Combine peel, juice, corn syrup, and brown sugar.
- Add sweet potatoes, boiling water, and salt to a large saucepan. Simmer, covered, until tender; this should take about 15 minutes. Drain off liquid, leaving 1/4 cup in skillet. Dot potatoes with butter or margarine. Pour orange juice mixture over potatoes, and add orange slices. Cook, uncovered, over low heat until glazed, an additional 15 minutes. - Preheat oven to 350 degrees F (175 degrees C).
- Prepare oranges by cutting tops off, 1/4 to 1/2 inch down. Spoon out the flesh, leaving a shell.
- In a large bowl combine sweet potatoes, sugar, orange juice, eggs, vanilla extract, 1/2 cup butter and grated orange peel. Spoon mixture into orange shells. Place in a deep casserole dish.

My mother made these every year for the holidays. I have made them for a church fellowship dinner, using 100 oranges. They were a big hit! Little kids can hold them in their hands and walk around without spilling. You can prepare this up to three days ahead of time and it travels well. - Preheat oven to 375 degrees F.
- Cover sweet potatoes with cold water in a large pot and boil until fork tender. Peel the potatoes, transfer to a bowl, and mash. Stir in butter, orange juice and pecans, and mix until incorporated.
- For the orange shells, cut each orange in half and scoop out the pulp using a small knife or grapefruit spoon. Reserve the pulp for another use.

- Heat oven to 375 degrees (see Tip). Use a vegetable peeler to peel strips of zest off 2 oranges. Cut the strips into thin matchsticks using a sharp knife and transfer to a large bowl. Juice all the oranges, the lemon and limes into the bowl for 1 1/4 cups juice. Whisk in the brown sugar, salt, ginger, cinnamon, nutmeg and black pepper until the sugar dissolves.
- Generously peel the sweet potatoes, removing the skin and the tougher layer of flesh just beneath. If your sweet potatoes are larger than 2 inches in diameter, halve or quarter lengthwise. Cut into 1-inch-thick rounds or pieces, add to the citrus mixture and toss to coat.
- Transfer the sweet potatoes and juice mixture to a 9-by-13-inch shallow glass or ceramic baking dish. Dot the top with the butter. Bake, stirring every 20 to 30 minutes to cook and coat evenly, until the sweet potatoes are tender and glazed, 1 1/2 to 2 hours. - 1. Squeeze oranges, save juice. Remove membranes from orange shells.
- 2. Mash sweet potatoes, Blend in 3 tablespoons orange juice, brown sugar, and salt. Stir in coconut
- 3. Spoon sweet potato mixture into the orange shells. Place in a shallow baking pan.
- 4. Preheat oven to 350 degrees, bake for 20 to 30 minutes or until lightly browned on top.
