2 tablespoons plus 1 cup chili sauce, divided
1 cup soft whole wheat bread crumbs

1 teaspoon dried oregano
3/4 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
1 pound lean ground turkey
1 pound Italian turkey sausage links, casings removed
1/2 cup reduced-sugar apricot preserves

Steps:

  • In a large bowl, combine the eggs, Worcestershire sauce and 2 tablespoons chili sauce. Stir in the bread crumbs, onion, oregano, garlic powder, salt and pepper. Crumble turkey and sausage over mixture and mix well. Shape into 1-in. balls. , Place on a rack coated with cooking spray in a shallow baking pan. Bake at 375° for 15-20 minutes or until meat is no longer pink. , In a large bowl, combine apricot preserves and remaining chili sauce. Add meatballs and toss gently. Place in a 15x10x1-in. baking pan coated with cooking spray. Bake 5-10 minutes longer or until glazed, stirring every 3 minutes.

4 green onions (chopped)
½ cup breadcrumbs (such as Panko)
3 cloves garlic (minced)
1 egg
2 tablespoon Sriracha sauce
1 teaspoon ground ginger
1 teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
½ cup apricot jam
1 tablespoon soy sauce
2 tablespoon Sriracha sauce

Steps:

  • Preheat oven to 400 F degrees. Line a baking sheet with parchment paper; set aside.
  • In a large bowl, add all the meatball ingredients and mix with your hands to combine. Form the meatballs into small 1 inch balls. Place the meatballs on the prepared baking sheet and bake for about 20 to 25 minutes or until done to your liking.
  • Meanwhile, in a medium bowl whisk together all the glaze ingredients. Add the meatballs and toss well until all the meatballs are glazed.
  • Garnish with chopped chives if preferred and serve immediately over cooked rice or as an appetizer.

Submitted for RSC #9. I tinkered around with this through multiple incarnations. I finally landed on this slightly different taste for the meatballs. I really liked the taste. I think if I had to do it all over, I might have just left out the apricot sauce, the meatballs are yummy by themselves.

1 lb ground beef
1 lb pork sausage
2 1/2 cups crushed butter flavored crackers (like RITZ)
1 small white onion, chopped
2 eggs, lightly beaten
1/4 cup brown sugar
1/4 cup milk
1 teaspoon salt
1/8 teaspoon nutmeg
1/2 teaspoon ground ginger
6 ounces dried apricots (about 1 cup firmly packed)
2 cups hot water
2 cinnamon sticks
2 teaspoons lemon juice
1/2 teaspoon fresh minced ginger
2 tablespoons sugar

Steps:

  • Place the apricots in a dish; pour the 2 cups hot water over them to completely cover.
  • Allow them to soak for at least 2 hours or overnight.
  • To make meatballs, preheat the oven to 375 degrees.
  • In a bowl mix together all the meatball ingredients.
  • Shape the mixture into 1 inch balls and put on an ungreased baking sheet.
  • Bake for 25-30 minutes, or until meatballs are browned.
  • Put the cooked meatballs into a baking dish and hold to the side.
  • While the meatballs are cooking place the apricots along with the water they have been soaking in, into a sauce pan.
  • Add the two cinnamon sticks and bring to a boil.
  • Lower the heat, cover and simmer until the apricots are soft, about 15 minutes.
  • Remove the cinnamon sticks.
  • Put the mixture (including the water the apricots are cooking in) into a blender or food processor, add the sugar and ginger and blend until smooth. (make sure you remove the center cap of the mixer since the sauce will be hot).
  • Pour the apricot sauce over the meatballs and bake uncovered for 20 minutes in a 350 degree oven.

¼ cup (4 tablespoons) of apricot jam (can use pineapple, mango or similar jam)
½ cup (120ml) of chicken stock
1 tablespoon of tomato puree (paste)
2 tablespoons of granulated sweetener (I use erythritol)
2 spring onions, chopped
80g of onion, finely diced
80g of carrot, finely diced
1 teaspoon of paprika (not smoked)
2 cloves of garlic, crushed
½ cup (120ml) of chicken stock
spray oil
500g (17.5oz) of 5% fat ground chicken (mince) - can also use pork or turkey
½ teaspoon of salt
Pinch of black pepper
Pinch of chilli flakes
½ teaspoon onion granules (or powder)
½ teaspoon garlic granules (or powder)
⅓ cup (30g) of original breadcrumbs
1 egg
Spray oil

Steps:

  • Preheat oven to 200c, 180c fan, 400f or gas mark 6
  • Spray a frying pan over a medium high heat with spray oil. Add the onion, carrot, garlic and paprika to the frying pan and using the 1/2 cup of stock, add in a little bit at a time, reducing off completely before adding another little bit, until the onion, carrot and garlic are really softened. Make sure you cook off all stock before next step.
  • Add this to the a large bowl along with the ground chicken, breadcrumbs, egg, salt, black pepper, chilli flakes, onion and garlic granules and mix to combine, spray a little spray oil into hands and then form in 20 meatballs.
  • Line a baking with parchment paper and place the meatballs on the tray, spray over the top with cooking oil spray and bake for 12 minutes until lightly golden, remove from oven and set aside.
  • Add all the ingredients for the sauce to a frying pan and whisk until the jam dissolves into the liquid and starts to thicken, then drop in the meatballs and continue to bubble on a medium high heat until sauce is glossy and coats the meatballs.
  • Sprinkle with chopped spring onions.
  • Serve with your choice of sides and enjoy!!
