Steps:
- Combine gelatin, pecans, and coconut. Stir in milk and vanilla; mix well. Chill one hour.
- Shape into strawberries. Roll in red sugar; tint sliced almonds with green food coloring and insert in top of "berries" to form leaves.

Steps:
- Put the strawberries in a bowl, add the sugar, zest and vanilla and stir. Leave to macerate for 30 minutes at room temperature. The sugar will soften the fruit and draw delicious juices out to make a delicious syrup.
- Top with a sprig of fresh mint before serving!
MACERATED STRAWBERRIES

- Wash, hull, and slice strawberries and place into a large glass bowl. Stir in sugar and allow to stand for 30 minutes for strawberries to release their natural juices, but not so long that they begin to become mush.
- If using Grand Marnier, citrus juice or balsamic vinegar, add at the same time as sugar.

- You will need a tupperware type container with a lid.
- First, slice as many strawberries as you would like and place them in the container.
- Then add as much sugar as you wish.
- The more sugar makes more syrup.
- I usually add enough to fully coat the strawberries.
- Now put the lid on the container and tumble the strawberries for a minute so they can get saturated in the sugar.
- Now refrigerate the container for a couple of hours, and you will have the tastiest, sweetest strawberries in their own syrup.
- (I usually leave them in the refrigerator over night).

- Add the washed and stemmed strawberries into a large pot. Turn head on low and allow the strawberries to heat up slowly. As they begin to warm up, they will begin to sorta “melt”. Use a potato masher to squish them all around into little bits.
- After the strawberries are warm, squishy, and resemble jam, add in the cane sugar. Bring to a very low simmer for 10-15 minutes.
