1/2 cup mayonnaise
1 tablespoon reduced-sodium soy sauce
1 tablespoon ketchup
2 teaspoons Dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon hot pepper sauce, optional
1/8 teaspoon pepper
SHRIMP CORN CAKES:
1/2 cup chopped onion (about 1 small)
1 tablespoon oil plus additional for frying, divided
2 garlic cloves, minced
1/2 pound uncooked peeled and deveined shrimp, finely chopped
3/4 cup all-purpose flour
1/4 cup cornmeal
1 tablespoon cornstarch
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup cream-style corn
1 cup whole kernel corn
1 large egg, lightly beaten

Steps:

  • In a small bowl, combine the first 7 ingredients. Cover and chill until serving., In a large cast-iron or heavy skillet, cook and stir onion in 1 tablespoon oil over medium-high heat until tender. Add garlic; cook 1 minute longer. Add shrimp; cook and stir until shrimp turns pink. Remove from the heat. , In a large bowl, mix the flour, cornmeal, cornstarch, baking powder, salt and pepper. In a small bowl, mix the corn, egg and shrimp mixture; stir into dry ingredients just until moistened., Wipe cast iron skillet clean with paper towels; heat 1/4 in. of oil to 375°. In batches, drop corn mixture by rounded tablespoonfuls into oil; fry until golden brown, 1-1/2 minutes on each side. Drain on paper towels. Serve with sauce.

  • In a large bowl, combine the first 6 ingredients. Fold in crab and shrimp. Shape into 12 patties; coat with panko bread crumbs., In a large skillet over medium heat, cook crab cakes in oil in batches until golden brown, 3-4 minutes on each side. , Meanwhile, in a small bowl, combine the sauce ingredients. 1/4 cup plus 2 t. vegetable oil, divided
2 celery ribs, minced
1 medium onion, minced
1/4 cup mayonnaise (not fat-free)
4 teaspoons Dijon mustard
1/4 cup minced fresh dill
4 -6 dashes Tabasco sauce (or to taste)
2 1/4 cups plain breadcrumbs, divided
salt and pepper
1/2 lb cooked shrimp, peeled,deveined,and coarsely chopped

Steps:

  • In a large skillet, heat 2 tablespoons oil over medium heat.
  • Add the celery, and onion; cook and stir frequently for 2-3 minutes; transfer to a mixing bowl.
  • Add the mayo, mustard, dill, Tabasco, and 1/4 cup of bread crumbs to the mixing bowl with the onion/celery mixture; stir to combine.
  • Season with salt and pepper.
  • Add the shrimp; stir to combine.
  • Put the remaining bread crumbs on a plate or flat dish.
  • Using 1/3 cup shrimp mixture, form a patty with your hands.
  • Place the cake on the bread crumbs; press lightly, then turn and repeat with the other side.
  • Roll the patty's sides in the crumbs also.
  • The patty should be completely coated in bread crumbs.
  • Repeat with remaining shrimp mixture.
  • Add 2 tablespoons oil into a nonstick skillet, heat over medium heat.
  • When the oil is hot, add 4 cakes or however many your skillet will hold.
  • Fry cakes for about 2 minutes or until golden on the bottom; flip patties and cook for 2 more minutes or until golden.
  • Repeat with remaining oil and shrimp cakes.
  • Serve hot shrimp cakes with cocktail sauce, tartar sauce, or salsa.

1 lb large shrimp, peeled, deveined, cut into 1/2-inch pieces
3 tablespoons Emeril's Original Essence or 3 tablespoons creole seasoning, divided
1 teaspoon Emeril's Original Essence or 1 teaspoon creole seasoning, divided
1/4 cup vegetable oil, plus 1 tablespoon divided
1/2 cup chopped yellow onion
1/4 cup chopped celery
1/4 cup chopped green bell peppers or 1/4 cup red bell pepper
1 teaspoon minced garlic
1/8 teaspoon cayenne pepper or 1/8 teaspoon crushed red pepper flakes
1 large egg white, very cold
1/4 cup cold heavy cream, very cold
1/2 cup green onion, chopped, green tops only
1 tablespoon Dijon mustard
2 teaspoons fresh lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon emeril's kick it up red pepper sauce
1 teaspoon finely chopped fresh basil leaf
1 teaspoon finely chopped fresh parsley leaves
1 cup all-purpose flour
2 large eggs
1 cup dried fine breadcrumbs
roasted shrimp sauce, recipe follows
1/4 cup chopped fresh parsley leaves, for garnish
2 tablespoons olive oil
4 cups shrimp shells, and heads (I freeze mine when I don't have enough)
1/2 cup chopped yellow onion
1/4 cup chopped carrot
1/4 cup chopped celery
1 teaspoon chopped garlic
1 1/2 teaspoons paprika
1/8 teaspoon cayenne
1/4 teaspoon salt
1/8 teaspoon salt
1 teaspoon tomato paste
2 tablespoons brandy
1/2 cup water
3 cups heavy cream
4 tablespoons cold butter, cut into pieces
1/4 teaspoon fresh lemon juice (optional)

Steps:

  • SHRIMP CAKES:.
  • Toss the shrimp with 1 tablespoon of the Essence.
  • Place half of the shrimp in the refrigerator until well chilled, about 20 minutes.
  • Place the food processor bowl and blade in the refrigerator to chill.
  • Heat the oil in a large skillet over medium-high heat.
  • Add the onions, celery, bell peppers, garlic, cayenne pepper and 1 teaspoon Essence and cook, stirring, for 3 minutes.
  • Add the remaining half of the shrimp and cook until pink, 3 to 3 1/2 minutes.
  • Remove from the heat and spread on a plate to cool completely.
  • Place the chilled shrimp in the bowl of the food processor and process for 10 seconds.
  • Add the egg white and process for 5 seconds.
  • With the machine running, add the heavy cream through the feed tube in a steady stream.
  • Transfer to a large bowl.
  • Add the cooked shrimp mixture, green onions, mustard, lemon juice, Worcestershire sauce, red pepper sauce, basil, and parsley, and mix well.
  • Form into 8 cakes.
  • In a shallow bowl combine the flour with 1 tablespoon of the Essence. In another bowl beat the eggs with 1 tablespoon of water.
  • In a third bowl, combine the breadcrumbs with the remaining tablespoon of Essence.
  • One at a time, dredge the shrimp cakes first in the seasoned flour, then egg and then bread crumbs, shaking to remove any excess breading.
  • Heat 2 tablespoons of the oil in a large skillet over medium-high heat.
  • Add the cakes in batches and cook until golden brown, about 2 1/2 minutes per side.
  • Remove and drain on paper towels.
  • ROASTED SHRIMP SAUCE:.
  • Heat the oil in a large, heavy pot to smoking over high heat.
  • Add shells and cook, stirring, until the shells are bright orange and fragrant, 3 minutes.
  • Add the onions, carrots, and celery to the pot and cook, stirring, for 3 minutes.
  • Add the garlic, paprika, cayenne, salt, and tomato paste and cook, stirring, until the tomato paste begins to brown slightly, 2 to 3 minutes.
  • Add the brandy and cook for about 15 seconds.
  • Add the water and cook until the pan is almost dry, 15 to 30 seconds.
  • Add the cream and cook until reduced by half, about 7 minutes.
  • Remove from the heat.
  • With a hand-held immersion blender or in batches in a food processor, puree the sauce until smooth, about 1 minute.
  • Strain into a clean pot through a fine mesh strainer, pressing hard with a spoon to extract as much liquid as possible.
  • Place over medium heat and whisk in the cold butter 1 piece at a time.
  • To serve, spoon the Roasted Shrimp Sauce on the bottom of 4 plates and top with 2 shrimp cakes each.
  • Garnish with fresh parsley leaves and lemon juice if desired.
  • Serve imediately and E N J O Y!

Be sure to use a thickish tortilla chip with this tropical appetizer. This dip will disappear quickly. You may use regular salsa or any fruit salsa you prefer. You may also layer this on a decorative serving dish, which is what I usually do.

3/4 lb cooked shrimp, peeled and chopped
16 ounces cream cheese
4 tablespoons sour cream
4 teaspoons Worcestershire sauce
2 teaspoons fresh lemon juice
1 garlic clove, minced
4 ounces canned green chilies
12 ounces mango salsa
1/2 cup green onion
3/4 cup black olives, sliced
1/4 cup chopped fresh cilantro leaves
2 cups monterey jack cheese (finely shredded)

Steps:

  • Cream the cream cheese, sour cream, Worcestershire sauce, lemon juice, pepper, garlic together until smooth.
  • Spray the springform pan with a non-stick shortening spray.
  • Spread the cream cheese mixture in 9" springform.
  • Layer the spread the green chiles over the cream cheese mixture.
  • Next layer the mango salsa, green onions, chopped shrimp, and black olives.
  • Top with shredded cheese.
  • Garnish with the chopped cilantro.
  • Refrigerate until ready to serve.
  • Place on large plate and remove springform sides.
  • Serve with corn tortilla chips.

1 egg, lightly beaten
1 tablespoon Dijon mustard

1 lb fresh crabmeat, picked over to remove cartiledge
salt and pepper
crisco canola oil (for frying)
2 cups mangoes, chopped
2 jalapeno peppers, seeded, and finely chopped
1 cup red pepper, finely chopped
2/3 cup green onion, finely chopped
1/4 cup fresh cilantro, chopped
2 tablespoons lime juice
4 teaspoons crisco canola oil
salt and pepper

Steps:

  • Combine 1/2 cup breadcrumbs with nexxt 6 ingredients.
  • Gently mix in crabmeat; form into 24 cakes.
  • Coat the crabcakes in the remaining 1/2 cup breadcrumbsd.
  • Heat 1/2 inch oil in large, deep skillet to 350°F.
  • Carefully add crabcakes in batches and cook, turning once until golden brown.
  • Place on paper towels to drain.
  • Serve immediately.
  • MANGO SALAD:.
  • Combine all ingredients; gently mix together, and serve with crabcakes.

1 (7 ounce) package cornbread, & muffin mix (Martha White Sweet Yellow recommended)
1/2 cup milk
1 egg, beaten
3 cups peeled and chopped mangoes (about 2 - 3)
2 tablespoons finely chopped red onions
1 large lime, juice of
1 pinch salt
1 jalapenos or 1 serrano pepper, seeded and finely chopped
1/4 cup chopped cilantro
2 tablespoons butter
1 cup finely chopped celery
1/2 cup finely chopped red onion
1 lb uncooked shrimp, peeled, deveined and coarsely chopped
3 teaspoons seafood seasoning (Old Bay is a good one)
2 large eggs, beaten
1/3 cup mayonnaise
1/3 cup chopped cilantro

butter (for sauteeing shrimp cakes)
lemon wedges and parsley (to garnish)

Steps:

  • Bake cornbread mix according to package directions, using milk and 1 egg; cool and crumble.
  • Stir together salsa ingredients; allow to sit for 30 minutes. Serve or refrigerate until serving time.
  • Heat 2 tablespoons butter over medium heat in 12-inch cast iron skillet. Cook celery and 1/2 cup chopped red onion until tender, about 6 to 8 minutes, stirring occasionally.
  • Transfer celery and onion to large bowl. Stir in shrimp, seafood seasoning, 2 eggs, mayonnaise, 1/3 cup cilantro, salt and pepper.
  • Stir in crumbled cornbread until well blended. Using about 1/3 cup, form mixture into 12 shrimp cakes about 2 1/2-inches diameter. Place on a parchment or wax paper-lined baking sheet.
  • Heat 1 to 2 tablespoons butter in skillet over medium heat. Cook shrimp cakes until lightly browned and shrimp turn pink, about 4 minutes on each side.
  • Cook remaining shrimp cakes, adding additional butter as needed.
  • Place cakes on a serving platter. Garnish with lemon wedges and parsley. Serve with mango salsa.
