6 cups shredded cabbage
4 medium carrots, shredded
4 celery ribs, chopped
1/2 cup finely chopped green pepper
1/2 cup finely chopped onion
1/2 cup cider vinegar
1/4 cup vegetable oil
1/4 cup sugar
1-1/2 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon paprika

Steps:

  • In a large bowl, combine the cabbage, carrots, celery, green pepper and onion. In a jar with a tight-fitting lid, combine the vinegar, oil, sugar, salt, pepper and paprika; shake well. Pour over cabbage mixture and toss to coat. Cover and refrigerate until serving.

Ever since she was a child, Maribeth couldn't stand the sight of mayonaisse, and mommy went to great lengths to hide it in recipes where it was required - but there was simply no hiding it in cole slaw. So she turned to a local cookbook at the time - the old River Road Recipes II - A second Helping - put out by the Junior League of Baton Rouge, Louisiana. Here is a GREAT tasting, non-creamy cole slaw - particuarily good with barbequed chicken. Notice that this recipe is made the night before - and also, as it contains no eggs or dairy, it would be perfectly safe for travel on picnics. This recipe is credited to Mrs. Ben Miller, Jr.

1 (4 lb) cabbage
3 large white onions
3/4 cup sugar
1 cup white vinegar
1 teaspoon salt
1 tablespoon sugar
2 tablespoons dry mustard
1 1/2 teaspoons celery seeds
1 cup salad oil

Steps:

  • Shred cabbage into a large container, top with the onions,sliced into thin rings and sprinkle with 3/4 cup of sugar.
  • Combine vinegar, salt, remaining sugar, mustard, and celery seeds and bring to a boil. Add the salad oil and pour over cabbage mixture while hot.
  • Cover and refrigerate overnight.
  • In the morning, stir well.

This is a terrific non-creamy coleslaw recipe. I found it in Betty Crocker's Big Red Cook Book, page 420. I adjusted the original recipe by adding broccoli slaw, and cutting the suger by half.

3 cups packaged coleslaw mix
1 cup broccoli coleslaw mix
1 large carrot, shredded
1 medium green pepper, seeded and chopped
4 medium green onions, sliced
1/4 cup sugar
1/2 cup white vinegar or 1/2 cup cider vinegar
1/4 cup olive oil
1 teaspoon mustard, ground
1/2 teaspoon celery seed
1/2 teaspoon salt

Steps:

  • Place cabbage,broccoli, carrot, green pepper, and green onions in a large glass or plastic bowl.
  • Shake remaining ingredients in a tightly covered container.
  • Pour over vegetables; stir.
  • Cover and refrigerate at least 3 hours, stirring several times, until chilled.
  • Serve with a slotted spoon.
  • Store covered in refrigerator.

Clipped this from a magazine from Eat Smart by Jean Carpenter who says " the ultimate in simplicity and refreshing taste, this coleslaw is flecked with green, red and yellow vegetables, the colors signifying the presence of antioxidants (cabbage is thought to have anti-cancer activity). This is a crispy salad. I may have ripped this from a diabetic magazine.

1 medium red bell pepper, chopped
1 cup green onion, thinly sliced
1 cup corn kernel, cooked
1/2 cup rice vinegar, can use other white vinegar
1/3 cup sugar substitute, I like Splenda, can use sugar if you like
salt
pepper
1 tablespoon jalapeno pepper, seeds and veins removed (optional)
1/2 cup cilantro, chopped (optional)

Steps:

  • Simply toss all ingredients together in a large bowl.
  • Can serve immediately but I like to chill salads like these to let the flavors blend.
  • Enjoy!

This is a great receipe which can be made a few days ahead of time. I always bring it to our family reunion picnic every year and it is always a hit. For best results do make it at least 24 hours ahead to allow the flavours to penetrate and soften the vegetables.

1 large cabbage
4 medium carrots
2 sweet onions
1 large green pepper
2/3 cup salad oil
2/3 cup white vinegar
1/2 cup white sugar
2 teaspoons salt
2 teaspoons celery seeds
1/2 teaspoon pepper

Steps:

  • Shred or chop all vegetables finely. I use a sharp knife and chop by hand
  • first removing the hard core from the cabbage (dispose).Place all vegetables in a large bowl.
  • For dressing, mix all remaing ingredients in saucepan and boil for 2-3 minutes.Pour over vegetables, cover and place in fridge.Let set at least 24 hours. Keeps for 2-3 weeks in coverd container or jar in fridge.

1 large carrot, finely shredded (1 cup)
1 medium green bell pepper, chopped (1 cup)
4 medium green onions, thinly sliced (1/4 cup)
1/2 cup sugar
1/2 cup white wine vinegar, white vinegar or cider vinegar
1/4 cup vegetable oil
1 teaspoon ground mustard
1/2 teaspoon celery seed
1/2 teaspoon salt

Steps:

  • In large glass or plastic bowl, place cabbage, carrot, bell pepper and onions. In tightly covered container, shake remaining ingredients. Pour over vegetables; stir.
  • Cover; refrigerate at least 3 hours, stirring several times, until chilled and flavors are blended. Stir before serving; serve with slotted spoon.

3 medium green apples, peeled, cored and cut in matchsticks
1/4 bunch fresh cilantro, chopped
1 cup honey
1 cup cider vinegar
3/4 cup vegetable oil

Steps:

  • Mix last three ingredients in medium bowl and whisk well.
  • Add cut apples into dressing mixture, and mix well to coat so apples won't turn color.
  • Pour dressing mixture over remaining ingredients and refrigerate for 2 hours.
