5 MINUTE CANDIED WALNUTS

5 minute Candied Walnuts image

Toss these caramelized walnuts into your salad, over popcorn, or straight into your mouth. Crunch. Crunch. I love this easy method of making the candied nuts where everything goes into the pan at once. Other methods I've tried left me with globs of candy on the nuts rather than a more even coating. It also roasts the nuts at the same time so you don't have to pre-toast them, then add them back to the pan to be coated, blah, blah. Who needs extra steps? It seriously takes about 5 minutes on the stove and 5 minutes to cool. P.S. This recipe can easily be doubled.

Provided by Natasha of NatashasKitchen.com

Categories     Easy

Time 10m

Number Of Ingredients 3

1 cup walnut halves/pieces (you can also use this recipe for candied pecans)
1/4 cup white granulated sugar ((not coarse sugar))
1 Tbsp unsalted butter

Steps:

  • Heat a medium non-stick skillet over medium heat, add 1 cup walnuts, 1/4 cup granulated sugar and 1 Tbsp butter.
  • Heat over medium heat for 5 minutes, stirring frequently so your mixture doesn't burn (especially towards the end). When the sugar mixture starts melting, stir constantly until all sugar is melted and nuts are coated.
  • Transfer immediately onto a sheet of parchment paper and separate the nuts right away. Using two spatulas will make this task go faster. You don't want to give the nuts a chance to turn into a wad of inseparable delicious goodness unless you are the only person who will be enjoying the wad ;). Seriously, move quickly from the time the nuts are coated until they are separated out on the parchment paper.
  • Once the coating hardens (5-7 minutes), you can transfer them to a bowl and enjoy!

SWEET WALNUTS

Sweet Walnuts image

Provided by Eileen Yin-Fei Lo

Categories     Wok     Vegetarian     Lunar New Year     Poker/Game Night     Deep-Fry     Vegan     Boil

Yield Makes about 4 cups

Number Of Ingredients 4

10 cups water; plus 6 tablespoons for glaze
12 ounces (about 4 cups) walnut halves
6 tablespoons sugar
5 cups peanut oil

Steps:

  • 1. Place 5 cups of the water in a pot and bring to a boil over high heat. Add the walnuts and stir. Allow the water to return to a boil and boil for 3 minutes. Turn off the heat and run cold water into the pot. Drain the nuts thoroughly in a strainer. Return the nuts to the pot, add 5 cups of the water, and bring to a boil over high heat. Allow the nuts to boil for 5 minutes, then drain again and set the walnuts aside to dry.
  • 2. This next step requires a wok that is completely free of oil. Place the 6 tablespoons water in the wok and bring to a boil over high heat. Add the sugar and stir to dissolve with a spatula. Bring to boil and stir constantly for 2 minutes. Add the walnuts and continue to stir for about 8 minutes, or until the nuts are coated completely with the sugar syrup and the liquid in the wok has evaporated. As the walnuts become glazed with the syrup, take care to regulate the heat so neither the nuts nor the glaze burns.
  • 3. Turn off the heat. Using a Chinese strainer, remove the walnuts and set aside on a plate. Wash the wok and the spatula with extremely hot water to remove the sugar residue and dry thoroughly.
  • 4. Place the peanut oil in the wok, and heat it to 375ºF on a deep-frying thermometer. Place the walnuts on the strainer and lower them into the hot oil. Fry the walnuts, stirring with the spatula, for about 5 minutes, or until they turn a golden amber brown. Turn off the heat. Scoop the nuts from the oil with the strainer and allow to drain briefly.
  • 5. Spread the nuts on a baking sheet and let cool completely. After 2 minutes, loosen the walnuts so they do not stick to one another. Serve the cooled nuts or transfer them to an airtight container and store as directed in the introduction.

SWEET PICKLED WALNUTS

Sweet Pickled Walnuts image

Sweet pickled black walnuts take three weeks to make but they last for ages. Pick the walnuts in summer before the hard nut forms inside the green shell.

Provided by DCREWS21

Categories     Appetizers and Snacks

Time P21DT40m

Yield 32

Number Of Ingredients 8

4 pounds fresh young black walnuts (in shell)
¾ cup salt
4 cups malt vinegar
2 ⅛ cups packed brown sugar
1 teaspoon ground allspice
1 teaspoon ground cloves
½ teaspoon ground cinnamon
1 tablespoon grated fresh ginger root

Steps:

  • Use rubber gloves to handle the young walnuts and pierce each one a few times with the tines of a fork. Watch out for the clear juice this produces. It stains a dark, espresso brown and is a natural dye. Place the walnuts into a bucket and fill with enough water to cover. Stir in 3/4 cup of salt to make a brine. Soak walnuts for 1 week, then drain and make the brine again. Soak for 1 more week.
  • After the second week, drain the walnuts and lay them out on trays to dry in an airy place. In a couple of days they will turn black. Once they have all turned black, they are ready to pickle.
  • In a large pot, stir together the malt vinegar, brown sugar, allspice, cloves, cinnamon and ginger. Bring to a boil and then add the walnuts. Simmer over medium heat for 15 minutes. Remove from heat and allow to cool.
  • Spoon the walnuts into sterile jars and fill with the syrup to within 1/2 inch of the top. Seal with lids and rings. Store in the refrigerator or process in a hot water bath for 10 minutes. Cool to room temperature and store in a cool dark place.

  • 5-Minute Candied Walnuts. Candied nuts make excellent little snacks, but they’re also great to use as cake decorations. Unfortunately, they can be difficult to make sometimes.
  • Walnut Brownies. One thing is for sure with this recipe: it’s chock full of texture! I mean, can you see all those nuts? Walnuts have a buttery, mild flavor, and their slight crunch will make your brownies super delicious.
  • Coffee and Walnut Cake. Coffee and walnut cake is almost as synonymous to the UK as Victoria sponge. In fact, you’ll see it in most bakeries and traditional recipe books to this day.
  • Salted Maple And Toasted Walnut Brittle. Most brittle recipes use corn syrup to ensure the sugar stays nice and hard, and so it doesn’t fall victim to crystals as it cools.
  • Chocolate Chip Walnut Pumpkin Bread. Pumpkin bread is a fall staple in my house. It’s light, sweet, spiced, and beyond scrumptious with some chocolate chips thrown in for fun.
  • Applesauce Cake. Just like the above recipe is super flavorful and moist, thanks to the pumpkin, this recipe is just as delicious because it’s brimming with tangy applesauce.
  • French Walnut-Caramel Tart. Pecans are slightly cheaper than walnuts, but their darker coating can make them somewhat bitter. Walnuts, too, can have a similar astringent flavor, but I find them less so.
  • Deliciously Moist Banana Bread Recipe. Banana bread is the whole package. It’s light, soft, moist, and beyond addictive. I love it with chocolate, cheesecake filling, or even with a crumble top.
