Sweet Vermouth Slush image

Spoon and serve this vermouth-orange slush as is for a lower-A.B.V. drink or top each portion, affogato-style, with a drinker's choice floater of hard spirit. Tequila, gin, brandy, bourbon or mezcal all work well. The key to prolonging the cocktail's icy texture is to make sure every element is chilled: Pop whatever liquors you plan to pour over top into the fridge when you put the slush in the freezer. This simple, plan-ahead move will keep your final drink from melting too fast.

10 ounces fresh orange juice
8 ounces sweet vermouth
4 ounces simple syrup (1:1 granulated sugar and water)
2 ounces orange liqueur
2 ounces filtered water
4 1/2 to 6 ounces hard liquor, such as tequila, gin, mezcal or bourbon

Steps:

  • In a shallow 9-by-9-inch baking pan, combine the orange juice, vermouth, simple syrup, orange liqueur and filtered water. Whisk to combine, then place in the freezer, uncovered, for 3 hours.
  • After 3 hours, use a fork to scrape the frozen edges of the mixture toward the center, then continue freezing until the mixture is nearly set, at least 5 hours or overnight.
  • Once frozen, use a fork to scrape into a fine, granitalike texture. If you are not serving immediately, transfer the vermouth slush to a covered container and freeze until ready to use.
  • To serve, add 3/4 cup/6 ounces of the slush to a lowball glass and top with 3/4 to 1 ounce of your preferred liquor; serve immediately.

An icy beer granita is the base for this grown-up slushie. If you like your drinks sweeter, go for a high-wheat percentage bourbon; if you like them spicier, go with a high-rye percentage bourbon. Either way, it goes down smooth.

Two 12-ounce bottles American lager, such as Budweiser
12 pitted fresh or frozen cherries
3 ounces orange liqueur, such as Grand Marnier
10 1/2 ounces sweet vermouth
9 ounces bourbon
2 tablespoons bitters

Steps:

  • Pour the beers into an 8-by-8-inch baking dish. Freeze until slushy, whisking every 30 minutes, for about 4 hours. Meanwhile, put the cherries in a small bowl and pour the orange liqueur over. Cover and refrigerate for 4 hours.
  • For each cocktail, spoon about 1 cup beer slush into a rocks glass. Pour 1 3/4 ounces sweet vermouth, 1 1/2 ounces bourbon and 3 dashes bitters into a cocktail shaker. Fill with ice, shake and strain over the slush in the glass. Garnish with 2 liqueur-soaked cherries. Serve immediately.
