From Appon's Thai Food site, she says "In Thailand they sell this sweet toast ready made in packets, like a lot of bakery products they tend to be eaten for desserts. To recreate the recipe I'm using full sized sliced bread cut into quarters." I am always interested in recipes that can be reduced for two people and use unusual techniques or a double use out of something two people get tired of -white bread for sandwiches. I think bread that is cut thinner than typical white store bought bread might be better. Also wonder about leftover quick breads? Notice that her ratio is 2:1 or twice as much butter as icing sugar that will make it easier on us non metric types.

300 g butter
150 g icing sugar
1 tablespoon black sesame seed, for Garnish
10 slices white bread

Steps:

  • Soften butter by setting out 15 minutes before starting.
  • Preheat oven to 150 degrees Celsius or 300 degrees Fahrenheit.
  • Cream the butter with the icing sugar to form butter cream icing.
  • Spread the icing thinly over the bread, on BOTH sides.
  • Cut the crusts off the bread to neaten them up.
  • Cut the slices into quarters and place of a baking tray.
  • Sprinkle with a few sesame seeds over the top.
  • Bake in a low oven, 150 degrees Celsius or 300 degrees Fahrenhei for 15 minutes.
  • They will crisp up as they cool and the icing sugar and butter sets.
